Make-It-Your-Own Udon Noodle Soup image

This incredibly easy soup, which was developed for a special kids edition of The Times, is just the thing to warm you from fingertips to toes on a chilly day. It starts with a simple garlic-ginger broth, to which you add pretty much any vegetable, tofu or cooked meat that you like (meatballs are fun). Just be sure to slice any firm vegetables thinly, so they can cook quickly. Toss a tangle of cooked noodles in to the broth, and add a frenzy of toppings - halved hard-boiled eggs, roasted peanuts, sliced scallions, sprouts, nori (a type of seaweed), a drizzle of sriracha - whatever excites you. As for noodles, we like udon, because they're delightfully soft and chewy, but you can also use spaghetti, bucatini or even ramen. (Fun fact: Udon dough is traditionally kneaded with your feet.)

Number Of Ingredients 9

5 ounces dried udon (2/3 of an 8-ounce package) or 2 7-ounce packages fresh or frozen noodles (spaghetti or bucatini also work)
1 teaspoon sesame, olive, vegetable or canola oil
1 tablespoon olive oil
Fresh ginger, about 1-inch, peeled and finely minced, or grated on the smallest holes of a box grater
2 to 4 garlic cloves, peeled and finely minced, or grated on the smallest holes of a box grater
3 cups low-sodium vegetable or chicken broth
2 cups, total, fresh or frozen vegetables, like thinly sliced carrots, bok choy, mushrooms, snow or snap peas, green beans, baby corn, corn kernels, peas, edamame, fresh spinach
1/2 cup cubed firm tofu, precooked chicken, pork or beef (optional)
1 tablespoon white miso paste or 3 to 4 tablespoons soy sauce, plus more soy sauce as needed

Steps:

  • Prepare noodles according to package directions, and drain. Toss with a teaspoon of sesame, olive, vegetable or canola oil to prevent them from sticking together, and set aside.
  • In a medium saucepan over medium heat, heat 1 tablespoon of olive oil until it shimmers, and sauté the grated ginger and garlic until you smell it (less than a minute). Do your best not to burn it. Add 2 cups of stock to the pot. Be careful - it might splatter.
  • Bring the stock to a boil, and lower the heat to a simmer (about medium-low). Add carrots (or any hard, root vegetables, if using), and cook until they are crisp-tender, about 1 to 2 minutes. Add tofu or any vegetables (except spinach), and cook until tender but still bright in color, about 1 to 2 minutes. Turn off heat, and cover to keep warm.
  • In a small pot, heat the remaining 1 cup of stock until it steams. Remove from the heat, and whisk in the miso paste until the miso is completely dissolved, then pour the entire miso mixture into the pot with the soup. (If using soy sauce instead of miso, skip this part and add the rest of the stock and soy sauce.) Stir in the cooked noodles and fresh spinach, if using, and heat through over medium-low, if necessary. Do not bring the soup to a boil with the miso: Some cooks believe this can ruin the miso's delicate flavor. Top as desired and season additionally, if desired, with soy sauce.

Nabeyaki Udon Soup with Chicken, Spinach, and Mushrooms image

This udon soup is a simple weeknight dinner that comes together quickly and features a few classic Japanese ingredients.

1/2 cup dried sardines (about 1 ounce), or 1 (5") piece dried kombu
5 ounces mature spinach (about 3/4 bunch), trimmed
3/4 teaspoon kosher salt, plus more
1/2 cup snow peas
2 boneless, skinless chicken thighs (about 8 ounces), cut into 1" pieces
7 ounces thinly sliced shiitake, shimeji, or enoki mushrooms, roots trimmed
2 (1/2-ounce) pieces fried tofu (aburaage), cut into 1/4" slices (optional)
3 tablespoons soy sauce
1 teaspoon mirin
8 ounces udon noodles
1/2 cup sliced scallions
1 1/2 ounces Japanese fish cake, thinly sliced (optional)
2 large eggs

Steps:

  • Place sardines or kombu in a large Dutch oven or donabe, fill with 6 cups water, and set aside at least 15 minutes or up to 1 hour.
  • Meanwhile, cook spinach in a medium pot of boiling salted water until just cooked through, about 1 minute. Using a slotted spoon, transfer to paper towels. Gently squeeze water from spinach, then transfer to a cutting board and cut into 2" slices. Transfer to a plate. Return liquid to a boil, add snow peas, and cook until just cooked through, about 1 minute. Drain and transfer to plate with spinach. Wipe out pot and reserve.
  • Bring sardine liquid to a simmer over medium-high heat. Using slotted spoon, discard sardines, then reduce heat to medium. Add chicken and simmer until cooked through, about 5 minutes. Add mushrooms, tofu (if using), soy sauce, mirin, and remaining 3/4 tsp. salt. Cook, stirring, until mushrooms are tender, 3-5 minutes.
  • Meanwhile, cook udon in reserved pot 2 minutes less than package directions.
  • Bring chicken mixture to a simmer. Drain noodles and add immediately to pot. Add spinach, snow peas, scallions, and fish cake (if using), arranging each into sections and leaving an opening for egg.
  • Gently beat eggs in a small bowl with a whisk or chopsticks. Pour into broth and cook until just set, about 2 minutes.
  • Serve soup immediately in pot tableside, portioning into individual bowls.

Chicken, seafood, glass noodles, and vegetables get briefly poached in dashi-based broth. Cutting the ingredients into uniform pieces ensures they cook in the same amount of time.

1 ounce bean thread noodles, soaked in water 15 minutes
4 cups Dashi
1/2 cup mirin
1/2 cup light soy sauce (usukuchi)
4 scallions, 2 thinly sliced on a steep diagonal, 2 sliced 2 inches thick
1/4 head of Napa cabbage, sliced into 2-inch pieces
4 littleneck clams
4 jumbo shrimp, preferably head-on
1 (6-ounce) red snapper or black bass fillet, sliced crosswise 3/4 inch thick
1 large skinless, boneless chicken thigh, cut into 1-inch pieces
6 ounces firm tofu, sliced 1/2 inch thick
4 ounces oyster mushrooms, torn into bite-size pieces
3 ounces enoki mushrooms
1 small carrot, peeled, halved crosswise, thinly sliced lengthwise

Steps:

  • Place noodles in a large bowl and add cold water to cover; let soak 15 minutes. Drain.
  • Meanwhile, combine dashi, mirin, and soy sauce in a medium bowl.
  • Place thinly sliced scallions in a small bowl and add cold water to cover. Soak until they begin to curl, 8-10 minutes. Drain; squeeze to remove excess water.
  • Lay cabbage in a large donabe or Dutch oven. Arrange clams, shrimp, snapper, chicken, tofu, mushrooms, carrot, 2" scallion pieces, and noodles on top; add dashi mixture.
  • Cover donabe and heat over medium-high until liquid is just simmering. Uncover, reduce heat to low, and gently simmer until clams open and chicken and fish are cooked through, 5-8 minutes.
  • Serve topped with drained scallions.
