FIRECRACKER SHRIMP AND RICE

You're a mere twenty minutes and one skillet away from this all-in-one spicy-sweet shrimp dinner.

Number Of Ingredients 14

1/3 cup light brown sugar
3 tablespoons fresh orange juice
2 tablespoons hot sauce, such as Frank's
2 tablespoons rice vinegar
1/4 teaspoon crushed red pepper flakes, plus more for garnish
Kosher salt
1 1/4 pounds peeled and deveined small shrimp, tails removed
3 tablespoons cornstarch
1/4 cup vegetable oil
1 1/2 teaspoons grated fresh ginger
3 cloves garlic, grated
3 cups cooked basmati rice
1 bunch scallions, cut into 1/2-inch pieces
Sriracha and fresh cilantro leaves, for garnish

Steps:

  • Whisk together the brown sugar, orange juice, hot sauce, rice vinegar, red pepper flakes and 1/2 teaspoon salt in a medium bowl; set aside.
  • Dry the shrimp well with paper towels and add to a large bowl. Sprinkle the cornstarch over the shrimp and toss to coat.
  • Heat the oil in a large nonstick skillet over medium-high heat until shimmering. Fry the shrimp in the hot oil until pink, about 1 minute per side. Add the ginger and garlic. Cook, stirring, until fragrant, about 1 minute. Add the sauce mixture, rice and scallions and cook until warmed through, about 3 minutes.
  • Top with more red pepper flakes, a drizzle of sriracha and cilantro leaves.

THE LEADING INGREDIENT
1 1/2 lb fresh large tiger shrimp (peeled and deveined)
HOW TO MAKE SEASON FLOUR
1/2 c all purpose flour
1/2 c cornstarch
1 Tbsp old bay seasoning
1 Tbsp garlic powder
t tsp cumin
1 tsp cayenne pepper
FOR THE SHRIMP
1/2 c thai sweet chili sauce
1/4 c scallions chopped for garnish
salt to taste
coconut oil for frying (or vegetable oil) see note

Steps:

  • 1. Note: Coconut oil has been described by nutritionist as, " The Healthiest oil on earth". I use "Pure, Unrefined, Cold Pressed" coconut oil. You may buy on-line or in your local health food store. It adds a lighter taste for fried foods and I love cooking with it.
  • 2. Step 1 Preheat oil for frying between 350 - 360 ° F. While oil is heating, in a large Ziploc bag, add flour, cornstarch, Old Bay, garlic powder, cumin, and cayenne pepper. Place shrimp in bag and toss until shrimp is completely covered in season flour, then remove shrimp and shake off excess season flour and place on a plate to give coating a chance to adhere to shrimp.
  • 3. Step 2 Place shrimp in hot oil in small batches so that you keep your oil hot. Cook batches of shrimp for about 1 - 2 minutes or until golden brown. Place fried shrimp on a tray with paper towels to drain and lightly season to taste with salt.
  • 4. Step 3 To Serve, first place shrimp in a large bowl and add Thai Sweet Chili sauce to coat shrimp, then place on a serving platter and garnish with chopped scallions and lemon or lime zest if you desire.

Large Shrimp dredge in season flour before frying, it adds an extra dimension of crispiness and flavor. Restaurant inspired recipe " Bang Bang Shrimp". Crispy fried shrimp toss in spicy sauce and served as a wonderful appetizer. Recipe found on www.justapinch.com. While a lovely appetizer, I prefer to serve as a main dish with fried noodles.

peanut oil (for frying) or coconut oil
1/2 cup all-purpose flour
1/2 cup cornstarch
1 tablespoon Old Bay Seasoning
1 tablespoon garlic powder
1 teaspoon cumin
1 teaspoon cayenne pepper
1/2 cup Thai sweet chili sauce
1/4 cup scallion, chopped (to garnish)
1 lemon, zest of, minced

Steps:

1/3 cup almonds
2 jalapeno peppers, seeded
1 bunch cilantro (without stems)
6 scallions
3 cloves garlic
2 teaspoons cumin
1/8 cup olive oil
1/4 cup water
2 lbs medium shrimp or 2 lbs large shrimp, peeled and deveined
1 tablespoon olive oil
1/8 cup lemon juice
salt

Steps:

  • Place the ingredients for the mash in a food processor or blender and blend until a smooth paste forms (probably about 1 minute).
  • Place in a covered dish with the shrimp and marinate at least 1 hour, preferably overnight.
  • Heat the tablespoon of olive oil and saute the shrimp until pink.
  • Use the lemon juice to deglaze the pan, and season the shrimp with salt as needed.
  • If desired, you can garnish with thinly sliced avocado, sprigs of cilantro, or cherry tomatoes.

1 lb large shrimp, shelled and deveined
1 cup cornstarch
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup canola oil, for frying
6 corn tortillas
1 cup cabbage
1 lime, cut in wedges
1 sprig cilantro, to garnish
1/3 cup mayonnaise
3 tablespoons sweet chili sauce
2 teaspoons chili sauce

Steps:

  • Shrimp:.
  • In a shallow baking dish or bowl whisk together the cornstarch, salt and pepper. Toss shrimp to thoroughly coat.
  • In a heavy bottomed pot heat oil to 350 degrees.
  • Working in batches fry the shrimp until golden brown about 1-2 minutes. Remove to a paper towel lined plate.
  • Toss the shrimp in half of the sauce.
  • Build tacos with shrimp, cabbage, cilantro and squeeze of lime juice. Drizzle remaining firecracker sauce on top.

  • Whisk all ingredients together. Season with salt and pepper to taste.
