SPLIT PEA AND SMOKED HAM SOUP



Split Pea and Smoked Ham Soup image

2 tablespoons olive oil
3 stalks celery, chopped
3 cloves garlic, chopped
2 parsnips, peeled and chopped
1 large onion, chopped (about 2 cups)
Kosher salt and fresh ground pepper
Kosher salt and fresh ground pepper
2 sprigs fresh oregano
2 sprigs fresh thyme
1 bay leaf
2 ounces bourbon
1 pound split peas, picked through for pebbles then rinsed with cold water
One 8-ounce piece smoked ham
8 cups chicken broth
1/2 baguette, sliced and toasted

Steps:

  • In a large sauce pot, heat the olive oil over medium heat. Add the celery, garlic, parsnip and onion, and saute for 15 minutes to build flavor, seasoning with salt and pepper as you go. Add the oregano, thyme and bay leaf, and cook on low for 3 more minutes. Turn the burner off and add the bourbon, return to the heat and reduce for 3 minutes. Add the split peas, ham and stock. Remember to season lightly as you cook. Cook until the peas are tender and the soup has reduced to the desired consistency, about 1 hour. Pull the ham piece and herbs from the pot and, using an immersion blender, blend the soup until mostly smooth. Cut the ham into 1/2-inch pieces and add back to the pot. Serve with the toasted baguette.

1 cup chopped yellow onions
2 cloves garlic, minced
1/8 cup good olive oil
1/2 teaspoon dried oregano
1-1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 cups medium-diced carrots (3 to 4 carrots)
1 cup medium-diced red boiling potatoes, unpeeled (3 small)
1 pound dried split green peas
8 cups chicken stock or water

Steps:

  • In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot.

This recipe is adapted from one I found years ago on the Fat Free Vegan blog. I've made it many times, and it freezes well. The mustard seeds are a key part of the recipe. I usually double the garlic and ginger, especially if I have a cold. It's very filling and satisfying because it's so thick and hearty. Naan bread is a perfect accompaniment. Can also be served over basmati (or your favorite) rice.

cooking spray
2 medium onions, chopped (yellow or white)
1 1/2 teaspoons cumin seeds
1 teaspoon black mustard seeds
1/4 teaspoon vegetable oil
2 teaspoons ginger paste or 1 tablespoon minced fresh ginger
2 teaspoons garlic, finely minced
2 medium sweet potatoes, peeled and cut into 1-inch cubes
8 cups water
3 cups dried yellow split peas, picked over and rinsed
1 -2 tablespoon mild curry powder or 1 -2 tablespoon garam masala
1 tablespoon salt
1 bunch kale, cleaned, removed from rib, and chopped coarsely

Steps:

  • Spray a large soup pot with cooking spray and heat on medium.
  • Saute onions for 5 minutes or until they become translucent.
  • Push onions to the side of the pot and add the cumin seeds and mustard seeds to the bottom-center of the pot. Add vegetable oil on top of cumin seeds and mustard seeds and stir lightly. When the mustard seeds begin to pop, stir the onions into the seed mixture.
  • Add the ginger and garlic and cook for one more minute.
  • Add sweet potatoes, water, split peas, and one tablespoon of curry powder (or garam masala). Stir well.
  • Cover the pot and simmer for one hour. Stir regularly to ensure that the split peas don't stick to the pot. Add more water if necessary.
  • Stir kale into the soup and cover. Cook for 10 additional minutes on low (or slightly less time if you want the kale to retain any crunch).

My family loves split-pea soup and this is the best recipe for it I have found! I like to substitute canned chicken broth for the water and add a bit more ham. This recipe comes from Gourmet Magazine,1995. Delicious!

8 slices bacon (about 1/4 pound)
1/2 onion, chopped
2 carrots, cut into 1/4-inch dice
1 lb dried split peas
2 1/2 quarts water (or chicken broth)
1 smoked ham hock
1 teaspoon salt
1 bay leaf

Steps:

  • In a large heavy kettle or stock pot cook bacon over moderate heat, stirring, until crisp and transfer to paper towels to drain.
  • Pour off all but about 1/4 cup bacon fat from kettle and cook onions and carrots, stirring, until softened.
  • Add remaining ingredients and simmer 2 hours uncovered, stirring occasionally and adding 1 to 2 cups more water (or broth) if soup becomes too thick.
  • Remove kettle from heat and transfer ham hock with a slotted spoon to a cutting board.
  • Discard fat and bones and chop meat.
  • Return meat to kettle and simmer soup, stirring, until heated through.
  • Discard bay leaf.
  • Just before serving, crumble bacon and sprinkle over soup.
  • Makes 8 cups.

