1 (18.25 ounce) package yellow cake mix
2 eggs
¼ cup vegetable oil
2 (8 ounce) packages cream cheese, softened
2 cups confectioners' sugar
1 teaspoon almond extract
½ cup sliced fresh strawberries, or as desired
½ cup diced pineapple, or as desired
½ cup sliced fresh peaches, or as desired
½ cup white sugar
½ cup orange juice
¼ cup lemon juice
¼ cup water
2 tablespoons cornstarch

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease two 12-inch pizza pans.
  • Mix cake mix, eggs, and vegetable oil together in a bowl until batter is just mixed; press into the prepared pizza pans.
  • Bake crust in the preheated oven until lightly browned, about 10 minutes. Remove crusts from oven and cool completely, at least 30 minutes.
  • Whisk cream cheese, confectioners' sugar, and almond extract together in a bowl until smooth; spread onto the cooled crusts.
  • Arrange strawberries, pineapple, and peaches on the cream cheese layer.
  • Combine white sugar, orange juice, lemon juice, water, and cornstarch together in saucepan over medium heat; cook and stir until glaze is thickened, 5 to 10 minutes. Remove saucepan from heat and refrigerate glaze until cooled, about 20 minutes.
  • Drizzle glaze over fruit and refrigerate pizza until chilled, at least 30 minutes.

Recipe is from The Cake Mix Doctor by Anne Byrn, who suggests prebaking the crust, then setting out the whipped topping and bowls of prepared fruit for a gret backyard birthday party activity.

1 (18 1/4 ounce) package yellow cake mix
1/4 cup water
1/4 cup packed light brown sugar
4 tablespoons butter, melted (1/2 stick)

2 cups sliced fresh strawberries
2 cups thinly sliced bananas
1 cup sliced kiwi
1 cup seedless grapes, halver
1/2 cup apricot preserves
2 tablespoons water

Steps:

  • Preheat oven to 350 degrees F. Place one rack in the top of the oven and another in the center. Spray two 12- to 14-inch pizza pans or one 16- by 11-inch jelly roll pan with vegetable oil spray. Line pans with parchment paper or waxed paper and lightly mist with the oil spray, then dust with flour.
  • Place the cake mix, water, brown sugar, butter and eggs in a large mixing bowl. Blend with electric mixer on low speed until well blended, 1-2 minutes. The dough will be stiff and sticky. With rubber spatula, spread the dough onto the bottom and sides of the prepared pans. Place one pizza pan on each rack of the oven or, if using the jelly-roll pan, place on center rack.
  • Bake until crust is light brown and feels firm in the center when lightly pressed with your finger, 18-22 mniutes. Take care not to overbake the crust on the top rack. remove pans from oven and place on wire racks to cool completely, 1 hour.
  • For the topping, spread the cooled pizza crusts with the whipped topping and then arrange the fruit over the top in concentric circles. If using the jelly roll pan, mix the fruit together in a medium bowl and spoon it evenly over the topping.
  • Place the apricot preserves and the water in a small saucepan over low heat, and stir until mixture warms. Remove pan from heat and strain, discarding apricot solids. Brush the strained glaze over the fruit. Place the pizzas in the refrigerator and chill, uncovered, until serving time, at least 1 hour.
  • Leftovers may be stored in the refrigertor, covered with plastic wrap, for up to 1 week.

Nonstick cooking spray, for the pan
1 box yellow cake mix (plus eggs and oil per box instructions)
One 14-ounce container vanilla whipped frosting
Brown food coloring gel, or equal parts red and green to make brown, for the frosting
2 chocolate rice cereal treat bars
3 pieces red fruit leather
4 green round gummy candies
2 ounces marzipan
1/2 cup seedless strawberry jam
1 tablespoon store-bought red frosting
1 cup store-bought cream cheese frosting
1 tablespoon grated white chocolate
1 teaspoon finely chopped pistachios

Steps:

  • Preheat the oven to 350 degrees F. Spray a 14-inch round cake pan with nonstick cooking spray.
  • Prepare cake mix according to the package instructions. Pour into the prepared cake pan and bake until set, well-browned and a toothpick inserted into the center comes out clean, about 40 minutes. Let cool completely in the pan, then invert onto a rack to remove it from the pan.
  • Put the vanilla frosting in a bowl. Mix 5 to 8 drops of brown food coloring into the frosting and mix until well blended for a light brown pizza crust color. Add more food coloring if need. Transfer to a pastry bag fitted with a medium round tip.
  • Invert the cake back onto a large round platter, pizza pan or 14-inch cardboard cake round so that it is right-side up. Cut a scored line around the cake about 3/4 inch from the edge using a paring knife, cutting only about 1/4 inch deep. Scoop out the center of the cake about 1/4 inch deep to form a shallow well and give it a raised pizza crust look. Press down on the middle of the cake to slightly compress the cake and make it less crumbly in texture. Pipe frosting over the entire cake and spread and smooth with an offset spatula. Place in the freezer to let the frosting firm up, for about 1 hour.
  • Meanwhile, prep the "toppings."
  • For "Sausage Crumbles:" Break up the chocolate rice cereal treats into chunks to resemble sausage crumbles. Set aside.
  • For "Pepperoni:" Unroll the fruit leather and place on a cutting board. Cut out 12 rounds from the fruit leather using a 1 1/2-inch round cutter to create pepperoni slices. Set aside.
  • For "Green Peppers:" Cut the green gummy candies into quarters. Set aside.
  • For "Mushrooms:" Roll the marzipan into a log about 6 inches long and 1 inch in diameter. Score 2 lines into the length of the log using the back of a butter knife to form the stem of the mushroom. Place in the freezer for 30 minutes to harden up.
  • Combine 2 drops brown food coloring with 1/4 cup of water. Remove the formed marzipan log from freezer and slice into 1/2-inch-thick slices (you should get 10 slices). Place the "mushroom" slices on a plate and paint all over with the brown food coloring and water mixture. Set aside.
  • For the "Tomato Sauce:" Put the strawberry jam in a microwave-safe bowl. Microwave on high until it has a pourable consistency similar to pancake batter, 30 to 45 seconds. Whisk in the red frosting until well blended. Let cool until room temperature but still pourable, about 5 minutes.
  • For the "Melted Cheese:" Put the cream cheese frosting in a microwave-safe bowl. Microwave on high until it has a pourable consistency similar to pancake batter, about 10 seconds. If the constancy is too thin, let it sit for 5 to 10 minutes to thicken it up.
  • Assemble: Remove the cake from the freezer and pour strawberry "sauce" in the center. Spread the sauce out to the edge of the crust using an offset spatula. Pour the cream cheese frosting over the sauce into individual pools to mimic the look of melted cheese, making sure to leave some of the sauce around the edge near the crust exposed. Arrange the toppings over the "melted cheese." Finish with a sprinkle of grated white chocolate to mimic grated Parmesan and chopped pistachios to mimic dried oregano. Slice and serve.

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Spray a 10- to 12-inch tart pan or pizza pan with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, baking powder and salt. In a large mixing bowl, cream together the butter and sugars until smooth using a handheld mixer. Add in the egg and vanilla and mix until incorporated. Slowly incorporate the flour mixture into the creamed butter, and mix until blended. Remove the dough from the bowl and press it into the prepared pan. (You may need to dust your hands with some flour to prevent the dough from sticking to them; it is a wet dough when it comes together.) Bake until the edges just start to brown, 10 to 12 minutes. Remove from the oven and let cool.
  • For the spread: In a large mixing bowl, beat the cream cheese, confectioners' sugar, vanilla, lemon zest and salt until smooth. Spread evenly on the cooled crust.
  • For the glaze: Add the marmalade, 2 tablespoons water and the herbes de Provence to a small skillet and cook over medium heat until loosened and warm.
  • To assemble: Arrange the fresh fruit in the desired pattern on top of the pizza. Brush the fruit with the glaze. Slice and serve.

1 (16 1/2 ounce) package Pillsbury sugar cookie dough (1-2 packages. depends on how thick you want your crust to be, I use 2)
3/4 cup confectioners' sugar
2 teaspoons vanilla
2 (8 ounce) packages cream cheese (softened)
1 (8 ounce) container Cool Whip (thawed)
fresh fruit, any kind you may like (i.e. kiwi, strawberries, grapes, oranges, bananas, etc.)

Steps:

  • Cut sugar cookie dough into 1/4-inch thick pieces.
  • Lay it down on a greased pizza pan or rectangular pan.
  • Press dough till pressed together.
  • Bake in 350°F oven for 10 minutes or until brown.

  • Another great and fun way to make this is using the rectangular pan is to use blueberries and strawberries to make an American flag.
  • Use the blueberries as stars and strawberries as stripes.

  • Another extra is to sprinkle granola on to it or sliced almonds, for an extra taste.

