2 cups raisins
1 cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
1 cup sour cream
2 eggs
1 tablespoon butter
1 (8 ounce) package cream cheese, softened
½ cup confectioners' sugar
4 cups frozen whipped topping, thawed
1 (9 inch) pie shell, baked

Steps:

  • Combine raisins, white sugar, spices, sour cream, eggs, and butter or margarine in saucepan. Bring mixture to a boil, and reduce heat. Cook until thick, stirring constantly. Set aside to cool.
  • Blend cream cheese and confectioners' sugar together. Fold in 2 cups whipped topping.
  • Spread half of cream cheese mixture on bottom of baked and cooled pie shell. Cover with cooled raisin mixture, and top with remaining cream cheese mixture. Spread additional whipped topping on top of pie. Refrigerate.

2 (8 ounce) packages cream cheese, softened
2 eggs
1 cup white sugar
1 teaspoon vanilla extract
1 cup sour cream
2 tablespoons white sugar
¼ teaspoon vanilla extract
1 (9 inch) prepared graham cracker crust

Steps:

  • Combine cream cheese, eggs, 1 cup sugar, and 1 teaspoon vanilla in the bowl of an electric mixer. Mix on low speed until smooth. Pour filling into graham cracker crust.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove pie from oven. Raise oven temperature to 450 degrees F (230 degrees C).
  • In a small bowl, blend sour cream, 2 tablespoons sugar, and 1/4 teaspoon vanilla together. Gently spread mixture over pie.
  • Bake for five minutes before serving.

1 1/2 cups raisins, seeded
2 cups water
3 eggs, separated
1 cup sugar
2 tablespoons vinegar
2 tablespoons flour
2 tablespoons butter
3 egg whites
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/2 teaspoon vanilla
6 tablespoons sugar

Steps:

  • Add raisins to water in saucepan and simmer 5 minutes.
  • Beat egg yolks, sugar, vinegar and flour until light and creamy.
  • Slowly add to raisins.
  • Cook, stirring constantly, until filling is thick, 4 to 5 minutes.
  • Remove from heat, stir in butter and cool until lukewarm.
  • Pour raisin mixture into pie shell and top with meringue.
  • Perfect Meringue.
  • Have egg whites at room temperature to obtain greatest volume. Place in medium bowl with cream of tartar, salt and vanilla.
  • Beat with electric or hand beater, at medium speed, until entire mixture is frothy.
  • Do not beat until eggs stiffen.
  • Add sugar, a little at a time, beating well after each addition.
  • Do not under beat. Beat until sugar dissolves to help prevent beading.
  • To test, rub some of meringue between your fingers to see if it is still grainy.
  • (The grains are undissolved sugar) Continue to beat until stiff, pointed peaks for when beater is slowly lifted.
  • Place spoonfuls of meringue around edge of pie filling, spreading it so it touches inter edge of crust to seal all around.
  • This prevents shrinkage. Pile remainder of meringue in center of pie and spread to meet meringue around the edge. If filling is not covered completely, the oven heat may cause it to weep.
  • Lift up meringue over pie in points with back of teaspoon.
  • Bake in moderate oven (350 F) 12 to 15 minutes, or until meringue peaks are golden brown.
  • Too long baking may cause weeping.
  • Cool gradually away from drafts.

1 1/2 cups graham cracker crumbs
6 tablespoons butter or 6 tablespoons margarine, melted
2 (8 ounce) packages cream cheese, room temp
1/2 cup sugar, plus
2 tablespoons sugar
2 tablespoons flour
1 teaspoon vanilla
2 cups half-and-half cream (do not use low-fat or nonfat) or 2 cups milk (do not use low-fat or nonfat)
2 large eggs
1 teaspoon cinnamon
1/2 cup golden raisin

Steps:

  • Set oven to 350°F.
  • Lightly butter 10-inch glass pie dish.
  • Mix the cracker crumbs with the melted butter in a small bowl.
  • Press the crumb mixture evenly over the bottom, and up the sides (but not to the rim) of the prepared pie dish; refrigerate while preparing the filling.
  • In a food processor blend the cream cheese with 1/2 cup sugar (add more sugar if desired for more sweet taste) and the 2 Tbsp flour until smooth; add in vanilla.
  • Gradually, pour in the half and half or whole milk; process until smooth, occasionally scraping down sides of bowl.
  • Add in the eggs; process until blended.
  • Transfer to prepared pie crust.
  • In a small bowl, mix the remaining 2 Tbsp sugar with the cinnamon; sprinkle over filling.
  • Carefully place the raisins on top of the filling (some may sink, but that is fine).
  • Bake the pie until the center is set, about 1 hour.
  • Remove from oven, and set on wire rack to cool for 1 hour.
  • Refrigerate UNCOVERED until completely cold (about 2 hours).
  • Cover and chill overnight.

