I combined two favorite cake recipes to come up with this one. Always a hit parties and potlucks. The topping really makes this one great. Lemon Jell-O® works well too.

1 (16.25 ounce) package white cake mix
1 ¼ cups water
⅓ cup vegetable oil
3 egg whites
1 (6 ounce) package pineapple-flavored gelatin mix (such as Jell-O®)
1 cup boiling water
¾ cup cold water
1 (20 ounce) can crushed pineapple, drained
1 (3.5 ounce) package instant vanilla pudding mix
1 (8 ounce) container whipped topping (such as Cool Whip®), thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat cake mix, 1 1/4 cup water, vegetable oil, and egg whites together in a bowl using an electric mixer in medium speed until combined, about 2 minutes. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 29 to 34 minutes. Cool for 15 minutes.
  • Stir pineapple-flavored gelatin with boiling water in a bowl until dissolved; stir in cold water.
  • Poke holes into cake using a skewer or straw; spoon gelatin mixture evenly over cake. Refrigerate for 4 hours.
  • Mix pineapple and pudding mix in a bowl; fold in whipped topping. Spread mixture evenly over chilled cake; refrigerate at least 2 more hours.

1 (18 1/4 ounce) package yellow cake mix
1 (1 ounce) package sugar-free instant vanilla pudding mix
1/2 cup water
2 eggs, lightly beaten
1/2 cup egg substitute
1/2 cup nonfat milk
1/4 cup unsweetened applesauce
1 (8 ounce) can unsweetened crushed canned pineapple, undrained
1/4 cup brown sugar, packed
1 1/2 cups nonfat milk, cold
1 (1 ounce) package sugar-free instant vanilla pudding mix
1 (8 ounce) carton frozen reduced-fat whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees and grease 9x13 baking pan.
  • In a large mixing bowl, combine the first seven ingredients. Beat on medium speed for 2 minutes.
  • Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean.
  • Meanwhile, in a small saucepan, combine pineapple and brown sugar.
  • Cook and stir until mixture comes to a boil.
  • Boil for 4-5 minutes or until most of the liquid is evaporated; cool slightly.
  • Remove cake from the oven; place on a wire rack.
  • Poke holes in warm cake with a fork.
  • Spoon pineapple mixture evenly over cake; cool completely.
  • For frosting, in a small bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Spread over cake.
  • Spread whipped topping over pudding.
  • Store in the refrigerator.

cooking spray
1 (18 1/4 ounce) box butter recipe cake mix
1 package jell-o instant lemon pudding (4 serving size)
1 1/4 cups pineapple juice
1/2 cup butter, softened
3 eggs
1 1/2 cups sour cream
1 cup powdered sugar
1 1/4 cups pineapple soda

Steps:

  • Preheat over to 350°. Spray a fluted tube cake pan with nonstick cooking spray.
  • In a bowl, combine cake mix and 3 tablespoons of the dry instant pudding.
  • Add pineapple juice, butter, and eggs; beat with electric mixer on low speed for 30 seconds. Scrape bowl; beat on medium speed for 2 minutes more.
  • Pour batter into prepared pan. Bake for 40 to 45 minutes or until wooden toothpick inserted comes out clean.
  • Cool the cake in the pan.
  • Make Icing by combining sour cream and the remaining dry instant pudding; beat with electric mixer on low speed until smooth.
  • Gradually add the powdered sugar; beat until smooth.
  • Remove cake from pan; place on plate.
  • Using a skewer, poke holes in the cake top. Slowly pour pineapple soda over holes (using more or less as desired).
  • Spread icing over cake.

1 (8-ounce) can pineapple slices- drained, juice reserved
1 (16-ounce) box pound cake mix
2 eggs
1 (6-ounce) can pineapple juice
1/4 cup water
1/2 cup brown sugar
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 by 5-inch loaf pan with cooking spray and set aside.
  • Remove 3 pineapple slices from the can and reserve the juice and set aside. Chop remaining pineapple slices into small pieces and set aside.
  • In a large bowl combine the cake mix, eggs, and 1 can of pineapple juice. Blend with an electric mixer on low speed for 30 seconds. Scrape down the sides of the bowl and beat for 3 minutes on medium speed. Stir in the chopped pineapple and combine well. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick, inserted into the center of the cake, comes out clean, about 45 to 50 minutes. Remove and cool completely.
  • In a small pot over medium heat combine the reserved pineapple juice and 1/4 cup of water. Add the brown sugar and butter and bring to a simmer. Add the remaining 3 pineapple rings and saute for 4 minutes or until the sauce thickens slightly. Remove from the heat. Reserve.
  • To serve, remove the pound cake from the pan and transfer it to a serving plate. Arrange pineapple rings on top and secure with toothpicks, if necessary. Pour the sauce over the cake and serve.

