Categories     main-dish

Time 52m

Yield 6 servings

Number Of Ingredients 10

3 (3/4 to 1 pound) pork tenderloins
1/2 cup soy sauce
1/2 cup dry sherry
1/2 cup honey
1/4 cup rice wine vinegar
1/4 cup vegetable oil
2 tablespoons fresh orange juice
1 1/2 tablespoons minced fresh rosemary
1 tablespoon minced shallots
1 teaspoon minced fresh ginger

Steps:

  • Trim the tenderloins of all fat and silverskin. Place them in a shallow baking dish large enough to hold them without crowding.
  • Combine the soy sauce, sherry, honey, vinegar, oil, and orange juice in a medium bowl, whisking until well blended. Stir in the rosemary, shallots, and ginger. Pour the mixture over the tenderloins. Cover with plastic wrap and allow to marinate at room temperature for 2 hours.
  • Preheat an outdoor grill or indoor grill pan.
  • Remove the pork from the marinade, shaking off any excess. Place the tenderloins on the grill and cook, turning frequently, for about 18 minutes, or until an instant-read thermometer inserted into the thickest part reads 155 degrees F. Transfer to a platter and allow the meat to rest for 10 minutes before carving.
  • Meanwhile, place the marinade in a small saucepan over medium heat and bring to a simmer. Simmer for 10 minutes, or until slightly thickened.
  • Slice the pork into 1/4 inch-thick slices, spoon the hot marinade over the pork. Serve with a tossed salad.

Number Of Ingredients 9

Marinade:
1 small piece ginger, peeled and cut into 1/2-inch pieces (1 1/2 teaspoons)
1 clove garlic, peeled
1 tablespoon honey
jalapeño pepper
2 tablespoons nuoc mam, or fish sauce
1 tablespoon water
1 large pork fillet (about 1 1/2 pounds), trimmed of all fat and silver skin (1 pound, 2 ounces trimmed weight)
1 teaspoon canola oil

Steps:

  • Place all the marinade ingredients in the bowl of a food processor and process until pureed. Pour the marinade into a plastic food bag, and add the trimmed pork fillet. Seal the bag tightly, and shake it until the meat is well coated with the marinade. Refrigerate for at least 2 and up to 8 hours.
  • About 30 minutes before cooking time, heat a grill until it is hot. Preheat the oven to 200 degrees.
  • Remove the pork fillet from the marinade, and reserve the marinade in an ovenproof skillet or metal gratin dish. Sprinkle the fillet with the oil, and place it on the hot grill. Cook, covered, about 6 minutes, then turn the fillet over. Cook, covered, for 6 minutes on the second side, until the meat is nicely grilled on all sides.
  • Bring the reserved marinade to a boil on top of the stove. Return the meat to the marinade and place it in the 200-degree oven for at least 10 minutes but as long as 40 minutes to rest. Slice the fillet, and serve with some of the juices.

GRILLED PORK CHOP MARINADE

Grilled Pork Chop Marinade image

This easy, delicious Grilled Pork Chop Marinade recipe is made from healthy ingredients and everyday spices. When made with dates, it's a Whole30 marinade and makes excellent grill marks. Pairs wonderfully with pork chops that are juicy and highly flavorful right off the grill.

Provided by The Real Food Dietitians

Time 30m

Number Of Ingredients 10

4 bone-in pork chops (about 2 lbs) (may substitute boneless pork chops)
¼ cup olive oil
½ cup coconut aminos*
3 tablespoons honey or 5-6 soaked deglet dates (see tip below for soaking)**
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
2 cloves garlic
¼ teaspoon ground cumin
¼ teaspoon black pepper
Pinch of fine salt

Steps:

  • Mincely chop or press the garlic and combine all of the marinade ingredients in a small bowl. Whisk to combine well. Move on to Step 2.
  • Place the pork chops in a large container or zip-top bag. Set aside about 3-4 tablespoons of the marinade (to save for brushing the chops while on the grill) and pour the rest over the chops, flipping the chops to coat. Cover and refrigerate for 4-12 hours.
  • When ready to grill, remove the pork chops from the refrigerator and let sit at room temperature for 20 minutes or while the grill is preheating. Preheat the grill to 425-450°F. Remove the chops from the marinade letting excess marinade drip off. Discard the marinade. Place chops on the grill and grill for 8-10 minutes. Brush with the reserved marinade, then flip chops and brush the other side. Grill for another 5-7 minutes or until the internal temperature reaches 145°F. Time on the grill will depend on the thickness of the chops and whether or not you're using bone-in chops or boneless chops (bone-in chops will take a few minutes longer to grill).
  • Remove from the grill and let rest for 3 minutes before serving.