  • For the cream cheese filling: Put the cream cheese, granulated sugar, vanilla and eggs in a medium bowl and beat with a hand mixer on medium speed until smooth. Pour the filling into the cooled crust and bake until set, 15 to 20 minutes. Cool 5 minutes before topping; leave the oven on.

Rugelach (a Yiddish word) are often served at Hanukkah meals. The flaky dough that enfolds the fruit and nuts is made like pie dough and is easy to do in the food processor.

2 1/4 cups all-purpose flour, plus more for dusting
1 tablespoon sugar
1/2 teaspoon fine salt
2 sticks (8 ounces) unsalted butter, cut in pieces and chilled
8 ounces cream cheese, cut in pieces and chilled
2 tablespoons sour cream or Greek yogurt
Filling:
3/4 cup hazelnuts, toasted
1 cup apricot preserves
2/3 cup golden raisins
1/4 teaspoon fine salt
2 egg yolks
1/4 cup sugar

Steps:

  • For the dough: Pulse the flour, sugar and salt in a food processor until combined. Add the butter and pulse until it resembles coarse sand with some pea-size pieces of butter, about 20 pulses. Add the cream cheese and sour cream and pulse until it comes together in a rough dough, with some uneven pebble-size pieces. Turn the dough out onto a floured work surface and divide into four equal portions. Pat each portion into a flat square and wrap in plastic wrap. Freeze for 15 minutes.
  • For the filling: Meanwhile, chop the hazelnuts in a clean food processor. Add the preserves, raisins and salt and puree to make a very smooth paste.
  • Roll a portion of dough into a 6- by 14-inch rectangle about 1/4 inch thick. (Don't worry about slightly rough edges; these will be rolled inside of the rugelach.) Spread one-quarter of the filling over the surface with a small spatula. Starting with a long side, roll the dough up into a tight cylinder, ending with the seam on the bottom. Press the top slightly to flatten and wrap in plastic wrap. Freeze for another 15 minutes. Repeat with the remaining dough and filling. (The cylinders can be frozen for up to a month.)
  • Meanwhile, preheat the oven to 375 degrees F and evenly position the racks. Line two baking sheets with parchment paper or silicone baking mats.
  • Slice the cylinders into 1 1/2-inch pieces and place seam-side down on the prepared sheets. Whisk the egg yolks together and brush over the tops. Sprinkle with sugar and bake until pale golden and crispy on top, about 25 minutes.
  • Remove from the oven and let cool slightly on the baking sheets. Carefully transfer the rugelach to a rack to cool. Store in a tightly sealed container for up to 3 days.

SOUR CREAM RAISIN PIE II

This is a very old pie commonly found in the Midwest. Although most recipes call for dark raisins, this one uses sultanas ( golden raisins). Use real maple syrup for the right consistency ( Grade B if you can get it). Best to use sour cream that is not low fat or fat free.

15 ounces raisins (1 pkg, 3 cups)
3/4 cup brown sugar
2 tablespoons cornstarch
2 tablespoons instant Tang orange drink (Any type of Instant Orange Breakfast Drink will do)
1 1/4 cups water
2 tablespoons lemon juice
1 cup walnuts, coarsely chopped
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Divide the pastry almost in half and roll out the larger half, on a lightly floured surface, to a 13-inch circle. Line a 9-inch pie plate with the pastry and trim the pastry 1/2 inch beyond the rim of the pie plate. Combine the raisins, brown sugar, corn starch and drink mix in a 3-quart saucepan.
  • Stir in the water and lemon juice. Cook over medium heat, stirring constantly, until the mixture boils and thickens.
  • Remove from the heat and stir in the walnuts.
  • Turn the mixture into the pastry-lined pie plate and dot with the butter.
  • Roll out the remaining pastry to an 11-inch circle. Place the top crust over filling and trim the edge to 1-inch beyond the rim.
  • Fold the top crust under the bottom crust and form a ridge. Flute the edge and cut steam vents in the top crust. Bake in a preheated 400 degree F.

