1 1/4 pound wild salmon, skin removed, cut into 4 pieces
2 tablespoons whole grain mustard
2 tablespoons 100% pure maple syrup
1 clove garlic, minced
Juice of 1/2 a lemon

Steps:

  • Preheat oven to 400-degrees Fahrenheit. Place salmon pieces on a sheet pan lined with parchment paper. Season with salt and pepper; roast for 10 minutes.
  • In a small bowl, combine mustard, maple syrup, garlic and lemon juice. After the 10 minutes of cooking, brush salmon with mixture and return to the oven for 5 minutes or until salmon is just cooked through.

3 tablespoons olive oil
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
Salt and pepper
4 pieces salmon fillet (6 ounces each), with skin
Chopped fresh dill (optional)

Steps:

  • Preheat the oven to 425 degrees. In a small bowl, mix together olive oil, mustard, lemon juice, and 1/4 teaspoon each salt and pepper.
  • Put salmon, skin side down, in a baking dish, and spoon mustard glaze over each piece of fish. Bake until salmon is just cooked through and no longer red, 6 to 8 minutes. Sprinkle with chopped dill, if desired, and serve.

SALMON WITH PUFF PASTRY AND PESTO

4 pieces of purchased puff pastry, each cut to be just larger than a piece of salmon
4 (4 to 6-ounce) pieces salmon
1/4 cup sliced almonds
1/4 cup purchased pesto
2 tomatoes, sliced

Steps:

  • Preheat the oven to 400 degrees F.
  • On a foil-lined baking sheet, place the 4 pieces of puff pastry. Also place the 4 pieces of salmon, being careful to make sure they are not touching. Sprinkle each piece of salmon with 1 tablespoon of the sliced almonds. Bake for 10 minutes.
  • To serve, place each piece of puff pastry on a plate. Top each puff pastry with 1 tablespoon of pesto. Top the pesto with 2 slices of tomatoes each. Top the tomatoes with the salmon and serve.

320g sheet ready-rolled puff pastry
1 egg yolk , to glaze
2 skinless salmon fillets
3 tbsp crème fraîche
1 tbsp wholegrain mustard
large handful baby spinach
mixed leaves tossed with your favourite dressing, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a large baking sheet with baking parchment. Unroll the pastry sheet and score a border about 1cm from the edge. Prick the middle area with a fork all over and glaze the border with the egg yolk. Bake the pastry for 15 mins until puffed up and almost cooked.
  • Meanwhile, put the salmon fillets in a microwaveable dish and cover with cling film. Cook in the microwave on High for 2 mins until just cooked. Set aside to cool for 1-2 mins, then flake into chunky pieces. Mix the crème fraîche with the mustard in a small bowl and season.
  • Take the pastry out of the oven and flatten the middle area with the back of a spoon. Cover the base with the crème fraîche sauce, then scatter the spinach and salmon flakes over. Bake in the oven for a further 5 mins or until the pastry is cooked and golden. Serve with dressed mixed leaves.

1/2 lemon (juiced)
1 1/2 tablespoons grainy mustard
1 1/2 tablespoons dijon mustard
1/4 cup fresh dill (chopped and divided)
Kosher salt and freshly ground black pepper
1 2- pound filet steelhead or King salmon (skin on)
1 1/2 pounds small new potatoes (red or white)
1 pound thin stalk asparagus (woody stems removed)
4-6 cloves garlic (peeled, left whole and smashed with the side of a knife)
2 tablespoons olive oil

Steps:

  • Preheat the oven to 450 degrees F.
  • Line an 18 X 13 inch sheet pan with aluminum foil. Scatter the lemon slices on the pan.
  • In a small bowl, mix the lemon juice, grainy mustard and dijon mustard together. Season with salt and pepper and 1 teaspoon of the fresh dill. Place the salmon on the sheet pan and rub with the mustard sauce. Season with kosher salt and black pepper.
  • Thinly slice the potatoes (I leave the skins on) and place in a bowl with the asparagus and smashed garlic cloves. Drizzle with the olive oil, season with salt and pepper and toss to coat. Scatter the vegetables on the sheet pan as evenly as possible. Season with more salt and pepper if desired.
  • Bake the salmon and vegetables for 15-20 minutes or until desired doneness, checking the cook time at the 10-12 minute mark.
  • Serve with additional mustard sauce if desired and sprinkle with fresh dill and more lemon wedges if you like.

