BOK A BOK SESAME GARLIC CHICKEN SANDWICH

Steps:
- Dredge the brined chicken in cornstarch.
- Dip the cornstarch dredged thigh into the batter, making sure to coat it thoroughly.
- Heat oil in a deep-fryer. Lower half of thigh into hot oil until it starts to float, then release thigh and cook until it reaches an internal temperature of 165 degrees F and is golden brown, 8 to 12 minutes.
- Meanwhile, toast bun. Place a tablespoon of lemon aioli on both the bottom and top of the toasted bun.
- Toss crispy onions and baby kale together in sesame vinaigrette, then put on top of bun.
- Place crispy chicken thigh on top of the bottom bun and drizzle liberally with our sweet soy sesame sauce.
- For the spice mix: Grind the coriander seeds, fennel seeds, peppercorns, granulated garlic and onion and bay leaves in a spice grinder, then place them in a container with the salt and sugar. Add 2 cups hot water to the mixture and stir to dissolve the salt and sugar.
- Add 2 quarts cold water and mix completely.
- For the brine: Place salt, sugar and 1 cup spice mix (save remainder for another use) into the very hot water. Let steep, stirring every 5 minutes until dissolved, for 20 minutes. Add 10 quarts cold water and chill in walk-in or ice bath. Store in fridge for up to a week.
- To use the brine: Cover the meat in brine and refrigerate, 24 hours.
- Place cornstarch, rice flour, gluten-free flour, vodka, baking soda, salt and 2 cups water in a container and whisk them together until smooth. Store in fridge for up to 3 days.
- Put mayo, zest, juice, pepper and salt in a mixing bowl and whisk together. Reserve.
- Place sesame seeds, garlic and onions into a blender and puree until smooth. Transfer to a small mixing bowl and whisk in sweet soy sauce.

Steps:
- Cut chicken into bite-sized pieces. Combine with flour, cornstarch, salt and pepper. Refrigerate 2 hours.
- To make sauce: Combine ingredients in small saucepan and simmer until reduced by half. Cool to room temperature.
- Heat 1 inch of oil in a frying pan. Pan-fry chicken until cooked through.
- Combine chicken with sauce. Garnish with sesame seeds and green onion.
SESAME GINGER CHICKEN
Steps:
- For the chicken marinade: In a mixing bowl, combine the chicken with the sesame oil, sugar, soy sauce and pepper. Toss to coat, cover, place in the refrigerator and let sit 1 hour. For the stir-fry: Remove the chicken from the fridge. Add 1 cup cornstarch to a shallow baking dish and dredge each piece of chicken, shaking off any excess. Fill a Dutch oven or high-sided saute pan with enough oil to completely submerge the chicken pieces. Heat over high heat until glossy and the temperature reaches 375 degrees F. Deep fry the chicken until golden brown, about 3 minutes, adding your chicken in batches to avoid overcrowding and to keep your oil from dropping in temp too much. Remove to a paper towel-lined plate. In a large saute pan, heat 1 tablespoon oil over medium heat. Add the garlic and ginger and cook until golden brown and fragrant, about 30 seconds. Next, add the rice wine, hoisin, oyster sauce, soy sauce, honey and the chili sauces; bring to a simmer. In a glass measuring cup, mix the remaining 2 tablespoons cornstarch with 1/4 cup very cold water (make sure you water is cold to avoid lumps!), whisking until combined. Add the mixture to the sauce and simmer for an additional minute, until the sauce thickens. Adjust seasoning to taste. Add in the fried chicken and toss to coat with the sauce. Add the lemon zest and juice. Garnish with toasted sesame seeds and scallions. Serve warm over rice.
SESAME CHICKEN

- Wash the chicken under cold running water, pat dry and trim off any excess fat. Cut the chicken into 1-inch cubes and put into a large mixing bowl. Add the marinade ingredients to the bowl and stir to combine. Set aside to marinate while you prepare the sauce.
- To make the sauce: In a saucepan, add the sesame oil and set over low heat. Add the ginger and garlic and fry gently until fragrant, about 2 to 3 minutes. Meanwhile, combine the remaining sauce ingredients in a mixing bowl and stir well to dissolve the cornstarch. Gently pour into the saucepan with the fried ginger and garlic. Stir as you pour because the cornstarch will thicken up pretty quickly. Keep warm over low heat.
- In a heavy-bottomed pot or deep-fryer heat enough oil to come halfway up the sides of the pot, to 375 degrees F.
- Fry the chicken, in small batches, until golden and crispy, about 5 to 6 minutes. Remove the chicken using a wire mesh strainer and drain on paper towels. Season with a little salt, to taste. To serve, arrange the fried chicken on a platter and pour drizzle with the sauce. Sprinkle with a generous amount of toasted sesame seeds and garnish with scallions and cilantro sprigs.
ASIAN HONEY SESAME CHICKEN
Steps:
- RINSE chicken; pat dry. Combine all remaining ingredients in large resealable food storage bag; add chicken. Seal. Refrigerate 4 hours or overnight, turning once or twice.
- HEAT oven to 350 degrees F. Pour 1/2 cup marinade into 13 x 9 x 2-inch glass baking dish. Add chicken. Discard remaining marinade.
- BAKE 35 to 45 minutes or until chicken is no longer pink in center and reaches internal temperature of 165 degrees F.

