5-Ingredient Fix Contest Entry. This is a quick and easy breakfast when you are cooking for just a few or a crowd. I have have made many different variations but this is the one I get asked for most.

Steps:
- Pre heat oven to 350 degrees Spray 8 muffin tins with nonstick spray.
- Chop bacon into small pieces, fry until almost crisp. Remove from pan to paper towel lined plate and set aside. Add the chopped pepper stir fry and shredded hash brown potatoes to the hot pan and cook until slightly crisp. Divide the mixture evenly between the 8 prepared muffin tins. Press into bottom and up the sides. Carefully crack one egg into each. Bake in preheated oven 10 minutes, remove from oven, top each with an 1/8 cup of shredded cheese and divide the bacon evenly over the tops. Return to oven for 3-4 minutes for over easy, longer for harder cooked eggs.

Steps:
- Preheat oven to 375.
- Generously spray a 9"x13" baking dish with cooking spray. Pour bag of shredded potatoes evenly in bottom of casserole. Pour eggbeaters over potatoes.
- Microwave sausage links for 1 minute and cut into bite sized pieces, then add to potato/egg mixture.
- Evenly sprinkle cheese over mixture, then sprinkle with bag of bacon over top.
- Bake for 30-40 minutes.

- Preheat oven to 350 degrees and grease a 9x13 baking pan. Mix together the eggs, diced green chilis and the cheese. Spread the hashbrowns in the bottom of the baking pan and pour the eggs mixture over them. Top with the chopped tomatoes. Bake for 45 minutes or until a knife inserted in the center comes out clean.

- Preheat the oven to 375 degrees. Grease a 9 x 13 casserole.
- Pour in the Simply Potatoes for the 1st layer, then top with bacon or ham, then sprinkle on all the cheese.
- Whisk 9 eggs together in a large bowl, then whisk in the sour cream.
- Pour the egg mixture over the cheese.
- Bake for about 35 minutes. or until light brown on top.
- Let rest 5 minute before cutting into squares.
- My favorite condiment is salsa to serve with it!

- Preheat oven to 375 degrees.
- Spray a 8x8 glass baking dish with cooking spray.
- In a large bowl, combine potatoes, black beans, corn and cooking creme. Stir in half of cheese. Pour potato mixture into baking dish. Sprinkle with remaining cheese.
- Bake for 25-30 minutes, or until cheese is golden brown and bubbly.
- Remove from oven and serve.
- Recipe serves 4-6 and can be prepared in one hour.
