Yield 6 servings

Number Of Ingredients 19

2 pounds calf's liver, cut into 6 pieces
1 cup whole milk
8 bacon slices, cut into 1/2-inch pieces
3 tablespoons unsalted butter
2 large onions, thinly sliced
3/4 cup all-purpose flour
1 teaspoon Essence, recipe follows
1 teaspoon salt
1/2 teaspoon black pepper
1 cup dry sherry
1 tablespoon beef broth
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder

Steps:

  • In a large glass baking dish, add liver and milk and let soak for 20 minutes.

  • Add 2 tablespoons reserved bacon fat to skillet over high heat and add liver; cook for 2 to 3 minutes on each side. Turn liver over, remove pan from heat, add sherry and beef broth, return pan to heat and shake and flambe. Cook on second side for about 2 minutes or until cooked through. Serve liver with pan sauce, topped with onions and bacon.
  • Combine all ingredients thoroughly.

LIVER AND ONIONS AND GRAVY

Liver and Onions and Gravy image

This simple lamb liver and onions recipe is a great way to eat lamb liver. Combine with some mashed potatoes of mashed parsnips for a true feast.

Provided by Gav

Categories     Mains

Time 1h15m

Number Of Ingredients 11

300g lambs liver
1/2 pint milk
4 rashers of streaky bacon
2 garlic cloves, chopped
2 onions, sliced
3 tbsp plain flour, seasoned
1 tbsp vegetable oil
Salt and Pepper
For the gravy:
Chicken Oxo cube
Chicken Bisto gravy granules

Steps:

  • Cut the liver as you wish to serve it. Then soak the liver in the milk in the fridge for between one and two hours before cooking.
  • Discard the milk and wash and dry the liver. Then lightly coat it in seasoned flour.
  • Fry the bacon until crispy and then remove from pan. Fry the garlic and onion in the vegetable oil in the same pan for a few minutes.
  • Then add the liver to the same pan and fry it on both sides until it is done as you like it. Cook probably for about 2 minutes each side. Then remove the liver from the pan.
  • Add the bacon back to the pan. Then add the crumbled oxo cube, gravy granules and some hot water (if you are boiling vegetables use some of that water to make the gravy, to get all the vitamins).
  • Bring the liquid to the boil and then add the liver back to the pan. Cook for about 2 minutes extra and then serve up. (To check that the liver is cooked, it should no longer be bloody inside).

LIVER AND ONIONS

Liver and Onions image

I grew up eating liver cooked this way, although without the onions, because this was the way Mum did it. I love it, and always have. Mum never liked onions, but once I married and left home, I learned to love them, so I just added them to the "recipe" - which by the way until now has never been written down.

Yield 2 serving(s)

Number Of Ingredients 6

1 lb liver
4 tablespoons butter
1 large onion
1 cup flour
1/4 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Slice and cook the onions in fry pan, using butter. Set aside, and keep warm.
  • Combine the flour, pepper and salt, mix well.
  • Coat the liver thoroughly in the flour mixture.
  • Cook in butter over medium heat, turning once - depending on thickness, about 5 minutes per piece. I always keep them warm in the oven, set on it's lowest heat, until all the liver is cooked.
  • When all done, reheat the onions in remaining butter.
  • Serve the onions on top of the liver.

BEEF OR PORK LIVER, WITH BACON AND ONIONS (FOR 2)

Beef or Pork Liver, With Bacon and Onions (For 2) image

A delicious way to eat beef or pork liver, along with bacon and onions. Cook more bacon, liver, and onions if serving to more people. If you do, just be sure to simmer everything (covered) for exactly 15 minutes. Prep time also includes cooking the bacon, the onions, and the liver, before simmering it in the skillet for 15 minutes.

Provided by Cindi M Bauer

Categories     Pork

Time 1h

Yield 2 serving(s)

Number Of Ingredients 6

6 slices bacon (use thin sliced bacon)
3 large onions, sliced thin
salt & pepper, to season the onions and liver
1/2 lb beef or 1/2 lb pork liver, sliced thin
1/2 cup flour
crisco butter flavor shortening

Steps:

  • In a 12-inch skillet, cook the bacon slices. This should take about 20 minutes.
  • Remove bacon slices from skillet, and set aside, but DO NOT drain off the bacon grease.
  • To the bacon grease in skillet, add the sliced onions; season with salt and pepper. Cook onion slices over medium to medium-high heat, for about 15 minutes; stirring often.
  • Remove onions from the skillet, and set aside, but DO NOT drain off any of the bacon grease. To the skillet, add a couple tablespoons of the Buttered Flavored Crisco.
  • In a shallow bowl, add the flour; sprinkle in some of the salt and pepper. Lightly dust liver in the flour, add to the skillet, and cook liver over medium heat; till lightly browned on both sides. This doesn't take very long, so watch and turn liver quickly, so it doesn't burn in skillet. Remove cooked liver from the skillet, and set aside on a plate.
  • Add the sliced onions back to the skillet. Place liver ontop of the cooked onions, then top the liver with the bacon slices. Cover skillet with a lid; cook the liver, bacon and onions over low heat (a low simmer) for exactly 15 minutes.
  • Turn off heat; remove the liver, bacon, and onions, and place on a serving platter or plate to serve.
  • Note: You may think the 3 large onions is a bit too much for this recipe, but it's not. The onions do cook down quite a bit.

ABSOLUTE BEST LIVER AND ONIONS

Absolute Best Liver and Onions image

This recipe will turn liver haters into converts. Very simple! The three things that will set your liver above all others are: 1) soak in milk, 2)turn liver as little as possible and 3) don't overcook!

Provided by JSHULER43

Categories     Everyday Cooking

Time 45m

Yield 4

Number Of Ingredients 6

2 pounds sliced beef liver
1 ½ cups milk, or as needed
¼ cup butter, divided
2 large Vidalia onions, sliced into rings
2 cups all-purpose flour, or as needed
salt and pepper to taste

Steps:

  • Gently rinse liver slices under cold water, and place in a medium bowl. Pour in enough milk to cover. Let stand while preparing onions. (I like to soak up to an hour or two - whatever you have time for.) This step is SO important in taking the bitter taste of the liver out.
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until soft. Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
  • When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium. Cook a bit longer to taste. Our family prefers the liver to just barely retain a pinkness on the inside when you cut to check. Enjoy!

  • Remove the thin membrane surrounding the liver. To do so: • If the liver is already sliced, trim the edges • If it’s in one piece, get your finger underneath the membrane and then pull it away.
  • Gently rinse the liver under running water. If the liver is whole, slice it into pieces. When it comes to beef liver, I prefer smaller chunks, roughly 1 inch (2.5 cm) thick cubes. But they can be larger and/or flatter - the exact size and shape is up to you.

When the pan is very hot, add the liver and sage. Cook, stirring, until just done, 1 to 2 minutes. Remove from the heat, return the onions to the pan, and toss.
