Steps:
- Preheat oven to 400 degrees F.
- Heat cider or apple juice in the microwave for 1 minute
- Slice butter into pieces and stir into juice until melted
- Slice pears in half and scoop out just the seeds and core
- Place pears in a small baking dish
- Pour cider mixture over pears and sprinkle with cinnamon
- Drizzle maple syrup over top and bake for 30 minutes, basting with juice from the bottom of the pan every 10 minutes
- Serve warm

- Preheat the oven to 450 degrees.
- Peel the pears and cut them in half length-wise. Carefully scoop out the core and seeds from each half.
- In a cast iron or other oven proof skillet, melt the butter over medium heat.
- Place the pears in the skillet, cut side down, and cook them until they are starting to get browned, about 2-3 minutes.
- Transfer the skillet to the oven and bake for 15 minutes. Using a fork, carefully flip pears to cut side up and continue to bake another 10 minutes.
- Remove the pears from the oven and carefully transfer them to a platter.
- Put the skillet back on the stove over low heat, and whisk in the maple syrup with the butter and juices in the skillet.

- Heat oven to 180C/160C fan/gas 4 and grease 3 x 20cm sandwich tins, lining the bases with baking parchment and greasing the parchment too.
- To make the sponge, put the butter and sugars in a large bowl and beat with an electric whisk until light and fluffy, about 5 mins. Add the eggs, a little at a time, beating until fully incorporated before adding more. In another bowl, mix the flour, cornflour, spices and baking powder. Stir in the dry ingredients in 3 additions, alternating with the milk. Divide the batter among the prepared tins, smooth the surfaces and bake for 25-30 mins or until a skewer inserted into the middle of the cakes comes out clean. Allow the cakes to cool in the tins for 10 mins, then turn out onto a wire rack, peeling off the parchment, to cool completely.
- For the caramelised pears, peel, core and dice them into small cubes, tossing with the lemon juice as you go. Tip into a frying pan with the maple syrup and butter, and cook over a medium-high heat until the pears have softened and most of the liquid has evaporated. Set aside to cool.
- For the buttercream, put the egg whites and sugar in a large heatproof bowl (the bowl of your tabletop mixer, if you have one) and place over a pan of gently simmering water. Whisk until the sugar has fully dissolved - you can test this by dipping two fingers into the bowl and rubbing them together; if you can't feel any grains of sugar, the mixture is ready. Remove the bowl from the pan and beat with an electric whisk (or use your tabletop mixer) until a thick meringue has formed. Continue whisking until the meringue has cooled to room temperature.
- Slowly beat in the butter, 1 tbsp at a time. The mixture should now look like a silky- smooth buttercream - if it doesn't, continue to whisk until it does. If it still refuses to thicken, it may be the mixture is still too warm, so chill for 10 mins, then continue whisking. Whisk in the maple syrup last.
- To assemble the cake, place the first sponge on a cake board or serving plate and spread with a thin layer of the buttercream. Top with half of the caramelised pear chunks, discarding any leftover liquid. Repeat, finishing with the third sponge.
- To finish, spread a very thin layer of the buttercream over the sides and top of the cake - this is called 'crumb-coating' (see tip). Now spread a thick layer of buttercream on top of the cake. Put the remaining buttercream in a piping bag fitted with a small petal piping tip (see tip). Hold the piping bag with the wide end of the nozzle touching the side of the cake, at the very bottom. Gently wiggle the bag side to side, back and forth, in a zigzag motion, working up the cake in a strip. Repeat, starting next to the previous strip each time, working all the way around the cake until it's entirely covered. To finish, pipe 1 row of buttercream around the edge of the top of the cake (which will neaten any rough edges at the top of your zigzags). If you like a little sparkle, finish the cake with a coat of edible gold spray. Best served within 2 days of baking, but the cake will keep for up to 4 days.

- Quarter the pears lengthwise, and remove the cores and stem ends. Cut each quarter in half lengthwise. Arrange in a 9 by 9-inch nonstick baking pan.
- Drizzle the syrup over the pears, and sprinkle with a little cinnamon. Scatter the walnuts over the pears.

- Blend flour and baking powder in a bowl. Set aside.
- In an electric mixer at high speed, beat the eggs and maple sugar for about 5 minutes or until the mixture has tripled in volume.
- Reduce the speed. While still mixing, add in half the milk and the orange flower water (if desired), then the flour mixture. Add the rest of the milk. Use a spatula to stir in the pear. Leave to rest 10 minutes at room temperature.
- Heat a large non-stick pan over medium-low. When it's hot, brush with butter.
- For each pancake, pour about 80 ml (1/3 cup) of dough into the pan. (Cook 2 or 3 pancakes at a time, depending on the size of your pan.)
- Cook pancakes about 2 minutes per side. Turn when bubbles appear in the centre or the edges start to brown.
- If not serving pancakes right out of the pan, transfer to a plate and keep warm in a 100° C (200° F) oven.

- Preheat the oven to 375 degrees F.
- In a 13 by 9-inch baking dish, combine the butter, maple syrup, brown sugar, and brandy. Peel the pears, halve lengthwise, and remove the seeds with a melon baller or teaspoon. Add the pears to the baking dish and coat with the maple mixture. Arrange the pears cut-side down, and bake until tender, about 50 minutes, basting occasionally. - Preheat oven to 350 degrees Fahrenheit. Lightly grease a cast iron skillet with coconut oil or avocado oil.
- If desired you can peel your pears. Slice each pear in half vertically through the stem. Use a teaspoon to scoop out the seeds. You can leave the stem on for presentation if desired. Set aside.
- In a small glass whisk together the maple syrup, cinnamon, vanilla and almond extract (if using). Lightly brush all parts of each pear half with this mixture.
- Place the pears cut side down in the greased skillet. Bake for 20 minutes.
- Use tongs to flip the pears so the cut side is facing up. Bake an additional 10 minutes.
- Remove from oven and drizzle any leftover maple glaze overtop the pears. Serve hot or warm overtop vegan vanilla yogurt (I love Culina brand) or alongside vegan vanilla ice cream. Top with chopped homemade candied pecans or homemade cinnamon-vanilla granola. Serve with coconut whipped cream if desired.
- Store leftover baked pear separate from the garnishes. Place the pears in an airtight container once they have fully cooled to room temperature. Refrigerate for up to 4 days. Reheat in the microwave or oven.

- Preheat oven to 375°F (190°C). I don't line my baking sheet when I make these, but you absolutely can with parchment or a silicone baking mat.
- Cut pears in half, then cut a small sliver off the underside so the pears sit flat when placed upright on the baking sheet. See video above for visual. Using a large or medium cookie scoop or melon baller (or even a teaspoon), core out the seeds. Arrange pears, facing up, on the baking sheet. - Put maple syrup in a shallow bowl.
- Cut a thin slice from the bottom of each pear so that the pears will stand upright. Dip and roll each pear in maple syrup to coat completely, reserving remaining syrup. Transfer pears as coated to a 9 inch square baking pan, standing them upright.