200 g pecan meal (7 ounces) or 200 g whole pecans
50 g butter, melted (1 3/4 ounces)
1/4 cup brown sugar, firmly packed to measure
1/4 cup desiccated coconut
1/4 cup plain flour or 1/4 cup gluten-free flour
1 cup golden raisin
1/2 cup Kahlua or 1/2 cup other coffee liqueur
1/4 cup boiling water
4 teaspoons gelatin
500 g cream cheese, softened (approx 1 pound)
1/2 cup brown sugar
125 g dark chocolate, melted (4 ounces)
300 ml heavy cream (thickened cream, 10 fl.oz. or 1.2 cups)
300 ml heavy cream (thickened cream)
1 tablespoon Kahlua or 1 tablespoon coffee liqueur
3 tablespoons grated chocolate or 3 tablespoons chocolate curls, for decoration

Steps:

  • Preheat oven to 180°C (300°F ) or 160°C (320°F ) if fan forced.
  • Combine the golden raisins and the half cup of Kahlua in a small bowl. Cover in clingwrap. The raisins will absorb most of the liqueur. Set aside.
  • Grease and line the base and sides of a 22cm (8 2/3 inches) round springform round tin. A smaller tin will result in a higher cheesecake with a thicker base. A larger tin will have a very fine base and not be as tall.
  • Combine all of the ingredients for the base in a bowl. Mix with a spoon until thoroughly combined.
  • Press the base mixture into the base of the prepared cake tin (do not press the mixture up the sides). Press down firmly.
  • Bake the base in a preheated oven 10 minutes. The base should not be a golden cover. Remove from oven- cool and put aside, or refrigerate until required.
  • In a small bowl thoroughly mix the boiling water and the gelatine. Stir until the gelatine dissolves. Set aside.
  • Beat the cream cheese with the brown sugar, until smooth and creamy. Best to use electric beaters for this step.
  • Add the gelatine mixture, the melted chocolate and any of the Kahlua that you can drain from the soaking raisins, to the cream cheese mixture. Beat well to combine.
  • In a separate bowl, beat the 300mls of cream until soft peaks form.
  • Fold firstly the beaten cream into the cream cheese mixture. Then lightly fold in the soaked golden raisins.
  • Pour the cheese mixture over the base in the springform tin. Level and smooth over the top of the cheesecake using a spoon. Refrigerate for several hours, or overnight.
  • For the topping. Whip the remaining 300mls cream with the tablespoon of Kahlua, until thick.
  • Spread the cream over the cooled cheesecake. Sprinkle with chocolate and decorate the edges of the cheesecake with the additional pecans.

The boys decided to stay in Kansas and open a meat market. They did well. One brother sent for his girlfriend back in Texas to come and marry him. She did, and she brought this recipe. The family has been making this pie ever since.

Steps:

  • Combine raisins and ginger in heavy small saucepan. Add enough water to just cover. Simmer over low heat until liquid is absorbed, about 15 minutes. Cool completely.
  • Position rack in lowest third of oven and preheat to 400°F. Combine pears and next 6 ingredients in bowl. Stir in raisin mixture. Roll out 1 pie crust disk on lightly floured surface to 13-inch round (about 1/8 inch thick). Roll up dough on rolling pin and transfer to 9-inch-diameter glass pie plate. Gently press into place. Trim edges of crust, leaving 1/4-inch overhang. Spoon pear mixture into pan, mounding in center.
  • Roll out second crust disk on lightly floured surface to 13-inch-diameter round. Roll up on rolling pin and unroll over pie. Trim edges, leaving 3/4 -inch overhang. Fold overhang of top crust under edge of bottom crust. Pinch edges together to seal. Crimp edges to make decorative border. Gather and reroll scraps. Cut out decorative shapes. Beat egg with milk in small bowl for glaze. Brush top of pie with glaze. Make several slashes in top crust so steam can escape.
  • Bake pie until crust is golden brown and juices bubble up through slashes, covering crust edges with foil if browning too quickly, about 1 hour. Serve warm with vanilla ice cream.

