1 pastry for 9" pie, 2 Crust
6 cups apples (Use cooking apples like Macs or Granny Smith's. Core and peel them)
1 cup apple cider or 1 cup juice
2/3 cup sugar
apple cider or juice
2 tablespoons cornstarch
2 tablespoons water
1/2 teaspoon cinnamon, Ground
1 tablespoon butter or 1 tablespoon regular margarine

Steps:

  • Divide the pastry almost in half and roll out the larger half on a lightly floured surface to a 13-inch circle.
  • Line a 9-inch pie tin with the pastry.
  • Trim the edge to 1/2-inch beyond the rim of the pie tin.
  • Combine the apples, 1 cup of apple cider and the sugar in a 3-quart saucepan and cook, over high heat, until the mixture comes to a boil.
  • Reduce the heat to low and simmer for 8 minutes or until the apples are tender.
  • Drain the apples, reserving the syrup.
  • Add enough additional apple cider to the syrup to make 1 1/3 cups.
  • Return the syrup and apples to the saucepan.
  • Combine the cornstarch and water in a small bowl and stir until well blended.
  • Stir the cornstarch mixture and the cinnamon into the apple mixture.
  • Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  • Remove from the heat and stir in the butter, then pour the mixture into the pastry lined pie tin.
  • Roll out the remaining pastry to an 11-inch circle.
  • Fold the pastry gently, so as not to tear it, into quarters and cut slits in the folds.
  • Gently unfold the pastry on to the top of the filling and trim the edge to 1-inch beyond the rim of the pie tin.
  • Fold the top crust under the lower crust and form a ridge by fluting the edge of the pie.
  • Bake in a 400 degree F. oven for 40 to 45 minutes or until golden brown.
  • Cool on a wire rack until slightly warm before cutting and serving.
  • NOTE:
  • This is the perfect pie to serve with the rich cheddar sauce in this file.

1 1/4 cups all-purpose flour, plus more for rolling
2 tablespoons cold vegetable shortening
1 teaspoon granulated sugar
1/2 teaspoon apple cider vinegar
1/4 teaspoon fine salt
6 tablespoons (3/4 stick) cold unsalted butter, cut into small pieces
2 tablespoons plus 2 teaspoons ice water
1 1/2 cups heavy cream
1/2 cup granulated sugar
3 large egg yolks
1 large egg
3 tablespoons bourbon
2 teaspoons orange zest
1 teaspoon maraschino cherry juice
1/2 teaspoon fine salt
2 tablespoons confectioners' sugar
1 tablespoon bourbon
1 cup heavy cream
6 very thin orange slices (from 1 large orange)
6 maraschino cherries

Steps:

  • For the crust: Pulse the flour, shortening, granulated sugar, vinegar and salt in a food processor until it looks like fine meal. Add the butter, and pulse until it is in pea-size pieces. Sprinkle in 2 tablespoons of the ice water, and pulse until the dough begins to come together. Pinch the dough with your fingers; if it doesn't hold together, add up to 2 teaspoons more ice water, 1 teaspoon at a time, pulsing and checking the dough after each addition. Wrap the dough tightly, and refrigerate until firm, at least 1 hour or preferably overnight.
  • Position a rack in the center of the oven, and preheat to 375 degrees F. Roll the dough into a disc 11 to 12 inches wide on a lightly floured surface. Sandwich the dough between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes. Lay the dough in an 8-inch pie pan so it extends about 1/2 inch beyond the edge of the pan. Fold the outer edge of the dough up under itself, and crimp decoratively between your index finger and forefinger. Poke the dough all over with a fork, and refrigerate for 10 minutes more. Line the pie crust with parchment or foil, fill with pie weights or beans and bake until the dough appears dry to the touch, about 20 minutes. Remove the foil and weights, and continue cooking the crust until it's light brown and cooked through, 5 to 7 minutes more. Let the crust cool completely on a wire rack.
  • For the filling: Reduce the oven temperature to 350 degrees F. Whisk the heavy cream, granulated sugar, yolks, egg, bourbon, zest, cherry juice and salt in a medium bowl until smooth. Place the cooled crust on a rimmed baking sheet, and pour the custard into the crust. To avoid overbrowning, cut 2 strips of aluminum foil to wrap over the crust edges. Carefully transfer the pie to the oven, and bake until the custard is set but still has a slight jiggle, 50 to 60 minutes. Let the pie cool completely on a wire rack, about 4 hours. If serving the next day, let cool completely, then wrap and refrigerate overnight.
  • For the bourbon whipped cream: Beat the confectioners' sugar and bourbon in a large bowl with an electric mixer on low speed. Add the heavy cream, increase the speed to medium-high and beat until firm peaks form, about 1 minute.
  • Put six 2-tablespoon dollops of the whipped cream around the pie, and top each with a cherry. Twist the orange slices, and place them in between the whipped cream dollops. Serve the pie with the remaining whipped cream.

8 sheets phyllo dough
14 tablespoons butter, melted
3/4 cup chopped walnuts
2/3 cup maple sugar or firmly packed light or dark brown sugar
1 1/4 cups pure maple syrup
1 cup apple cider jelly or apple jelly
6 eggs, slightly beaten

Steps:

  • Preheat oven to 350 degrees. Butter 9-inch pie plate. Lay 1 sheet phyllo dough on clean surface. Place slightly damp kitchen towel over remaining dough to keep from drying out. With pastry brush, lightly brush with melted butter. Lay another sheet phyllo on top of buttered sheet, lightly butter. Repeat until all 8 layers are buttered, using 6 tablespoons of the butter. Place phyllo dough into the prepared pan, pressing it along bottom and sides. Trim the edges. Sprinkle walnuts over bottom of crust. In medium bowl beat together maple sugar, maple syrup, jelly, remaining 8 tablespoons butter, and eggs. Pour egg mixture over walnuts. Bake 40 to 45 minutes, or until filling is set. Serve chilled.

