OVEN ROASTED BABY RED POTATOES



Oven Roasted Baby Red Potatoes image

These Baby Red Potatoes are roasted to perfection - crisp on the outside and tender outside.

3 lbs baby red potatoes (unpeeled)
2 Tbsp extra light olive oil
1 1/2 tsp dry parsley
1 tsp sea salt or 3/4 tsp table salt
1/2 tsp freshly ground pepper
2 cloves garlic (pressed)

Steps:

  • Cut potatoes into 1" to 1 1/2" pieces. We didn't cut the really tiny taters. Place them in a large pot half full with warm water. Bring potatoes to a boil and cook for 7-9 minutes (they should be almost cooked) Drain, cover to keep warm, and set aside
  • In a small bowl, mix together 2 Tbsp olive oil, 2 pressed garlic cloves, 1 1/2 tsp dry parsley, 1 tsp sea salt (or 3/4 tsp table salt) and 1/2 tsp black pepper.
  • Gently Toss potatoes with the seasoning mix until evenly coated (it helps to use a large mixing bowl for tossing).
  • Transfer potatoes to a large rimmed, non-stick baking pan and place cut side down. Bake at 425° for 20 minutes or until the sides facing the pan are golden. Transfer to a serving bowl, garnish with chopped fresh dill if desired and serve.

Steps:

  • Preheat oven to 400 degrees. Lightly spray a baking sheet with non-stick cooking spray.
  • In a large bowl add the olive oil, parmesan cheese, garlic, and oregano. Toss with the potatoes until coated and lay in a single layer on your baking sheet. Salt and pepper to taste. I also like to sprinkle additional parmesan on top.
  • Roast for 30-35 minutes or until golden brown and crisp. Serve with parsley sprinkled on top.

2 1/2 pounds small potatoes, red and white
1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary, crushed
2 teaspoons olive oil
3/4 teaspoon salt
Pepper to taste
1 large onion (sweet preferred)

Steps:

  • Preheat the oven to 425°F. Lightly spray a rimmed baking sheet with olive oil spray.
  • Cut the potatoes into 1-inch cubes. Pat dry. Put in a large bowl.
  • Stir in the remaining ingredients except the onion. Spread in a single layer on the baking sheet.
  • Roast for 20 minutes, stirring once halfway through.
  • Meanwhile, cut the onion into 1-inch cubes.
  • After the potatoes have cooked for 20 minutes, add the onion, stirring well. Roast for 20 minutes, or until the potatoes are lightly browned and tender when pierced with a fork, stirring once halfway through. If the onion seems to be browning too quickly, stir more frequently. Refrigerate half the potatoes (3 cups) in an airtight container for use in German or Mexican Potato Salad. Serve the remaining potatoes.

1 1/2 tablespoons canola oil
2 cloves garlic, smashed and turned into a paste
Salt and freshly ground pepper
1 tablespoon finely chopped fresh chives
1 teaspoon fresh thyme leaves
Extra-virgin olive oil

Steps:

  • Preheat the oven to 425 degrees F.

My favorite mix here consists of sweet potato, purple potatoes, fingerlings, Yukon golds and red bliss.

1 garlic clove, cut in half
1 1/2 pounds mixed white, yellow, purple, red and sweet potatoes (Yukon golds, fingerlings, red potatoes etc.), peeled if desired and cut in 1-inch pieces (I peel sweet potatoes but not potatoes with smooth skins.)
Salt and freshly ground pepper
2 teaspoons chopped fresh sage
3 tablespoons extra virgin olive oil
1 ounce Parmesan, grated (1/4 cup) (optional)

Steps:

  • Preheat the oven to 425 degrees. Rub a 2- or 3-quart baking dish or gratin with the cut side of the garlic and then brush with olive oil. Alternatively, line a sheet pan with parchment and omit the garlic. Place the potatoes in a large bowl. Season to taste with salt and pepper, add the sage and 2 tablespoons of the olive oil and toss again. Arrange in the baking dish or on the baking sheet.
  • Bake 40 minutes, stirring every 10 minutes. If you are using a baking dish the some of the potatoes might stick, but just coax them away from the dish with your spoon.
  • Add the remaining oil and the cheese if using, stir together and bake another 10 minutes, until the potatoes are crispy on the edges. Serve hot or warm.

2 pounds red potatoes, cut into evenly sized pieces
5 fresh thyme sprigs, or to taste
kosher salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
½ large red bell pepper, seeded and cut into 1-inch pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour olive oil into a heavy baking dish (such as an enameled cast iron dish). Place potatoes into the baking dish and toss to coat with olive oil. Sprinkle with fresh thyme sprigs, kosher salt, black pepper, cayenne pepper, and red bell pepper pieces.
