ROASTED PLUM TOMATO SAUCE

1 tablespoon olive oil
1 cup finely chopped onion
2 teaspoons minced garlic
1 cup roasted plum tomatoes*
1 cup tomato sauce (your own or store-bought)
1/2 cup chicken stock or canned broth
1/4 cup chopped fresh basil leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Heat oil in a large skillet, and saute the onion and garlic over medium heat until softened. Stir in the roasted tomatoes, tomato sauce, chicken stock and basil. Simmer for 5 minutes, stirring occasionally. Adjust seasonings with salt and pepper.

This is the closest recipe I've found to the deliciously simple tomato sauces I've tried in Italy. Since in the States our tomatoes aren't sweetened by rich, volcanic soil, a little bit of sugar helps make the sauce more vibrant.

1 tablespoon olive oil
3 cloves garlic, peeled and halved
18 plum tomatoes, or more to taste - cored, seeded, and chopped
2 teaspoons salt
1 teaspoon white sugar
⅛ cup chopped fresh basil

Steps:

  • Heat oil in a large saucepan over medium heat. Add garlic and brown for 3 to 4 minutes. Add tomatoes, salt, and sugar; cook for 15 minutes.
  • Place a large bowl on a work surface. Insert a colander inside the bowl. Place cooked tomatoes in the colander to drain, saving excess liquid. Transfer tomatoes to the bowl of a food processor and pulse until blended to the desired consistency. Return tomatoes to the saucepan. Add basil and cook for 20 to 30 minutes more, adding some of the reserved tomato liquid if the sauce is too thick.

2 tablespoons olive oil, or more as needed
1 large red onion, finely diced
1 clove garlic, minced, or more to taste
salt and ground black pepper to taste
2 (28 ounce) cans crushed plum tomatoes
1 teaspoon white sugar
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
1 teaspoon kosher salt

Steps:

  • Heat a medium pot over medium heat for 4 to 5 minutes. Add olive oil, onion, and garlic and season with salt and pepper. Saute until translucent, 5 to 7 minutes. Stir in crushed tomatoes.
  • Bring mixture to a boil; reduce heat to low and let simmer. Add sugar, oregano, 1 teaspoon pepper, and 1 teaspoon kosher salt; mix well. Let simmer, uncovered, until desired consistency is reached, 35 to 45 minutes, stirring every 15 minutes.
  • Place a food mill on top of a large bowl. Transfer mixture to the food mill and process, working in batches if needed.

This is the sauce I use with my Family Favorite Basic Meatballs (recipe posted separately) to make meatball subs.

1/4 cup olive oil
1 1/2 cups onions, diced
2 teaspoons garlic, minced (I typically increase this to a tablespoon since I love garlicky pasta sauce)
3 (14 1/2 ounce) cans plum tomatoes, crushed
1/2 cup reserved meatball pan dripping (meatball recipe posted separately)
1/2 cup fresh parsley, minced
1 tablespoon sugar
1 teaspoon crushed red pepper flakes
salt (to taste)

Steps:

  • Heat olive oil over medium high heat in a large dutch oven or similar pan.
  • Saute onions in oil for approximately 4 minutes, or until translucent. Add garlic and cook for an additional 30 seconds.
  • Add the tomatoes, pan drippings, parsley, sugar, red pepper flakes. Salt to taste.
  • Simmer for 15 minutes.
  • If you are using meatballs with the sauce, add the cooked meatballs after the 15 minutes and simmer for an additional 10 minutes.

15 plum tomatoes (2 lb.), quartered
4 cloves garlic
1/2 cup fresh basil leaves
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Cook spaghetti as directed on package, omitting salt.
  • Meanwhile, blend all remaining ingredients except cheese in blender until smooth.
  • Drain spaghetti; place in large bowl. Add tomato sauce; mix lightly. Sprinkle with cheese.

A recipe from my Great Aunt's collection. This is one she clipped out of the paper, probably the Chicago Tribune. This contains some unusual ingredients - in particular saffron and ground coriander, and the recipe also calls for steeping a bundle of herbs in the sauce as it cooks. If saffron is too costly, you can substitute dried safflower or just leave it out. Makes 3 cups sauce.

1/3 cup minced fresh onion
2 fresh garlic cloves, minced
2 tablespoons olive oil
2 tablespoons all-purpose flour
3 lbs fresh plum tomatoes, peeled, seeded, chopped
6 sprigs fresh thyme or 1 teaspoon dried thyme
4 sprigs fresh parsley
1/2 bay leaf
1 inch fresh orange rind
1/2 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon black pepper
1/8 teaspoon fennel seed
1 pinch saffron
1 pinch ground coriander

Steps:

  • Saute onion and garlic in olive oil in a large saucepan until tender.
  • Stir in flour until smooth.
  • Add tomatoes.
  • Wrap thyme, parsley, bay leaf, and orange rind in cheesecloth, tie, and add to the pot.
  • Add all remaining ingredients.
  • Heat sauce to a simmer, then drop on the lid and simmer 10 minutes, stirring occasionally.
  • Remove lid and simmer another 25-30 minutes, or until sauce has thickened.
  • Remove the herb bouquet and chill sauce overnight (or freeze for later).
  • Heat again before serving over hot cooked pasta or meats.
