When you need a delicious dinner in a hurry, I've got you covered with these tasty Bistec Ranchero! This recipe for steak & potatoes only has a handful of ingredients and is ready in under 30 minutes.

1 cup vegetable oil
2 medium russet potatoes or 3 smaller potatoes (thinly sliced)
1 lb breakfast steak or any other thin steak (thinly sliced)
1 garlic clove (chopped)
1/2 medium white or yellow onion (thinly sliced)
1 chile Anaheim, jalapeño or serrano peppers (see note 1) (remove seeds for less spicy dish)
3 Roma tomatos
4 oz Tomato sauce
1/2 tsp kosher salt or more to taste
1/4 tsp black ground pepper or more to taste
1 cup water (or more if needed while cooking)

Steps:

  • In a large skillet, add the oil and heat over medium-high heat. Cook the potatoes and spread them on the skillet to cook evenly. Cook for about 5 minutes or until cooked through and golden brown.
  • Remove from the skillet and place in paper towels to drain oil. Season with salt & pepper to taste.
  • In same skillet, remove carefully most of the oil, only leaving about two tablespoons behind.
  • Over medium heat, cook the beef & garlic until the meat is almost all cooked through. About 4 minutes.
  • Add the onions and peppers and cook until onions start to soften. About 2 minutes. If this mixture is starting to dry, add about 1 cup of water.
  • Add the tomatoes, tomato sauce, 1/2 teaspoon kosher salt and 1/4 teaspoon ground black pepper. Cook for 2 minutes.
  • Once the tomatoes are soft, add the potatoes and mix well. Cover the skillet with a lid and simmer on low heat for about 5 minutes to blend all of the flavors together.
  • Taste and add salt & pepper to see if it needs more.

Steak ranchero is perfect for a quick and easy weeknight meal. You can make this dish with fresh or canned tomatoes, so it's versatile and convenient. You can also adjust the spices to make it as hot as you like. Serve this delicious Mexican-inspired dish over rice or tortillas for a hearty and satisfying meal.

2 pounds flank steak
1 tablespoon ground cumin
1 tablespoon brown sugar
2 teaspoons ancho chili powder
1-1/2 teaspoons salt
1 teaspoon ground oregano
1 teaspoon ground black pepper
2 large onions, roughly chopped
3 garlic cloves, chopped
2 jalapeno peppers, seeds removed and diced
1 to 2 diced, canned chipotle peppers (not the whole can)
1 tablespoon Adobo sauce from the canned chipotle
1 cup white wine or chicken broth
4 to 5 large tomatoes, cut into large chunks (about 1 pound) or sub with canned tomatoes

Steps:

  • Slice the flank steak into thin strips across the grain.
  • Combine the cumin, sugar, salt, oregano, chili powder, and pepper in a small bowl.
  • Toss the steak strips with the spices until they get completely coated. Let the steak sit for at least 20 minutes or place in the fridge overnight.
  • Heat some oil in a large skillet over medium high heat until it gets smoking hot. When the oil is hot, work in batches to cook the steak strips. Add the steak strips in a single layer and let them sear for 1 to 2 minutes without moving them. When they get a caramelized brown color, give them a stir then transfer to a plate. Repeat with the rest of the steak strips then transfer them to a plate. You don't need to cook the steak all the way, just get it browned. The steak strips will cook more later in the recipe.
  • Don't clean the skillet out. The pieces left behind from cooking the steak will loosen up when you cook the vegetables.
  • Add the onions to the hot skillet and cook, stirring frequently until softened. Add garlic, jalapeño peppers, chipotle, and adobo sauce. Cook for 1 to 2 minutes stirring, until the peppers and garlic are fragrant.
  • Pour in the wine or broth to deglaze the pan. Scrape up any cooked-on bits from the bottom of the skillet.
  • Return the steak strips to the skillet and add the tomatoes. Give everything a stir and reduce the heat to medium. Cover with a lid and simmer for 15 to 25 minutes until the steak gets tender and the tomatoes break down into a juicy sauce.
  • Remove the lid and simmer for 5 minutes to reduce the sauce.
  • Serve with rice or roasted potatoes.