I learned a million and one things while working at Payard Patisserie in New York City. It was a classic French kitchen filled with classically trained French pastry chefs. I picked up kitchen French full of slang and swears, I learned how to chablonner un biscuit joconde (which means to cover a thin cake with chocolate), I became a pro at rolling the heads of dozens of brioches a tete at four in the morning. I also learned tricks on how to extend the life of fresh fruit for several days when making a fruit tart. Every morning I would build stunning tarts with vivid berries and fresh currants and sliced apricots and then I would paint the fruit meticulously with a clear gelatin coating called nappage. The nappage kept the fruit looking fresh for a few days, which meant the tart could sit for several days and still be presentable. When I put fresh fruit tarts on the menu at Flour, I took a different approach. I wanted just the fruit--no nappage. This meant the tarts would only last a day. The fruit had to be perfectly ripe and fresh and able to stand on its own. It's a fleeting treat for sure but your reward is a delicate, crispy, sweet shell filled with fresh vanilla cream and piled high with the juiciest, ripest fruit, ready to eat out of hand.

1 recipe Pate Sucree, recipe follows
1/2 recipe/1 cup (340 grams) Pastry Cream, recipe follows
1/2 cup (120 grams) heavy cream
4 or 5 fresh medium strawberries
1 ripe kiwi, or 4 or 5 large green seedless grapes
1 ripe Champagne mango
1 cup (110 grams) fresh blackberries
1 cup (125 grams) fresh raspberries
1 cup (125 grams) fresh blueberries
1/2 cup (1 stick or 115 grams) unsalted butter, at cool room temperature
1/4 cup (50 grams) sugar
1/2 teaspoon kosher salt
1 cup/140 grams all-purpose flour
1 2/3 cups (400 grams) whole milk
3/4 cup (150 grams) sugar
3 tablespoons (25 grams) cornstarch
1/2 teaspoon kosher salt
6 large egg yolks (about 120 grams), at room temperature
2 teaspoons pure vanilla extract

Steps:

  • Make the Pate Sucree. Make the Pastry Cream and set it aside.
  • Remove the pate sucree from the refrigerator, unwrap it, and knead it slightly to make it malleable if it feels stiff. Using a rolling pin, press the dough to flatten it into a disk about 1/2 inch thick. Generously flick flour over the work surface and the dough. Make sure the surface you are rolling on is well floured so that the dough does not stick to it; likewise, make sure the disk itself is floured well enough to keep the rolling pin from sticking to it. Carefully roll out the disk into a circle about 10 inches in diameter. Roll from the center of the disk outward and gently rotate the disk 90 degrees (a quarter-turn) after each roll to ensure that the disk gets stretched out evenly into a nice circle. Use a bench scraper to help move the dough by scraping underneath the dough and moving it around. Don't worry if the dough breaks a bit, especially toward the edges. You can easily patch these tears up once you've lined the tart pan.
  • Once the dough circle is about 10 inches in diameter, dock it by poking it all over with a fork or a pastry docker (see Cook's Note). Roll it gently around the rolling pin, then unfurl it over an 8-inch tart pan. Press the dough into the tart pan, taking care to press into the corners. Trim the edge of the shell even with the top of the tart pan. Use any scraps or odd pieces to patch up any tears or missing bits. Make sure the entire tart pan is completely covered with dough, and press one last time all the way around to ensure that any holes have been patched up.
  • Refrigerate the tart shell for at least 30 minutes to let the dough rest; the gluten needs a little time to relax so it doesn't shrink in the oven. (At this point you can wrap the tart shell well in plastic wrap and refrigerate for up to 3 days or freeze it for up to 2 weeks.)
  • Preheat the oven to 350 degrees F and place a rack in the center of the oven. Place the tart shell on a baking sheet and bake for 25 to 30 minutes, rotating the baking sheet midway through the baking time, until it is golden brown all around. Remove from the oven and let cool completely on a wire rack. (At this point the tart shell can be stored, well wrapped, at room temperature for up to 1 week.)
  • In a medium bowl, whip the heavy cream until it holds a peak and is thick and soft. Fold the pastry cream into the whipped cream until thoroughly combined.
  • Gently pop the tart shell out of the pan. Place the tart shell on a serving plate. (Hint: The tart shell has a tendency to slide around a bit, so anchor it to the plate by putting a small spoonful of the pastry cream mixture directly on the plate before placing the tart shell on it.) Fill the tart shell with the pastry cream mixture and spread it evenly with a spatula.
  • Stem and quarter the strawberries and place them on top of the cream with one cut side down, spaced randomly but evenly. Peel the kiwi and slice it in half lengthwise. Slice each half into 1/2 -inch-thick half-moons. (If using green grapes instead of kiwis, slice the grapes in half.) Place the kiwi slices in the cream against the cut side of the strawberries. Peel the mango and cut it into thin slices about 1 x 1 inch. Place the mango in the cream next to the kiwi. Slice the blackberries in half if they are large and place them in the cream in random places. Fill the empty spots on the tart with raspberries, blueberries, and any extra mango. The goal is to cover the whole tart with fruit and not have any cream visible. The tart must be eaten the same day it is assembled or it will get soggy. If not serving the tart immediately, store it in the refrigerator; serve within 6 hours.
  • 1 large egg yolk (about 20 grams), at room temperature
  • In a stand mixer fitted with a paddle attachment, cream the butter, sugar, and salt together for 2 to 3 minutes, until pale and light. Scrape down the sides and bottom of the bowl and the paddle with a rubber spatula. Add the flour and paddle on low speed for about 30 seconds, until the flour is entirely incorporated. The mixture will look like wet sand. Add the egg yolk and mix until the dough comes together, about 30 seconds. Remove the dough from the bowl, press it into a disk, wrap it tightly in plastic wrap, and let it rest in the refrigerator for about 1 hour before using. The dough can be tightly wrapped in plastic and stored in the freezer for up to 2 weeks, or in the refrigerator for up to 5 days. If frozen, thaw it in the refrigerator overnight before using.
  • In a medium saucepan, heat the milk on medium-high heat until just before it comes to a boil, when bubbles start to form around the edge of the pan. In a small bowl, thoroughly mix together the sugar, cornstarch, and salt. (Mixing the cornstarch into the sugar will prevent it from clumping when you add it to the egg yolks.) Whisk the egg yolks in a medium heatproof bowl until blended. Slowly whisk in the sugar-cornstarch mixture until completely incorporated. Remove the milk from the heat and slowly add it to the egg yolk mixture, whisking constantly, to temper the eggs.
  • When the milk is all whisked into the egg yolk mixture, return everything to the saucepan and heat it over medium heat. Whisk continuously and vigorously for about 1 minute. At first the mixture will be very frothy and liquid; as it cooks more, it will slowly start to thicken until the frothy bubbles disappear, the mixture starts to steam, and the whole thing become more viscous. After 1 minute, stop whisking every few seconds to see if the mixture has come to a boil. If not, keep whisking vigorously. As soon as you do see it boiling, whisk vigorously for about 10 seconds, then immediately pour the pastry cream through a sieve into an airtight container. Stir in the vanilla. Cover with plastic wrap pressed directly against the surface of the pastry cream (to prevent a skin from forming) and let cool to room temperature. Refrigerate for at least 4 hours, until cold, before using. The pastry cream can be stored in an airtight container in the refrigerator for up to 3 days.

2 cups fresh raspberries
2 cups blackberries
1 cup sliced strawberry
1 plum, sliced
2 teaspoons sugar

Steps:

  • to make lemon curd: Combine the first three ingredients in a saucepan over medium heat, stirring with a whisk Cook with a whisk until sugar dissolves and mixture is light in color (about three minutes) Stir in lemon juice and butter, cook for five minutes or until mixture thinly coats the back of a spoon, stirring constantly with a whisk.
  • Cool.
  • Cover and chill (the mixture will thicken as it cools).

1/2 cup butter or margarine, melted
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup finely chopped nuts, if desired
1 cup sour cream
1 egg
1 can (29 oz) sliced peaches, drained, patted dry
1/2 cup powdered sugar
1/8 teaspoon ground cinnamon
2 teaspoons milk

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). In large bowl, mix cake mix, butter, brown sugar and cinnamon with spoon until crumbly; reserve 3/4 cup mixture for topping. Press remaining crumbly mixture on bottom and side of ungreased 12-inch pizza pan or in bottom only of ungreased 13x9-inch pan.
  • In small bowl, beat sour cream and egg with spoon until blended. Carefully spread over crust. Top with peaches. Sprinkle with reserved crumbly mixture and the nuts.
  • Bake 12-inch pizza pan 34 to 38 minutes, 13x9-inch pan 35 to 42 minutes or until topping is light golden brown and center is set. Cool 30 minutes.
  • In another small bowl, stir glaze ingredients until consistency of thick syrup, adding additional milk, 1 teaspoon at a time, if necessary. Drizzle glaze over warm pizza. Serve warm or cool. Store covered in refrigerator.
