PENNSYLVANIA DUTCH APPLE MUFFIN CAKE

Number Of Ingredients 13

2 c. all-purpose flour
1 tbsp. baking powder
½ tsp. baking soda
1 tsp. salt
1¼ tsp. cinnamon
½ tsp. allspice
¼ tsp. ground cloves
1¼ c. sugar
¼ c. butter
1 c. sour cream
2 eggs
1 c. finely diced, peeled apple (I use Granny Smith apples)
Butter and fine dry bread crumbs

Steps:

  • Heat oven to 350 degrees.
  • Butter a bundt pan or souffle dish and sprinkle with bread crumbs, tapping out excess.
  • Combine dry ingredients and blend well.
  • Melt butter.
  • Off heat, stir in sour cream and beat in eggs.
  • Beat the butter mixture into the dry ingredients and blend until batter is smooth and satiny.
  • Stir in apple.
  • Scrape batter into prepared pan, smoothing batter until it is level.
  • Sprinkle with crumb topping.
  • Bake 1 hour until crumbs are crisp and lightly browned and a skewer inserted in center of cake comes out clean.
  • If tube pan is used, start testing for doneness after 45 minutes.
  • Cool cake in pan 20 minutes.
  • Turn and knife between cake and sides of pan and gently invert cake onto counter.
  • Re-invert on a rack and cool thoroughly before serving.

4 cups apples, peeled, sliced
2 tablespoons low-fat margarine
1 teaspoon cinnamon, ground
2 egg whites, slightly beaten

Steps:

  • Preheat oven 375F.
  • Grease and flour a 9 in. tart or pie pan.
  • In a mixing bowl, combine flour, 2 T sugar and baking powder.
  • With a pastry blender or 2 knives, cut in 1 1/2 T margarine.
  • Add egg whites, milk and vanilla; beat until smooth.
  • Batter will be stiff.
  • Spoon into prepared pan and spread batter to fit pan.
  • Arrange apple slices, overlapping, in 2 concentric circles to cover batter.
  • In a small bowl, combine 3 T sugar and cinnamon; sprinkle over apple slices.
  • Dot with 1/2 T margarine.
  • Bake 30 min.
  • Cool 10 min before serving.

nonstick cooking spray, for greasing
2 refrigerated pie doughs, 8 in (20 cm)
3 large Granny Smith apples, peeled, cored, and diced
2 teaspoons cinnamon
¼ cup brown sugar
1 tablespoon cornstarch
3 tablespoons melted butter
30 vanilla wafers, crushed
2 teaspoons brown sugar
¼ teaspoon ground nutmeg
2 tablespoons melted butter
round cutter, 4 in (10 cm)

Steps:

  • Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin with nonstick spray.
  • Unroll the pie dough and use a 4-inch (10 cm) round cutter to cut out 12 circles.
  • Place each dough circle in a cup of the prepared muffin tin, pressing firmly against the sides to keep in place. Chill in the refrigerator for 15 minutes.
  • Make the filling: In a large bowl, mix together the apples, cinnamon, sugar, cornstarch, and melted butter.
  • Scoop ⅓ cup of filling into each crust cup.
  • Bake until the edges of the crust begin to crisp and the apples begin to soften, about 15 minutes.
  • Meanwhile, make the crumble topping: In a medium bowl, mix together the cookie crumbs, brown sugar, nutmeg, and melted butter.
  • Remove the mini pies from the oven and top each with about 1 tablespoon of the crumble topping, covering completely.

1 teaspoon salt

1 cup peeled apple (finely diced)

Steps:

  • CAKE:.
  • Butter a 9" tube pan well and sprinkle with the 1/4 cup of bread crumbs on the bottom and sides; tap out excess.
  • Combine first 8 ingredients and mix well.
  • In a small bowl beat the eggs and add cooled melted butter, sour cream.
  • Now add this to the dry mixture and mix well.
  • Stir in the chopped apples.
  • Pour into pan and sprinkle with crumb topping.
  • Bake in a 350 degree oven for 40-45 minutes.
  • Cool in pan for 20 minutes.
  • Invert on rack and then invert again so that the top is on the top.
  • CRUMB TOPPING:.

Adapted from Yankee magazine. Yankee used to feature recipes that had a unique history and I always found such great treasures in that monthly article. According to the article, this recipe was passed on by a neighbor to a lady who was celebrating at a restaurant and had brought the cake along. The chef at the resturant tasted it and begged for the recipe! I haven't tried this yet, but am posting this now in response to a request for special carrot cake recipes.

2 cups granulated sugar
2 cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon salt
2 teaspoons baking soda
4 large eggs
1 cup corn oil or 1 cup canola oil
3 cups freshly grated carrots
4 ounces cream cheese, at room temperature
1/2 cup sweet unsalted butter, at room temperature
1 (1 lb) box powdered sugar
2 teaspoons pure vanilla extract

Steps:

  • Combine sugar,flour,cinnamon,salt,and baking soda together in a large mixing bowl.
  • Add eggs, oil, and carrots and beat with an electric mixer for 2 minutes, scraping down sides to make sure everything get moistened together.
  • Pour into greased, lightly floured 9x13" metal cake pan.
  • Bake at 350 F for 55-60 minutes, or until a toothpick tests clean.
  • Cool completely before frosting.
  • To prepare icing: beat together all ingredinets for 2 minutes using an electric mixer, then spread generously over cooled cake.

2 cups finely chopped peeled tart apples
3 tablespoons sugar
3 tablespoons water
2 tablespoons brown sugar
1 tablespoon all-purpose flour

1 teaspoon vanilla extract
TOPPING:
3 tablespoons brown sugar
2 tablespoons all-purpose flour
2 tablespoons quick-cooking oats
2 tablespoons cold butter
BATTER:
1-3/4 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 large egg, room temperature
3/4 cup 2% milk
1/4 cup canola oil
GLAZE:
1/4 cup confectioners' sugar
1 to 2 teaspoons 2% milk

Steps:

  • In a small saucepan, combine the apples, sugar, water and brown sugar. Bring to a boil over medium heat. Sprinkle with flour; cook and stir for 2 minutes or until thickened. Stir in butter and lemon juice. Remove from the heat; add vanilla. Set aside to cool., For topping, combine the brown sugar, flour and oats. Cut in butter until mixture resembles coarse crumbs; set aside., In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, beat the egg, milk and oil. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Drop apple mixture by tablespoonfuls into the center of each muffin. Sprinkle with topping. , Bake at 400° for 20-24 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Combine glaze ingredients; drizzle over muffins. Serve warm.

This is a $50,000 Grand Prize Winner in the Pillsbury Cooking Contest. I'm not sure what year. I found it in a newspaper. It's good and different than most pies. Long on ingredients so plan on some time. First time I tried it was in 2002. If you don't have apple pie spice, you can mix together 1/2 teaspoon cinnamon, 1/4 teaspoon ginger, 1/8 teaspoon nutmeg and 1/8 teaspoon allspice.

1 teaspoon apple pie spice
1 cup applesauce

Steps:

  • Cream the shortening and sugar.
  • Add the eggs and beat till smooth and well blended.
