FISH CAKES WITH CHIPOTLE CREAM
Steps:
- Blend the mayonnaise, egg, and lime juice in a large mixing bowl. Flake the cod into small pieces and add to the bowl. Mix in the celery and salt.
- Pulse the bread in a blender or food processor to make fine crumbs. Pour the crumbs on a sheet of waxed paper.
- Form the cod mixture into 8 patties. Gently place each patty in the bread crumbs and using a pancake spatula, turn to coat evenly. Heat the oil in a large, heavy skillet over medium heat. Place 4 fish cakes in the skillet and cook until the crumbs are golden brown, about 5 minutes per side; turn carefully. Repeat with the remaining fish cakes, adding more oil as necessary. Serve with the chipotle cream.
- Combine all ingredients in a small bowl.
- In a large skillet, heat the olive oil and saute the vegetables until tender.
- Dress the salad greens lightly with olive oil and vinegar. Sprinkle with coarse salt, to taste.

Cut and shape fruit snacks to look like seaweed or water plants; place on cupcakes.

- Place cake cubes in bottom of clean new 2-qt. plastic fish bowl; top with the jelly beans. Set aside.
- Stir boiling water into dry gelatin mixes in large bowl until completely dissolved. Add ice cubes; stir until gelatin begins to thicken. Remove any unmelted ice. Pour thickened gelatin into fish bowl.
- Arrange fruit snacks in gelatin to resemble fish swimming in a fish bowl. Refrigerate 4 hours or until gelatin is set. To serve, scoop out the gelatin and cake with a large spoon. Store leftover dessert in refrigerator.

- - Cook the fish in simmering water until fish flakes. (about 5 minutes).
- - In a large bowl combine the fish (flaked), mayonnaise, wild rice, onions, cheese, and garlic.
- - Add eggs and mix with a fork.
- - Crush the Ritz crackers and fold into the batter until firm enough to form into cakes.
- - Heat oil or buttter over a medium high heat.
- - Cook on each side for 2 to 3 minutes until nicely browned.

Steps:
- Place the potatoes into a saucepan with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes.
- Meanwhile, place the halibut and salmon into a skillet or large saucepan, and pour in the milk. Bring to a simmer, cover, and cook until fish flakes easily with a fork, about 5 minutes depending on the thickness of your fillets. Drain off milk, and set fish aside.
- When potatoes are done, drain, and place in a large bowl. Mash potatoes with one of the eggs and the butter until fairly smooth. Season with nutmeg, Worcestershire sauce, salt and pepper. Mix in the fish, taking care not to break into too small of pieces.
- Beat the remaining egg, and place on a plate. Place bread crumbs on a separate plate. Lightly flour your hands, and form the fish mixture into patties. Dip each patty into the egg, then coat with breadcrumbs. Place the fish cakes on a plate, and refrigerate for 30 minutes.
- Heat 1/4 inch of oil in a large heavy skillet over medium to medium-high heat. Fry the fish cakes for about 3 minutes per side, or until golden brown. Drain on paper towels, and serve fresh and hot.

- thaw fish, if frozen, rinse fish, pat dry with paper towels.
- Cut fish into 1/2 inch pieces.
- Set aside.
- In a medium bowl, combine egg, bread crumbs, onion, mayonnaise or dressing, mustard, parsley, lime zest and salt.
- Add fish, mix well.
- Shape into 1/2 inch thick patties.
- Coat both sides of the fish patties with cornmeal.
- In a large nonstick frypan or on a nonstick griddle heat oil over medium heat.
- Add half the fish cakes.
- Cook for 4 to 6 minutes or until fish flakes easily when tested with a fork, gently turning once.
- Remove from frypan.
- Repeat with remaining cakes.
- Serve with Green Goddess Sauce.
- If desired garnish with fresh chives.