This is one of many favorites of my family... my husband and kids love it. A mexican traditional recipe that came from our parents. Everyone has their own, some are hot, mild and others normal (no heat).. Its optional to all tastes!! Quick and easy! Enjoy

1 lb beef steak
1 large white onion
1 large tomatoe
1 medium jalapeno pepper
1 medium yellow pepper
1 can(s) tomatoe sauce
2 pinch salt and pepper
1 pinch garlic salt
1 Tbsp chicken bouillon
4 small potatoes (original recipe i had posted had no potatoes i just added this today)

Steps:

  • 1. Chop meat into medium cubes or strips, Dice tomatoes, onions (onions can be in slices) Cut chile Jalapeño into rounds and the yellow chiles.
  • 2. Add meat to pan in a little oil, stir and wait until meat is no longer pink. After meat is a lil brown add the vegetables ( Onion, tomatoes, and chiles) Add Salt, pepper and garlic salt (to taste)Add Chicken boullion, Add Can of tomatoe sauce and 1/2 cup of water. Cover and let it zimmer for 20 minutes stirring occasionally.
  • 3. You can aslo use Green, red and yellow peppers for a milder taste. You can serve this with steamed white rice, and refried beans
  • 4. There are many ways to make this, I opt for the easy way, since I have not much time to be in the kitchen.

Bistek is steak, but one transformed by its encounter with soy sauce and citrus. My addition is browned butter, an ingredient not so common in Southeast Asian cooking. This was one of my lola's signature dishes: She'd cut the onions half-an-inch thick, sear them briefly, then add a little water to make the pan flare up, so they'd get extra crisp. She would always plate it in a casserole dish, with enough pan sauce to sop up with rice. The beef fat should coat your lips, and then the citrus cuts through it. It's worth investing in good olive oil; every ingredient matters, because there are so few, and you can taste them all.

Number Of Ingredients 10

2 (1-inch-thick) rib-eye steaks (about 1 1/2 pounds)
4 tablespoons good-quality olive oil
10 fresh bay leaves
8 garlic cloves, each clove smashed into 3 to 4 pieces
1 large white onion, peeled and sliced crosswise into 3/4-inch-thick rounds
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1/2 cup fresh lemon juice (from 2 to 3 whole lemons)
3 tablespoons fresh orange juice (from 1/2 orange)
1/4 cup soy sauce

Steps:

  • Prepare the steaks: Trim and discard any excess fat to your liking. Halve each steak horizontally into two thin steaks, then cut each into 5 or 6 pieces. You want the pieces to be nonuniform, roughly chopped rectangles and triangles. The important thing is that they're all an even thickness. Set aside.
  • In a large, lidded skillet, heat 2 tablespoons olive oil over medium. Add the bay leaves, pressing to flatten, and cook until toasted at edges, turning halfway through, 30 seconds to 1 minute. Transfer bay leaves to a plate. Add the smashed garlic cloves and sear over medium-high, flipping frequently, until golden on both sides, 1 to 2 minutes. Transfer to the plate with the bay leaves.
  • Add the onion rounds, keeping them intact, season with salt, and cook, undisturbed, just until the onions start just begin to lightly brown underneath, about 2 minutes. Flip rounds, add 2 tablespoons water, cover with lid and quickly steam, 2 minutes. Remove lid and cook until onions are crisp-tender and liquid is almost evaporated, about 2 minutes. Transfer onions to plate.
  • Add the remaining 2 tablespoons olive oil to the skillet and heat over medium-high until ripping hot. Season beef all over with salt and pepper. Working quickly and in batches to avoid crowding, sear beef until caramelized and golden brown (like mini steaks!) but not fully cooked through, 1 to 2 minutes per side for medium or medium-rare. Transfer to a platter and repeat with remaining meat. Arrange meat in an even layer on the platter.
  • Add the butter to the skillet and cook over medium-high, swirling the pan, until browned, 1 to 2 minutes. Add the lemon juice, orange juice and soy sauce and cook, stirring frequently, until glossy and slightly looser than maple syrup, 2 to 3 minutes.
  • Drizzle pan sauce over steak. Top with onions and garlic and tuck bay leaves into dish. Serve immediately.
