1 cup packed brown sugar
1/2 cup butter or margarine, softened
1 egg
1 teaspoon vanilla
1 cup chunky applesauce
2 cups Gold Medal™ all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 cup raisins
1/2 cup chopped nuts

Steps:

  • Heat oven to 350°F. Grease bottom only of loaf pan, 9x5x3 inches.
  • Beat brown sugar and butter in large bowl with electric mixer on high speed 2 minutes. Beat in egg, vanilla and applesauce. Stir in flour, salt, baking soda, cinnamon and cloves. Stir in raisins and nuts. Pour batter into pan.
  • Bake 1 hour to 1 hour 15 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely, about 1 hour, before slicing.

1 Royal Gala apple - peeled, cored and sliced
1 cup white wine
¼ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
⅓ cup golden raisins

Steps:

  • Melt butter in a skillet over low heat. Add apples, and increase the heat to medium-high. Cook for 5 minutes, stirring occasionally. Stir in the white wine, brown sugar, cinnamon, vanilla, and golden raisins. Cook over medium heat until the liquid has reduced and is thick.

This cake is one of my grandfather's favorites. And it seems like he always knows when you're making it-he must have a keen sense of smell! The recipe was passed down through the generations beginning with my great-grandmother. Sometimes I can imagine her making it all those years ago.

1 cup sugar
1/2 cup shortening
2 tablespoons molasses
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon

1 cup raisins

Steps:

  • In a bowl, cream the sugar and shortening. Beat in molasses until blended; set aside. Sift together flour, baking soda, cinnamon, cloves and salt; add to creamed mixture alternately with applesauce, beating well after each addition. Stir in raisins., Pour into a greased and floured 10-in. tube pan. Bake at 350° until a toothpick comes out clean, about 45 minutes. Cake will not rise to top of pan. After 10 minutes, remove cake from pan and cool on a wire rack.

⅓ cup dark rum
½ cup butter, softened

1-1/2 cups warm water (110° to 115°), divided
1 teaspoon sugar
3 large eggs, room temperature, beaten
1 cup applesauce
1/2 cup honey
1/2 cup canola oil
2 teaspoons salt
8 to 9 cups all-purpose flour
1-1/2 cups diced peeled apples
1-1/2 cups raisins
2 tablespoons lemon juice
2 tablespoons cornmeal
GLAZE:
1 large egg, beaten

Steps:

  • In a small bowl, combine yeast, 1/2 cup water and sugar; set aside. In a large bowl, combine eggs, applesauce, honey, oil, salt and remaining water; mix well. Stir in yeast mixture. Gradually add enough flour to form a soft dough. Knead on a floured surface until smooth and elastic, about 10 minutes. Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down and turn over in bowl. Cover and let rise 30 minutes. In a small bowl, combine the apples, raisins and lemon juice. This is really good, and you'll be amazed at how low in fat and sugar it is! The recipe started as one from Sunset's Light and Healthy cookbook (1990), but I've tweaked it over the years, and I think I could get away with even less sugar. It's moist enough you don't need to spread it with anything -- just slice and enjoy. If you substitute craisins (sweeted dried cranberries), it works nicely for a holiday brunch or snack.