1 pkg yellow cake mix (regular size)
1 pkg instant vanilla pudding mix - 4.5 cup serving size
1/2 c water
2 eggs lightly beaten
1/2 c milk
1/4 c unsweetened applesauce
1 - 20 oz can crushed pineapple, undrained
1/2 c packed brown sugar
FROSTING
1 pkg coconut instant pudding mix - 4.5 cup serving size
1 c milk
couple drops coconut extract, optional
1 - 8 oz tub cool whip

Steps:

  • 1. Preheat oven to 350 degree F. Spray a 9 x 13 baking pan with non stick cooking spray.
  • 2. In a large bowl, combine the first six ingredients. Beat on medium speed for 2 minutes.
  • 3. Pour into a 13x9-in. baking pan. Bake for 25 - 30 minutes or until a toothpick inserted near the center comes out clean.
  • 4. Meanwhile, in a small saucepan, combine pineapple and brown sugar. Cook and stir until mixture comes to a boil. Boil for 4-5 minutes or until most of the liquid is evaporated; cool slightly.
  • 5. Remove cake from the oven; place on a wire rack. Poke holes in warm cake with a fork. Spoon pineapple mixture evenly over cake; cool completely.

I have had this recipe in my file for years and I'm not sure who I got it from. It is typed on a 3X5 card so I know it is pretty old. It is a very moist cake and you can frost it with cream cheese frosting or just top it whith whipped topping of your choice.

2 cups sugar
5 large eggs
2 cups all-purpose flour
1/2 teaspoon kosher salt

reserved syrup, from crushed pineapple

Steps:

  • Cake--preheat the oven to 350°.
  • Grease a 10-cup Bundt pan.
  • Using an electric mixer fitted with the paddle attachment, beat the butter and the 2 cups sugar on med-high speed until light and fluffy, about 3 minutes.
  • Add the eggs, 1 at a time, beating on medium speed after each addition until incorporated.
  • Add the flour and salt and mix on med-low speed just until incorporated.
  • Reserve 2 tablespoons of the drained pineapple to use for the syrup; stir the remaining pineapple and vanilla into the batter.
  • Spoon the batter into the prepared pan.
  • Bake until a toothpick inserted into the center comes out clean, about 50 minutes.
  • Syrup--in a large saucepan set on med-high heat, stir together the 1 cup sugar and reserved pineapple syrup; bring to a boil.
  • Decrease the heat to medium and continue cooking, stirring, until the mixture thickens, about 5 minutes.
  • Remove from heat and stir in the 2 tablespoons reserved pineapple; set aside.
  • To finish--cool the cake in the pan for about 10 minutes.
  • Using thin wood or metal skewers, poke holes in the cake 1 to 1 1/2 inches apart, reaching almost to the bottom.
  • Pour the pineapple syrup evenly over the cake.
  • Let it sit another 10 minutes to let the syrup penetrate; invert the cake onto a cake stand or plate.
  • Dust with powdered sugar.

So simple and easy I hesitate to submit this recipe, but everyone loved it! Using pineapple in place of the usual oil and water called for on the package mix makes this cake much lower in fat and very moist! Substitute another flavoring, such as rum extract, for the orange extract if you like.

20 ounces crushed pineapple (do not drain)
3 large eggs

Steps:

  • Note:*** Do NOT add the water and oil stated on the box of cake mix.
  • The Pineapple and juice replace these two ingredients and make it lower in fat and more moist.
  • In bowl, add dry cake mix, pineapple with juice, eggs and orange extract.
  • Beat just until mixed.
  • Pour into a 9x13-inch pan and bake at 350 degrees for 30-35 minutes or until toothpick inserted in center comes out clean.
  • Cool.
  • Note: I wrapped outer edge of cake with Magi-cake strips which prevents the outside edges from becoming browned before the cake is done; however, this is optional.
  • Mix orange extract and powdered sugar to make a glaze.
  • Drizzle over the cooled cake.
  • Note:*** I have made this in 6 mini-angelfood cake pans and baked for 23 minutes.
