- Preheat the oven to 375 degrees F. Arrange the bacon on a wire rack set on a rimmed baking sheet. Bake until the fat starts rendering, about 10 minutes. Remove from the oven and blot the bacon with paper towels on both sides.
- Combine the brown sugar, maple syrup and cayenne in a small microwave-safe bowl. Microwave, stirring, until smooth, 30 seconds to 1 minute. Brush the bacon with half the syrup mixture and sprinkle with half the ground peppercorns. Bake until the bacon browns around the edges, about 15 minutes. Flip and blot the other side with paper towels, then brush with the remaining syrup mixture (reheat in the microwave, if necessary); sprinkle with the remaining peppercorns. Continue baking until the bacon browns and the sugar melts, 15 to 20 more minutes. Let cool slightly.
MAPLE GLAZED BACON LONG JOHN

- Sprinkle the yeast over the warm water and let stand until foamy, about 5 minutes.
- In a large bowl of a stand mixer or using an electric mixer, mix together the yeast mixture, milk, sugar, shortening, salt, eggs and 2 cups flour. Mix for a few minutes at low speed, or stirring with a wooden spoon.
- Beat in remaining flour 1/2 cup at a time, until the dough no longer sticks to the bowl. Knead until smooth and elastic, about 5 minutes Place the dough into a greased bowl and cover. Set in a warm place to rise until doubled in size. The dough is ready if you touch it and the indention remains.
- Turn the dough out onto a floured surface and gently roll out to 1/2-inch thickness. Cut with a floured donut cutter. Let the donuts sit out to rise again until doubled in size. Cover loosely with a cloth.
- Heat the shortening in a deep-fryer or large heavy skillet to 370 degrees F. Slide the donuts into the hot oil using a wide spatula. Turn the donuts over as they rise to the surface. Fry on each side until golden brown. Remove from the oil and drain on a wire rack.
- While hot, dip the donuts into Maple Glaze, then into bacon pieces and set onto wire racks to drain off excess.
- Mix 2 cups sugar, corn syrup, maple syrup, maple extract and salt into mixer. Mix well, 15 to 20 minutes. Add additional cup of powdered sugar to get to desired thickness. You may also add additional maple extract for desired taste.
MAPLE-ROASTED BACON

- Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown. Remove the pan carefully from the oven; there will be hot grease in the pan! Brush the bacon slices with maple syrup and bake for another 3 to 5 minutes, until the bacon is a warm golden brown. - Arrange the bacon on the prepared baking pan in a single layer, then sprinkle evenly with the sugar and pepper. Bake until well browned, 35 to 40 minutes. Drain on paper towels and serve.
MAPLE-DIJON-BLACK PEPPER GLAZED BACON

- Preheat the oven to 400 degrees F. Whisk together the maple syrup, mustard and pepper in a small bowl. Lay the bacon on a baking sheet. Bake in the oven for 9 to 10 minutes. Remove the bacon and place on a baking rack over a separate baking sheet. Using a paper towel, blot and soak up any excess oil. Then, using a pastry brush, generously glaze the bacon with the syrup. Return the bacon to the oven for another 1 to 2 minutes, to desired crispness. Transfer to a platter and serve.
BLACK PEPPER MAPLE BACON

- Preheat the oven to 350 degrees F. Line a baking sheet with aluminum foil then a wire rack.
- Whisk together the maple syrup, pepper, and mustard. Lay the bacon on the rack being careful not to overlap. Brush the bacon with the syrup mixture.
- Put the baking sheet on the top rack of the oven and bake until golden and crisp, 18 to 20 minutes. Remove from the oven and let cool slightly before serving.

- Adjust oven rack to middle position. Heat oven to 375°F. Line cookie sheet with sides with foil.
- Place bacon on cookie sheet in single layer. Bake 10 minutes. Drain off fat.
- Meanwhile, in 1-quart saucepan, heat syrup and jelly, stirring occasionally, until jelly melts and syrup is warm. Remove from heat.
- Use pastry brush to brush about half the syrup mixture on bacon (you don't have to use it all, just enough to moisten bacon), then sprinkle with pepper. Bake 15 minutes.
- Flip bacon, brush with remaining syrup mixture and sprinkle with pepper. Bake 20 minutes longer or until bacon is glazed and done. Serve warm.

- Cook the bacon in a large skillet over medium-high heat until browned, but NOT crispy; drain on paper towels; set aside.
- In a small bowl whisk together the maple syrup, Dijon mustard and brown sugar; set aside.
- Return the bacon back to the skillet and brush with glaze, then turn the bacon over.
- Cook the glazed side down for 2 minutes over low heat.
- Glaze then turn and cook for another 2 minutes over low heat.
- Repeat until all the glaze is used up.
