Smoked salmon with scrambled eggs is the soet of breakfast at which you will also be drinking champagnewith one of those euphoric hangovers after an evening which was quite special. On reflection you'd better get someone else to make them.

Steps:
- Toast the 4 slices of brown bread,spread thinely with butter and cut off the crusts.
- Cut each bit of buttered toast into four triangles.
- Break the eggs into the bowl and whisk together with the salt and pepper.
- Melt the butter in a pan and add the eggs.
- Stir with a wooden spoon scraping the egg away from the bottom of the pan all the time until the degree of firmness that you like is achieved; i prefer the eggs to be a little runny.
- Remove the pan from the heat and stir in the double cream.
- Fold the smoked salmon into the scrambled eggs and serve on the buttered toast.

- In 6 cup microwaveable bowl, microwave butter 20-40 seconds on high or until melted.
- With wire whisk or fork, beat in eggs, milk, and pepper until well blended.
- Microwave HIGH uncovered for 2-3 minutes or until some curds have formed, but mixture is still creamy (stir twice).
- Stir in salmon, green onion, sour cream and coriander or parsley.
- Microwave HIGH 30-60 seconds or until eggs are heated through and still creamy, stirring once.

- Crack eggs into a bowl and add the cream, whisk until the eggs look foamy. (Important to whisk to incorporate air into the egg mixture.makes the scrambled eggs turn out light and fluffy.).
- Heat a large nonstick skillet over medium heat.
- Add butter and melt until it foams, then turn the heat down to low.
- Slowly pour in the egg mixture.
- Using a rubber spatula, slowly stir the eggs from the outside of the pan to the center. (Once eggs begin to set, stirring slowly will create large, fluffy results.).
- *This takes approximately 10 minute Don't let the eggs brown. Be patient!
- Season the eggs with salt and pepper.
- Serve with slices of avocado and smoked salmon. Garnish with chives, if desired.
CREAMY SCRAMBLED EGGS WITH DILL AND SMOKED SALMON
I've been struggling with my weight since i was a lil kid so i've tried hundreds of things and i haven't found a diet that i can keep up with except for the Atkins diet, which gave me great great results. - In a large bowl, beat eggs, cream. dill and salt.
- Melt butter in a large skillet over medium heat.
- Add green onions; cook 8 minutes, until softened.
- Pour in egg mixture; cook 3-4 minutes, stirring occasionally, until almost set.

In Switzerland, rosti means "crisp and golden." The word has become symonymous with the country's famous potato cake. This potato cake makes a delicious cushion for ribbons of smoked salmon and lightly scrambled eggs. Simpley finish with a sprinkling of capers, diced red onion, chives and dill. This dish is fit for a king's breakfast!

- To make the rosti potatoes, peel the potatoes and steam for 15 minutes, let cool.
- Using the large hole of a box grater, shred the potatoes.
- Season the shredded potatoes with salt and pepper and form them into 6 cakes.
- In a large skillet; heat half the butter over medium heat.
- Carefully place 3 of the cakes in the skillet and brown them on both sides for about 5 to 7 minutes per side, until golden brown.
- Remove and drain on paper towels, and repeat with the remaining butter and cakes (the potatoes can be made up to 1 hour in advance, then rewarmed before serving).
- To make the scrambled eggs, in the top of a double boiler on in a stainless steel bowl that will rest securely on top of a pot of simmering water, whisk together the eggs, creme fraiche, salt and pepper.
- Place the mixture over a pot of simmering water and stir, folding the eggs with a rubber spatula until they are very lightly scrambled.
- To serve and garnish; place one warm rosti potato in the center of each warmed plate.
- Form two slices od salmon into circular ribbons on top of each rosti.
- Place a spoonfull of scrambled eggs on top of the smoked salmon and garnish with a dollop of creme fraiche.
- Sprinkle with capers, red onion, chives and dill and serve to 6 very lucky people.

- Chop salmon into very small pieces, reserving a small amount for garnish.
- Whisk your eggs and half-and-half together.
- Add 1/2 of your chopped chives and season eggs with salt and pepper.
- Melt butter in preheated large nonstick skillet, and add eggs.
- Scramble eggs with a wooden spoon. Do not cook eggs until dry. When eggs have come together but remain a little wet, stir in chopped salmon.