The long cooking time and use of homemade chicken broth is what makes this split-pea soup so flavorful. This recipe is the result of much experimentation and years of trying to fix my mom's recipe for split pea soup! Sometimes, instead of simmering this on the stove I'll let it simmer in a Crockpot all day long. Putting some of this soup in a thermos makes the perfect lunch in between classes or at work; you don't even realize you're eating a lot of vegetables and the split peas make it high in fiber. A very nutritious choice!

2 tablespoons olive oil
1 cup chopped onion
3/4 cup chopped celery
3/4 cup chopped carrot
1 cup chopped potato
1 cup finely chopped up ham
1 cup dried split peas
5 cups homemade chicken broth
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • 1. Saute onions with olive oil in a large stock pot until translucent on medium heat, which will take about 8 minutes.
  • 2. Add celery, carrots and potato and saute 3-4 more minutes.
  • 3. Pour in chicken broth and add split peas and ham. Uncovered, bring to a boil.
  • 4. Once boiling, cover and turn heat down to low. Let the soup simmer for 3-4 hours. The soup is done when the split peas have broken apart and are evenly mixed throughout the soup.
  • Notes: The longer you cook the soup, the better and more developed the flavor gets--sometimes I'll transfer it to a crock pot and let it simmer in there all day. If you like a smooth soup, blend finished soup with an immersion blender or in a food processor in small batches (large batches will make a mess!) If you like a thicker soup, add a small hand full of split peas to the 1-cup listed.

1 tablespoon extra virgin olive oil
1 cup diced onion
1 cup diced carrot
1 cup diced celery
1 large garlic clove, minced
6 cups chicken broth
1 1/2 cups yellow split peas, rinsed and drained, or
1 1/2 cups split peas, rinsed and drained
1 large bay leaf
1 1/2 cups chopped fresh spinach leaves, lightly packed or
8 ounces frozen spinach, chopped
3 tablespoons lemon juice, freshly squeezed
1/2 teaspoon black pepper

Steps:

  • In a large cooking pot, heat olive oil on medium-high heat.
  • Add onion and cook uncovered for 5 minutes, stirring often, until onion is softened and starting to brown.
  • Reduce heat to medium and add carrots, celery, garlic, yellow split peas, chicken broth and cook uncovered for about 5 minutes, stirring occasionally until carrots start to soften.
  • Add bay leaf and bring to boil.
  • Reduce heat to medium low, and simmer for about 1 1/2 hours or until peas are soft but not mushy.
  • Discard bay leaf.
  • Add spinach, heat and stir for about 1 to 2 minutes or until spinach is wilted.
  • Add lemon juice and black pepper and stir well.
  • Adjust seasonings to taste.
  • Refrigerate any unused portions.

1/2 pound dried whole peas
1/2 pound dried green split peas
1 meaty ham bone
3 quarts water
1 large onion, chopped
1 medium carrot, chopped
2 celery ribs, chopped
1/2 cup chopped celery leaves
1 teaspoon bouquet garni (mixed herbs)
1 tablespoon minced fresh parsley
1 bay leaf
1 teaspoon salt
1/4 teaspoon pepper
1/2 pound smoked sausage, chopped, optional
SPAETZLE DUMPLINGS:
1 cup all-purpose flour
1 large egg, beaten
1/3 cup water

Steps:

  • Cover peas with water and soak overnight. Drain, rinse and place in a Dutch oven. , Add ham bone, water and remaining soup ingredients except sausage and dumplings. Bring to a boil. Reduce heat; cover and simmer 2 to 2-1/2 hours. , Remove ham bone and skim fat. Remove meat from bone; dice. Add ham and, if desired, sausage to pan. , For dumplings, place flour in a small bowl. Make a depression in the center of the flour; add egg and water and stir until smooth. , Place a colander with 3/16-in.-diameter holes over simmering soup; transfer dough to the colander and press through with a wooden spoon. Cook, uncovered, 10-15 minutes. Discard bay leaf. Freeze Option: Prepare soup without dumplings and freeze in serving-size portions to enjoy for months to come.