3 1/4 pounds Golden Delicious apples, peeled, quartered, cored, each quarter cut crosswise into 1/4-inch-thick slices
3 tablespoons plus 2 teaspoons sugar
3 tablespoons unsalted butter, melted
2 teaspoons fresh lemon juice
1 cup golden raisins (about 5 ounces)
2 tablespoons (packed) dark brown sugar
1 large egg yolk beaten to blend with 1 tablespoon whipping cream (for glaze)

Steps:

  • For crust:
  • Blend flour, cake flour, sugar and salt in processor. Add butter and shortening and cut in using on/off turns until mixture resembles coarse meal. Add 6 tablespoons ice water and process just until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball; divide into 2 pieces, 1 slightly larger than the other. Flatten larger piece into disk and smaller piece into rectangle; wrap each in plastic and refrigerate 1 hour. (Can be made 1 day ahead. Keep refrigerated. Let soften slightly at room temperature before rolling out.)
  • For filling:
  • Position rack in bottom third of oven and preheat to 375°F. Spread apple slices on large rimmed baking sheet. Sprinkle 3 tablespoons sugar over apples, then drizzle with 2 tablespoons melted butter and lemon juice; toss to coat. Bake just until apples begin to soften, stirring once, about 15 minutes. Cool apples completely on baking sheet. Maintain oven temperature.
  • Transfer apples and any accumulated juices to large bowl. Mix in raisins and brown sugar.
  • Butter 9-inch-diameter glass pie dish. Roll out dough disk on floured surface to 12-inch round. Transfer crust to prepared pie dish. Spoon apple filling into crust. Drizzle remaining 1 tablespoon melted butter over. Roll out dough rectangle on floured surface to 11x7-inch rectangle. Cut lengthwise into twelve 1/2-inch-wide strips. Place 6 strips 1 inch apart atop apple filling. Place remaining 6 strips diagonally atop first 6 strips, forming diamond lattice pattern. Trim strips even with bottom crust. Fold dough overhang in, pressing onto edge of pie dish. Press dough edge decoratively with fork to seal.
  • Brush dough strips with egg glaze. Sprinkle strips with 2 teaspoons sugar. Bake 15 minutes. Reduce oven temperature to 350°F. Continue to bake pie until crust is golden and apples are tender, covering crust edges with foil if browning too quickly, about 1 hour 15 minutes longer. Cool pie at least 2 hours. Serve slightly warm or at room temperature. (Can be made 1 day ahead. Cool completely, then cover and store at room temperature.)

1 1/2 cups dark raisins
1 cup sugar
1/4 cup all-purpose flour, plus more for dusting
Grated zest of 1 lemon
2 tablespoons fresh lemon juice
Pate Brisee for Plum Crumb Pie
1 egg yolk
1 tablespoon heavy cream

Steps:

  • Combine dark and golden raisins in a large bowl, cover with boiling water, and let soak for 15 minutes. Drain in a colander, discarding water, and return raisins to bowl. Add sugar, flour, lemon zest, and lemon juice to the raisins. Mix thoroughly, and set the pie aside to thicken for about 10 minutes.
  • On a lightly floured work surface, roll out half of the pate brisee to a 1/8-inch thickness, and drape over a 9-inch pie pan. The dough should just fit to the lip of the pan, with no overhang. Roll out remaining half pate brisee to a 1/8-inch thickness. Using a ruler, measure a 9-inch circle in center, marking lightly without cutting through dough. With a round 1/4-inch pastry tip (number 4 tip) or a straw, punch holes in dough making 10 to 12 rows. Work quickly, so dough remains cold and holes punch through easily.
  • Fill the prepared pie pan with the raisin mixture. With a pastry brush, gently brush the dough edges with cool water, and top with perforated dough, making sure it is centered. With scissors, trim excess dough so that it creates an overhang of 1/2 inch. Tuck the dough overhang under itself to sit just on top of rim. Refrigerate for 30 minutes.
  • Heat the oven to 425 degrees. In a small bowl, combine egg yolk and cream to make a glaze. Brush pie sparingly with the glaze.
  • Place pie on a baking sheet and transfer to oven. Bake for 20 minutes, reduce oven temperature to 375 degrees. and bake 35 to 40 minutes more. If pie starts to get too brown, drape a piece of aluminum foil over top. Remove from oven to wire rack, and let cool.