Born and raised in Alaska, I cannot imagine eating any salmon other than delicious Wild Alaskan Salmon. This dish will highlight the magnificant flavor and texture of our salmon with onion and shitake mushroom wild rice pilaf wrapped up in golden puff pastry. Serve with a rich, creamy dijon tarragon sauce. A little time consuming but worth every minute. Wow your guests!

1/2 cup long grain white rice
1/2 cup wild rice
1 bay leaf
1 cup low sodium chicken broth
1/2 cup minced fresh onion
2 tablespoons butter
2 tablespoons fresh lemon juice
6 ounces fresh shiitake mushrooms, chopped
2 sheets frozen puff pastry
1 1/2 lbs king salmon fillets, skinless cut into 4 serving portions
1 egg, beaten with
1 teaspoon water
2/3 cup bottled clam juice
1 1/4 cups whipping cream
3 tablespoons fresh tarragon, minced
1 tablespoon Dijon mustard

Steps:

  • Boil wild rice and bay leaf in water for 45 minutes. Drain.
  • Meanwhile, Melt butter in pan, saute mushrooms and onions until onions are soft and mushrooms release juices.
  • Add white rice and saute about 2 more minutes.
  • Add chicken broth and lemon juice, bring to boil.
  • Reduce heat to low, cover and simmer 20 minutes.
  • Mix drained wild rice with cooked rice pilaf and cool.
  • Butter large baking sheet.
  • Roll out each sheet of pastry to 12" square.
  • Cut each sheet into 4 squares.
  • Mound rice evenly onto 4 squares.
  • Top each rice mound with salmon.
  • Fold up and seal the corners of each filled square (the edges will not cover salmon).
  • Place the remaining 4 squares on top of each of the 4 filled squares. Tuck corners under and pinch seams together.
  • Save any remaining rice for another use.
  • Cover and chill for 30 minutes.
  • Brush with egg mixture and bake at 400 for 30 minutes.
  • Serve with sauce.
  • This makes 4 large servings. For smaller servings, cut the fish into 8 portions and fill each of 8 squares with rice and salmon. Pull up corners of each square and pinch the seams, completely enclosing and sealing the filling. Bake for only 20 minutes.
  • For Sauce:.
  • Combine whipping cream and bottled clam juice. Boil and reduce until thickend appx. 20 minutes.
  • Stir in dijon and tarragon.

1 bunch mustard greens, trimmed, cut crosswise into 2-inch-wide strips

Steps:

  • Preheat oven to 350°F. Mix first 4 ingredients in small bowl. (Sauce can be prepared 2 hours ahead. Cover and let stand at room temperature.) Place potatoes in small bowl. Spoon 1 tablespoon sauce over and toss to coat. Arrange potatoes in baking pan. Bake 15 minutes.

  • Preheat oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.

This is an adaptation of a recipe found in the "Arizona Republic" and "Sunset Magazine". Cooking time includes over night refrigeration plus the microwave time of 18 minutes.

1 (1 lb) can salmon
2 cups seasoned croutons
2 cups grated cheddar cheese, divided
4 eggs
1 1/2 cups milk
1/2 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1 teaspoon salt
paprika

Steps:

  • Drain and flake salmon.
  • Place 1 cup croutons in a 2-quart microwave-safe casserole.
  • Sprinkle 1 cup salmon and 1 cup cheese over croutons.
  • Repeat.
  • Beat eggs and blend in milk, Worcestershire sauce, dry mustard and salt.
  • Pour over salmon mixture.
  • Refrigerate overnight.
  • Microwave on high 8-10 minutes.
