Nonstick cooking spray, for the baking dish
3 tablespoons olive oil
1/2 onion, diced
1 green bell pepper, cored, seeded and diced
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1 teaspoon Italian seasoning
Half a 32-ounce bag frozen store-bought meatballs, defrosted and sliced in half
One 32-ounce jar marinara sauce
Two 8-ounce bags Italian cheese blend
One 5-ounce bag garlic croutons, crushed

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray.
  • Heat the olive oil in a medium skillet over medium heat. Add the onion and green pepper, then sprinkle with salt and pepper and saute until tender, about 5 minutes. Add the garlic and Italian seasoning and cook for another 1 to 2 minutes. Remove from the heat and set aside.
  • In a large bowl, combine the meatballs, marinara sauce and cheese. Add the cooked onion and pepper mixture. Mix to combine, then transfer to the prepared baking dish. Top with the crushed croutons. Bake until the cheese is melted and bubbling, 30 to 35 minutes. (If the topping starts to get too brown, loosely cover with foil toward the end of the bake.)

1 lb ground beef
1 lb hot italian sausage
4 cloves garlic, minced
½ cup fresh parsley, chopped
½ cup parmesan cheese
1 teaspoon salt
½ teaspoon pepper
1 cup italian bread crumbs
2 eggs
1 cup milk
24 oz marinara sauce
2 cups mozzarella cheese

Steps:

  • In a large mixing bowl, combine ground beef, Italian sausage, garlic, parsley, parmesan cheese, salt, pepper, bread crumbs, eggs, and milk. Mix until everything is fully infused together.
  • Roll into 4-5 ounce (113-142 g) meatballs. For even amounts, use a medium-sized ice cream scooper.
  • Preheat oven to 425°F (220°C).
  • Over medium heat, add 1 tablespoon of olive oil to a pan, and brown the meatballs on both sides for about 2-3 minutes or until you create a nice crispy sear. Cook about half way through. They will finish cooking in the oven.
  • In a casserole dish, spread a few tablespoons of marinara sauce to the bottom of the pan to help prevent sticking. Then place meatballs in the casserole dish and add the remaining jar of marinara sauce. Top with 2 cups of shredded mozzarella cheese.
  • Cover in foil and bake at 425°F (220°C) for 25 minutes or until the cheese is fully melted and the meatballs are fully cooked.
  • Serve and garnish with parsley.

1 teaspoon salt
1/2 teaspoon ground pepper
2 eggs (beaten)
2 teaspoons gelatin (optional)
1/4 cup beef broth
1 cup finely grated parmesan
1/3 cup almond flour
1 tablespoon minced garlic
1 teaspoon Italian seasoning
1 cup ricotta cheese
2 cups keto marinara (or Rao's marinara)
16 ounces mozzarella cheese (fresh, grated, or a combination)

Steps:

  • Preheat oven to 400 degrees.
  • Place the ground beef in a large bowl and sprinkle with salt and pepper.
  • Beat the eggs in another small bowl and sprinkle with the gelatin. Set aside for 5 minutes.
  • Heat the beef broth until just warm but not hot, and add to the gelatin mixture. Whisk to combine.
  • Add the gelatin mixture to the ground beef and stir in parmesan, almond flour, garlic, and Italian seasoning. Use a small cookie scoop to form into meatballs.
  • Place the meatballs in a single layer on two baking sheets. Bake for 15 minutes, flipping halfway through.

Steps:

  • Prepare mashed potatoes and meatballs: Prepare mashed potatoes as specified in my recipe here. Prepare Italian meatballs including sauce as specified in my recipe here.
  • Prep oven: Preheat the oven to 350°F.
  • Prepare casserole dish: Spray a 9x13-inch casserole dish with a bit of cooking spray (I used my Le Creuset Braiser, link under equipment).
  • Assemble casserole: Layer the mashed potatoes in the bottom of your casserole dish. Arrange the meatballs on top of the mashed potatoes evenly.
  • Bake: Transfer the casserole dish to the oven and bake for 20 minutes or until heated through. Sprinkle with mozzarella cheese evenly over the meatballs and bake for another 10 minutes or until the cheese has melted and starts to brown.

24 ounces marinara
1 cup provolone cheese (shredded or grated )
8 ounces fresh mozzarella (shredded or grated )
1 cup Parmesan cheese (shredded or grated )
3/4 tablespoon Italian Herbs

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Line a 9″ x 13″ deep dish bakeware pan with 12 ounces of marinara.
  • Add the Carando Meatballs evenly to the dish on top of the marinara/
  • Add 1/2 cup of provolone, Parmesan, and fresh mozzarella to the top of the meatballs.
  • Add another layer of sauce in-between the meatballs.

Steps:

  • Preheat oven to 400˚F.
  • In a large mixing bowl combine bread cubes and milk; let stand 5 minutes, or until the bread has absorbed all the milk.
  • Using two forks, shred the bread into tiny pieces and add grated onions, egg, garlic, beef, pork, Italian seasoning, salt, and pepper; mix it all together until thoroughly incorporated.
  • Chill mixture for 15 minutes so it's easier to roll the meatballs.
  • Form the mixture into 18 to 24 meatballs, they should be about the size of a ping pong ball.

1 (700 ml) bottle tomato passata or 1 (700 ml) reduced salt crushed tomatoes

400 g lean ground beef
1/2 cup fresh breadcrumb
1/4 cup flat leaf parsley, chopped
1 egg, lightly beaten
salt & freshly ground black pepper, to taste
100 g low-fat cheddar cheese, cut into 2cm cubes
1/4 cup shaved parmesan cheese, for serving

Steps:

  • Heat the oil in a heavy based casserole dish and add only half the carrot, onion, and garlic. Cook over low heat for 2 minutes until softened. Stir in passata, tomato paste and water, simmer for 5 minutes.
  • For the meatballs: Combine the remaining carrot, onion and garlic with mince, breadcrumbs, parsley, egg and seasonings. Knead thoroughly with your hands until the mixture is very sticky, shape the mixture into golf ball sized balls and stuff each with one cube of cheddar ensuring that the cheese is fully enclosed.