A golden oldie raisin pie recipe from about 1960 or earlier. I remember adding the beaten egg white tip to brush the bottom of the pie shell, to keep it from getting soggy, a few years later. Decorating the pie on top with the leftover pastry cut outs was also an addition in later years. Serve the pie warm if you like your pie runny and juicy. Times given are approximate.

2 cups seedless raisins
2 cups boiling water
1/2-1 cup brown sugar
3 tablespoons all-purpose flour
1 tablespoon fresh lemon rind, grated
3 tablespoons fresh lemon juice or 3 tablespoons bottled lemon juice
1 pinch salt
1 pastry for a double-crust 9-inch pie
1 egg white, beaten

Steps:

  • Wash raisins in cool water and drain. Place raisins and boiling water in a saucepan and cook until raisins plump.
  • Blend brown sugar with flour and add to the raisin mixture. Cook over low heat until thickened, stirring frequently. Remove from heat.
  • Add lemon rind, lemon juice and pinch of salt. Cool. Stir.
  • Line deep nine-inch pie plate with pastry.
  • Brush bottom of pastry with beaten egg white (keeps bottom of pie from getting soggy).
  • Pour in cooled filling.
  • Add top crust and seal edges.
  • Make several steam vents with a knife in the top pastry.
  • Decorate top of pie with pastry cut outs, using cookie cutters for shapes, if desired.
  • Preheat oven to 425 degrees Fahrenheit.
  • Bake pie 40 to 50 minutes until nicely browned.

1/8 teaspoon salt
1/8 teaspoon ground cloves

3 large egg yolks, room temperature
1/2 cup chopped nuts, optional
1 pie shell (9 inches), baked
MERINGUE:
3 large egg whites, room temperature
1/4 teaspoon salt
6 tablespoons sugar

Steps:

  • In a small saucepan, place raisins and enough water to cover; bring to a boil. Remove from the heat; set aside. , In a large saucepan, combine the sugar, cornstarch, salt, cloves and cinnamon. Stir in sour cream and milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir for 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat., Drain raisins, reserving 1/2 cup liquid. Gently stir liquid into filling. Add raisins, and nuts if desired. Pour into pie shell. , For meringue, in a small bowl, beat egg whites and salt on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread over hot filling, sealing edge to crust. , Bake at 350° for 15 minutes or until golden brown. Cool on a wire rack for 1 hour; refrigerate for 1-2 hours before serving. Refrigerate leftovers.

1 (6 ounce) package zwieback toast, crushed into crumbs
½ cup finely chopped almonds
1 cup white sugar
¼ cup olive oil
1 ½ pounds creamed cottage cheese
¼ cup sifted all-purpose flour
⅛ teaspoon salt
6 eggs, separated
1 cup sour cream
1 tablespoon grated lemon zest
¼ cup fresh lemon juice
½ cup golden raisins

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch springform pan with olive oil, and dust with zwieback crumbs.
  • In a large bowl, combine remaining zwieback crumbs, 1/4 cup white sugar, chopped almonds, and olive oil. Press into the bottom of the prepared pan. Bake in preheated oven for 7 minutes; set aside to cool.
  • Process cottage cheese in food processor until smooth, or press through a fine sieve. In a mixing bowl, combine cottage cheese, 1/2 cup white sugar, flour, salt, egg yolks, sour cream, lemon peel, and lemon juice. Beat at medium speed, scraping the bowl often, until smooth and well blended.
  • In a clean mixing bowl, beat the egg whites until foamy. Gradually add the remaining 1/4 cup white sugar, and continue beating until stiff peaks form. Fold into the cheese mixture. Fold in the raisins. Spread batter evenly into the crust.
  • Bake in preheated oven until center is set, about 90 minutes. Cool in the pan. Chill cheesecake for at least 4 hours or overnight.
