This Chocolate Mousse Tofu Pie is a creamy, decadent pie that packs in loads of chocolate flavor without the dairy or excess fat!

6 graham crackers
½ cup medjool dates (pit removed)
2 Tbsp softened unsalted butter (vegan or traditional)
1 14-oz package silken tofu (400 g, drained)
2 Tbsp brown sugar
1 Tbsp unsweetened cocoa powder
1 tsp vanilla extract
1 ½ cups dark chocolate (chips or chunks)

Steps:

  • Crust: Blitz graham crackers, halved dates, and butter in a food processor until evenly mixed and crumbly. Lightly grease an 8 or 9 inch pie pan*, then press crust mixture into the bottom and up the sides.
  • Filling: Wipe clean the food processor then blitz tofu, cocoa powder, sweetener, and vanilla until smooth.
  • Melt Chocolate: Melt chocolate using a double boiler. If you do not have one, place chocolate in a small saucepan. In a large saucepan, bring water to a boil. Hold small saucepan over boiling water for about 30 seconds, stirring constantly, until chocolate has melted.
  • Chocolate Explosion: With food processor running, slowly pour melted chocolate into tofu mixture.
  • Refrigerate: Pour filling into crust and even out the top with a spoon. Cover and place in fridge for 2 to 3 hours, until firm. Serve with whipped cream and fresh berries.

Pastry for single-crust pie (9 inches)
2 packages (12.3 ounces each) silken firm tofu
1/4 cup honey
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2-1/2 cups semisweet chocolate chips, melted
Whipped cream and sliced fresh strawberries, optional

Steps:

  • Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights., Bake at 450° for 8 minutes. Remove foil and weights; bake 5-7 minutes longer or until golden brown. Cool on a wire rack., In a blender or food processor, combine the tofu, honey and extracts. Cover and process until smooth. Add melted chocolate; cover and process until blended., Transfer to pie shell. Cover and refrigerate for at least 2 hours. Garnish with whipped cream and strawberries if desired.

This smooth, chocolately dessert is made with silken tofu, which is usually sold in vacuum-packed, shelf-stable containers in the Asian-food section of grocery stores.

3/4 cup chocolate chips
1 container (12 ounces) room-temperature silken tofu
1/2 cup warmed milk
1 ounce finely chopped chocolate, or another 2 tablespoons chocolate chips

Steps:

  • Microwave chocolate chips in 30-second increments, stirring each time, until melted.
  • In a food processor, puree melted chocolate with silken tofu (soft or firm) and warmed milk until smooth. Force mixture through a sieve into a medium bowl, pressing with a spoon.
  • Scoop mixture into four serving dishes, and refrigerate until chilled, about 30 minutes. Garnish desserts with finely chopped chocolate or chocolate chips, if desired.

10 ounces semi-sweet chocolate chips (See Note 1)
2 (10 1/2 ounce) packages silken tofu or 2 (10 1/2 ounce) packages silken firm tofu (See Note 2)
3 tablespoons maple syrup (or other liquid sweetener of your choice; can use less, to taste)

Steps:

  • Note 1: vegans: use barley-malt-sweetened nondairy chocolate chips or use a really good vegan chocolate bar (like Rapunzel Organic Bittersweet) instead of some or all of the chips.
  • Note 2: I use the Mori Nu brand of tofu for this (since it's from their box), but you can use any brand, just make sure it is the"silken" type and not regular.
  • Melt choc chips in a double boiler over low heat or in microwave (if you know what you're doing).
  • Put tofu, sweetener, and melted chocolate into a blender and process until very smooth.
  • Pour into a serving bowl or bowls and refrigerate, covered, for at least a couple of hours.
  • Cover this well, because it will pick up EVERY odor in your refrigerator otherwise.

2 (12 ounce) boxes extra-firm silken tofu
3/4 cup sucanat
1 teaspoon vanilla extract
1/8 teaspoon salt (I use Real Salt)
1 chocolate wafer pie crust (I buy Wholly Wholesome Truly Natural Chocolate Pie Crust at Whole Foods Market) (optional) or 1 make your own chocolate wafer pie crust (optional)

Steps:

  • In a double boiler, melt the chocolate.
  • In a food processor, combine the other ingredients and process until smooth.
  • Add the chocolate and process until thoroughly combined.
  • Refrigerate for at least 2 hours.

  • Pour the mixture into the crust and bake for 30 minutes, or until the top of the pudding feels firm to the touch. Allow to cool completely at room temperature, then refrigerate for at least an hour, preferably two.
  • Just before serving, arranged banana or strawberry slices around the perimeter of the pie in concentric, slightly overlapping circles. Pipe some whipped topping along the edge as well, if using (or just dollop it on!). Cut into wedges to serve.

  • Make the crust: Place a rack in the center of your oven and preheat the oven to 350 degrees F. In the bowl of a food processor fitted with a steel blade, pulse the pretzels until they form mostly fine crumbs with a few more textured pieces remaining throughout. If you do not have or prefer not to use a food processor, place the pretzels in a ziptop bag and crush them with a rolling pin (you may need to double up the bag if it gets any small holes).
  • Melt the butter in a large, heatproof bowl in the microwave. Add pretzel crumbs (you should have about 1 1/2 cups; make a few extra or subtract as needed) to the bowl with the melted butter. Add the sugar, and then stir until evenly moist and combined. The crumbs should hold together easily when pressed. If they do not, add 1 to 2 tablespoons additional melted butter. Press the crumbs into the bottom and up the sizes of a 9-inch pie dish. Bake for 8 minutes, until golden and fragrant. Set aside to cool slightly, and then place in the freezer or refrigerator to cool completely. Do not proceed with the recipe until your crust and pie dish are at or below room temperature.
  • Make the filling: While the crust cools, place the tofu, frozen banana, almond butter, chocolate almondmilk, and cocoa powder in a blender. Blend until completely smooth. In a microwave-safe bowl or in a heatproof bowl set over a pan of simmering water, melt the chocolate, and then add it to the blender and blend again until very smooth, stopping to scrape down the blender as needed. Try your very best not to eat the entire thing right then and there.
  • Pour the filling into the cooled crust and smooth the top. Refrigerate until set, at least 6 hours or overnight. When ready to serve, top with whipped coconut cream, chocolate, and pretzels as desired. Slice and enjoy!
