Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

2 salmon fillets (about 8 to 10 ounces each)
Kosher salt and freshly ground black pepper
1/3 cup orange marmalade
1-inch piece fresh ginger, grated (see Cook's Note)
3 tablespoons soy sauce
2 tablespoons olive oil
Juice of 1 orange (about 1/3 cup)

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
  • Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon. Bake until the salmon is cooked through, 10 to 15 minutes. If you like, turn the oven to broil for the last 3 or so minutes of cooking to brown the top of the fillets.
  • Serve the salmon immediately or cool and refrigerate to use in salads or sandwiches.

1/2 cup pulp-free orange juice
1/4 cup lightly packed brown sugar
1 small garlic clove, minced
1/2 tablespoon louisiana hot sauce
4 boneless salmon fillets, about 5 oz each
3/4 teaspoon salt
3/4 teaspoon pepper
1 green onion, thinly sliced

Steps:

  • Place oven rack in center of oven. Preheat broiler to high. In a small skillet over medium-high heat, stir together orange juice, brown sugar and garlic. Bring to a boil and cook until thickened and glossy, 4-5 minutes. Cool to room temperature; stir in sauce.
  • Arrange fish on a broiling pan on a rack over a rimmed baking sheet. Sprinkle with salt and pepper. Brush liberally with some of the sauce. Broil, basting twice with sauce, until fish flakes easily with a fork, 8-10 minutes. Garnish with green onions.

3 tablespoons ajun seasoning
1 teaspoon brown sugar (I used brown sugar splenda)
1/4 teaspoon kosher salt
1 1/2 lbs salmon, filet (original recipe says skinless but I cooked mine with the skin on or peeling it off after it is cooke)
2 tablespoons vegetable oil
1/4 cup orange marmalade
1 lime, juice only

Steps:

  • In a cup or bowl combine seasoning (cajun seasoning - salt) and rub over salmon -- you will have extra for another purpose.
  • Cook salmon in the oil in a grill pan or skillet over medium high heat for 3-5 minutes, turn and cook other side for 3-5 minutes.
  • In a small cup blend marmalade and lime juice; swirl in the skillet until melted; turning fish to glaze on all sides and cook until salmon is cooked through and begins to flake.

1/4 cup (½ stick) butter
1 yellow onion (medium size), finely chopped
kosher salt and cracked black pepper to taste (~ ¼ tsp each)
1 (8.25-ounce) can beets, drained and finely chopped
1 cup Arborio rice
3 cups canned chicken broth
1 tablespoon balsamic vinegar
½ cup Parmesan cheese, grated
Orange Glaze:
1 (11-ounce) can mandarin oranges, drained
½ cup light brown sugar, packed
2 teaspoons Dijon mustard
4 (6-ounce) salmon fillets
To Serve:
1 cup arugula

Steps:

  • Preheat the oven to 425°F. For risotto: Melt butter in heavy large saucepan over medium heat. Add onion and saute until fragrant and translucent; season with salt and pepper. Stir in the beets and cook for an additional minute before mixing in rice. Add broth and vinegar. Increase heat; bring to boil. Reduce heat to medium-low. Simmer uncovered until rice and beets are just tender and risotto is creamy, stirring occasionally, about 15 minutes. Stir in Parmesan cheese just before taking off heat and season to taste with salt and pepper. Meanwhile, prepare the orange glaze. In a small saucepan add the mandarin oranges, brown sugar, and mustard and bring to a boil, cooking for 2 minutes. On a foil lined baking sheet, season the salmon fillets with salt and pepper skin side down, before brushing the glaze over the top of each salmon fillet. Bake uncovered for 10-12 minutes or until fish flakes with a fork. To serving, spoon risotto evenly into 4 shallow bowls. Top each serving with 1/4 cup arugula followed by the glazed salmon fillets.

1 1/2 pounds salmon fillet
1/3 cup orange marmalade
1/2 cup orange juice
1 tablespoon Dijon mustard
1 teaspoon ginger
2 teaspoons salt free citrus-herb seasoning

Steps:

  • Rinse salmon fillet under cold water and pat dry with paper towels. Cut into 6 serving portions and place salmon fillets in a large zip-top bag; set aside.
  • In a small bowl stir together remaining ingredients. Pour into zip-top bag. Squeeze air from bag and seal. Marinate in refrigerator for 1 to 2 hours.
  • Remove salmon from refrigerator 30 minutes before cooking, and bring to room temperature.
  • Light broiler and line baking sheet or broiler pan with aluminum foil.
  • Remove salmon from marinade and place on baking sheet. Discard marinade. Broil salmon 6 to 8 inches from heat source for 6 to 8 minutes or until cooked through. Do not overcook.
  • Serve immediately.

Six 6-ounce salmon fillets
1 tablespoon sesame oil
3 tablespoons low-sodium soy sauce
1/4 cup white wine
1 cup freshly squeezed orange juice
1 teaspoon orange zest
3 tablespoons sherry
1/2 teaspoon grated fresh ginger
2 slices orange

Steps:

  • Preheat oven to 400°F.
  • Sear the fish fillets in the sesame oil in a large, very hot skillet for 1 minute on each side. You should hear the fish sizzle. Remove fillets from the heat and transfer them to a glass baking dish or baking pan. Drizzle the soy sauce and the wine over them and bake them for 10 minutes. Remove them from the oven.
  • Meanwhile, heat the orange juice, zest, sherry and ginger together in a small saucepan over medium-high heat until reduced by half. Add the orange slices, and stir once or twice, until the sauce becomes thick. Remove from heat, drizzle the sauce over the fish, and serve.

3 tablespoons fresh ginger
1/2 teaspoon black pepper
2 tablespoons Grand Marnier
4 lbs fresh salmon
5 tablespoons fresh grated orange peel
2 shallots, minced
2 teaspoons cornstarch
1/2 cup low sodium soy sauce
1/2 cup Grand Marnier
1 cup maple syrup
2 small oranges, sliced thin

Steps:

  • If you use dry rind instead of fresh you will need to rehydrate it with orange just for the best results.
  • Wash salmon and pat dry.
  • Combine ginger, basil, pepper, rind and shallots.
  • Lightly brush salmon with Grand Marnier. Coat salmon on both sides with herb mixture and refrigerate overnight (at least 4 hours).
  • Preheat oven to 350°F.
  • Dissolve cornstarch in enough hot water to make a smooth paste. Slowly whisk in liquid glaze ingredient. Whisk until smooth.
  • Place salmon in shallow baking dishes. Spoon glaze over fish.
  • Cook until done (about 20 minutes for 1 inch fillets or 25 for 2 inch fillets. )Baste the fish once or twice during cooking It should flake easily.
  • Decorate with orange slices. Shown in the picture here with a lemon pig.
  • To make a lemon pig - choose the snout end of the pig and decide which will be the bottom. Cut the bottom off so the pig will sit flat. At the snout end cut two flaps for the ears. Pull them out a little so the will stand out but not too much or it will break. Use cloves for the eyes.

1/4 cup light orange juice
1/4 cup low-sugar orange marmalade