- Trim the meat and cut into thin strips about 1/2 x 2 inch.
- Make the marinade.
- In a bowl, blend the cornstarch with the rice wine or dry sherry, then stir in the lemon juice, soy sauce, Tabasco sauce, ginger and garlic.
- Stir in the strips, cover and leave in a cool place for 4 hours.
- Place the sesame seeds in a wok or large frying pan and dry fry over moderate heat, shaking the pan, until the seeds are golden.
- Set aside.
- Heat the sesame and vegetable oils in the wok or frying pan.
- Drain the meat, reserving the marinade, and stir fry a few pieces at a time until browned.
- Remove with a slotted spoon.
- Add the mushrooms and green pepper and stirfry for 2-3 minutes.
- Add the scallions and 1 minute more.
- Return the meat to the wok or frying pan, together with the reserved marinade, and stir over a moderate heat for a further 2 minutes, or until the ingredients are evenly coated with glaze.
- Sprinkle the sesame seeds on top and serve immediately with boiled rice.

SPICY CHINESE SESAME GARLIC CHICKEN
This is a delicious recipe that uses all Chinese ingridients, but is easily prepared with a conventional oven.

- Combine all ingridients except for chicken in a large bowl and mix together.
- Dip the chicken in and thoroughly coat each side.
- Place chicken in baking dish and pour the remaining sauce on top of the chicken.
- For maximum flavor, marinate for 2-3 hours at room temperature. If you are in a rush, you may skip this step.
- Bake at 375 degrees farenheit for 45 minutes.
- Serve over rice.

SESAME CHICKEN
This recipe really satisfies my craving for Chinese food. I serve it over rice with a side of steamed vegetables. The sauce makes just enough to glaze the chicken. I usually double or even triple the sauce recipe to have enough to pour over our rice and veggies. It is a nice low-fat alternative to the restaurant-style Sesame Chicken.

- Cut chicken breast into 1 inch strips or bite size pieces.
- Heat a large non-stick skillet that has been sprayed with Pam, over medium-high heat.
- Cook chicken for about 6 minutes or until no longer pink.
- Mix together honey, soy sauce, water, corn starch, ginger and red pepper flakes.
- Whisk until no corn starch lumps appear.
- Pour sauce mixture into skillet with chicken.
- Cook until sauce thickens slightly.
- You can add more water if sauce is too thick.
- Sprinkle with sesame seeds.
- Cover and simmer for 10 minutes or until chicken starts to soak up the sauce.
- Note: Since originally posting this recipe, I have tried some of the suggestions others have made. I do like it with a bit of sesame oil (be careful not to get too much, just a few drops at the end of cooking is good enough for me, but you might like more), fresh ginger is also good if you have it on hand. I have tried it with garlic and it is good that way also. I have also found that it is good with shrimp and pork. Basically what I am trying to say is, the original recipe is just a simple, quick and healthy meal I came up with when I was craving Chinese food. I thought it turned out really great and wanted to share it. I'm happy that so many of you have enjoyed it. For those of you that didn't care for it, I hope you can find one that suits your fancy some where else.

- Preheat oven to 375 degrees then lightly coat a 9" x 13" casserole dish with cooking spray. Season both sides of chicken breast with salt and pepper then dredge in flour. Place chicken breasts side by side in casserole dish.
- In a glass liquid measuring cup, measure ⅓ cup honey then add soy sauce, minced garlic, lemon juice, sesame oil, sesame seeds and red pepper flakes. Mix well, then pour over chicken breasts to coat completely.
- Bake 18–22, minutes depending on the thickness of chicken breasts. About halfway through cooking, spoon sauce over chicken then return to oven.
- Remove from oven, when chicken is just cooked through then let rest for 5–8 minutes. Just before serving, spoon sauce over chicken then garnish with sliced green onion. Serve with steamed rice and extra sauce on the side.
