MOMS SOUTHERN TOMATO GRAVY
As kids we loved when mom made this gravy.She typically served it with corn bread,some type of green and fried ham.

Steps:
- Melt butter and oil in skillet.
- Add flour and brown slowly.
- Do not burn and keep mixture spreadable.
- After browning ,remove from heat to cool.
- After cooling add tomatoes ,juices and water.
- Stir thoroughly.
- Return to heat stirring constantly untill mixture comes to a boil.
- Remove from heat,add salt , pepper and sugar.
- Stir and serve.

- Preheat the oven to 350 degrees F. Grease a roasting pan with the butter. In a mixing bowl, add beef, pork, onions, peppers, garlic, eggs, cream, and bread crumbs. Blend thoroughly. Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.

Kie has been fixing this for our family for over 40 years. She got it from her mom, so it's tried and true. The only change was an upgrade to Golden Mushroom Soup from just plain mushroom soup.

Steps:
- Preheat oven to 350 deg F.
- Heat frying pan on medium high burner. Add oil.
- Saute onions in oil until soft. Remove and set aside. Reserve oil.
- Cut steak into four or five portions. Salt and pepper both sides.
- Brown steak in reserved oil. About 2 min per side.
- Put steak and onions in a oven proof stoneware or glass casserole dish.
- Add soup and 1-1/2 cans of filtered water to frying pan.
- Heat to near boiling and deglaze pan. Add to steak.
- Cover dish with aluminium foil.
- Bake for 2-1/2 to 3 hours until meat is tender.
- Serve meat with horseradish and the gravy over mashed potatoes.

MOM'S CHOCOLATE GRAVY
When Mom and Pop got married, Pop had to call Mamaw to get this recipe. When he was growing up, they were really poor (Papaw was a Baptist preacher and worked at various jobs. Back then life was hard for a preacher with 4 kids). This was one of their "desserts". Mom also made this when we were growing up and to this day, I still love a big hot heapin helpin. One might ask how do you eat "chocolate gravy"? With homemade "cat-head" biscuits (Mamaw called them this because she made them "big as a cat's head") or canned country-style (Do not try this with one of those flaky-type canned biscuits - it just isn't the same.) and a chunk of butter about the size of the tip of your thumb. Let it kinda melt, then eat away. This is just like any other gravy, other than the addition of the butter at the table. I eat this with milk or coffee as the beverage, as nothing else tastes good. - Mix all the dry ingredients in a heavy saucepan with a whisk. Using a whisk blends everything better than a spoon. Stir in the milk.
- Cook over medium heat stirring constantly. Remove the pot when the mixture is thick like pudding.
- Add the butter. Stir in until completely melted. Serve over biscuits with a teaspoon of butter dolloped on top.
MOM'S BAKED FRIED CHICKEN AND GRAVY

- Make chicken:
- Soak chicken in milk to cover for 20 to 30 minutes. Spray a baking dish (one that will accommodate all the chicken pieces comfortably in one layer) with nonstick vegetable-oil spray.
- Preheat oven to 400°F. Put the butter in the baking dish and heat it in the oven until the butter melts. Mix flour and seasonings together in paper sack or plastic baggie (1-gallon size). Shake each piece of chicken in seasoned flour. Place chicken pieces, skin-side down, in baking dish. Bake for 20 minutes. Turn chicken over and bake an additional 20 minutes or until cooked through and crispy. Remove chicken and set aside in a warm place.
- Make gravy:
- Sauté the scallions and mushrooms in the drippings over medium high heat, until soft. Mix the seasoned flour with milk first until you see no lumps. Whisk milk mixture into the sautéing onions and mushrooms. Taste and add bouillon cube, if desired (You may want to use additional milk if you do). Boil until thickened to preferred consistency. Put into a gravy dish and serve alongside the baked chicken.

Moms both make this. It is good over baked potatoes, mashed potatoes, wide egg noodles, toast, biscuits or waffles.

- Brown the hamburger.
- Remove the meat to bowl.
- Sprinkle flour into fat; brown the flour.
- Add the canned milk and enough water to make a gravy, stirring on low.
- Add hamburger back to gravy.
- Add salt and pepper to taste.
- Cook on low for a while (the longer you cook the better); 15 minutes is good.
- You can add dried beef if you want, cut in small pieces.

- In a large skillet or dutch oven, brown chicken in vegetable oil over medium high heat. (The chicken will not be done, just browned.)