4 apples (20 oz)
2 tablespoons lemon juice
2/3 cup granulated sugar
1/3 cup brown sugar
3 tablespoons flour
1 1/2 teaspoons cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 tablespoons butter

Steps:

  • Pare, core and slice apples 1/4" thick and toss with lemon juice to keep from turning dark.
  • Note: 20oz is a kind of apple and the best I have found for this recipe.
  • Blend sugars, flour and spices.
  • Toss sugar mixture together with apples and mix.
  • Pile apples into unbaked pie shell and dot with butter; Add top crust and score top to allow steam to escape.
  • Bake at 425 degrees for 15 minutes, then 350 degrees for 45 minutes.

This pie is made mostly the old fashioned way. I caramelize the sugar in an iron skillet, but I make the rest of the filling in the microwave. My mom taught me to make this. She just dumps the ingredients in, though, so I had to make her let me measure before she "dumped" so I could write down the recipe. This recipe sounds long and involved, but is really easy. I do it from memory now. My kids won't even try caramel pie from a restaurant. They say they can tell by looking at restaurant caramel pies that they won't be as good!

2 (9 inch) pie crusts, baked
1 2/3 cups sugar
1/4 cup cornstarch
2 cups milk
6 extra large eggs, separated
1/2 cup butter
2 teaspoons vanilla
2/3 cup sugar
1/2 teaspoon cream of tartar (optional)
3/4 cup sugar

Steps:

  • Leave oven on from baking pie shells. Whisk together the 1-2/3 cups sugar and cornstarch in a large (at least 2 qt.) microwaveable bowl until there are no more lumps from the cornstarch. Pour the milk into the sugar mixture and whisk together until smooth. Add the butter to the top of the mixture.
  • Microwave on high for 3 minutes. Whisk thoroughly. Microwave for 3 more minutes, whisk again. Have the egg yolks in a separate bowl. Beat them slightly. Add a tablespoon full of the hot mixture at a time to the egg yolks, stirring well after each addition. Do this until the yolk mixture is warm. (This will keep it from getting lumpy.) Then add the yolk mixture to the cooked mixture. Microwave in one minute increments, whisking each time, until the mixture is of pudding consistency. Whisk in the vanilla. Set aside.
  • Put the 2/3 cup sugar into a small iron skillet. Cook, stirring constantly, on high until brown and bubbling. It will look like it's going to boil over. Pour IMMEDIATELY into cooked filling and whisk thoroughly. Divide between the 2 pie shells.
  • Beat the egg whites and cream of tartar (if using) until foamy and slightly holding shape. Turn beaters on low speed. Add the 3/4 cup sugar. After sugar is mixed in, turn beaters on high again. Beat until meringue is hard to shake off a spoon (or it stays on beater when you turn off mixer and pull beaters out of bowl). Spread meringue onto filling all the way to the edges.
  • Bake about 10 minutes or until brown. Watch closely. Turn off oven, open oven door slightly, and let pies cool in oven for 1 hour. Let pies cool completely on counter. Spray plastic wrap with Pam, cover pies and refrigerate.

  • In a small bowl whisk together egg and cold water; set aside.
  • Bake pie for 20 minute
  • Reduce oven temp to 375* and bake another 30 minute.
  • Brush top of crust with egg mix and bake another 10 minute.

1 cup white sugar
2 tablespoons all-purpose flour

  • Preheat oven to 425 degrees F (220 degrees C).

1 pkg double crust refrigerated pie dough
1/2 lb dried apples
3 c apple cider (see note)
1/2 c sugar
1/2 tsp cinnamon
1/4 tsp nutmeg, freshly grated
2 Tbsp unsalted butter

Steps:

  • 1. Prepare a pie tin according to the pie dough directions, lining the bottom of the tin.
  • 2. Place the apples and cider in a pot and bring to a simmer. Simmer until the apples are soft and plump, about 20 minutes.
  • 3. Preheat the oven to 400 F.
  • 4. Add the sugar, cinnamon and nutmeg. stir to combine, and continue cooking for 10 more minutes. The apples should absorb most of the liquid. Pour the apples into the pie shell. Dot with pieces of the butter.
  • 5. Roll out the second crust. Cut into lattice strips, either plain or with a ruffled edge. Weave the strips over the apple filling to form a lattice.
  • 6. Bake for 25-30 minutes until golden brown.

Pate Brisee (Pie Dough)
12 Granny Smith apples, peeled, cored, and sliced
3/4 cup sugar, plus additional for pie top
Zest and juice of 1 lemon
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
Pinch ground cloves
2 tablespoons unsalted butter
1 large egg, beaten

Steps:

  • Heat oven to 375 degrees. On a lightly floured surface, roll out pate brisee into two 1/8-inch-thick circles to a diameter slightly larger than that of an 11-inch plate. Press one pastry circle into the pie plate. Place the other circle on waxed paper, and cover with plastic wrap. Chill all pastry until firm, about 30 minutes.
