BROCCOLI AND CHEDDAR STRATA
Reinvent leftover hot dog buns by turning them into this cheesy broccoli strata.

Steps:
- Butter a 9-by-13-inch baking dish.
- Whisk the half-and-half, Parmesan, eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
- Bring a medium pot of salted water to a boil. Add the broccoli florets and simmer until crisp-tender, 3 to 4 minutes; drain.
- Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Cheddar, followed by the broccoli. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
- On the day of baking, preheat the oven to 325 degrees F.
- Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Cheddar. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.
SPINACH, MUSHROOM AND CHEESE BREAKFAST CASSEROLE
This hearty meatless breakfast casserole is a great way to use up stale bread. The cubes on top bake into a delicious crunchy crust that just might be the best part! The whole thing can be assembled the night before and popped into the oven in the morning.

- Grease a 9-by-13-inch (3-quart) casserole dish with oil.
- Toss the bread cubes with 2 tablespoons of the oil, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Heat a large skillet over medium heat. Add the bread to the skillet, and cook, tossing occasionally, until toasted and golden brown, about 8 minutes. Return the toasted bread to the bowl to cool.
- Wipe out the skillet. Heat the remaining 2 tablespoons oil over medium-high heat until it starts to shimmer. Add the mushrooms in one layer (resist the urge to stir right away), and cook until they start to brown, about 3 minutes; stir, then continue to brown for 2 minutes more. Add the garlic, thyme, 1/4 teaspoon salt and some pepper, stir continuously for 1 minute, then fold in the spinach and another 1/4 teaspoon salt. Continue to cook, stirring often, until the spinach is wilted, 1 to 2 minutes. Remove from the heat.
- Place half the bread cubes in the prepared casserole dish, and sprinkle them with half each of the Gruyere and Parmesan. Add the mushroom-spinach mixture in an even layer. Top with the remaining bread cubes, Gruyere and Parmesan.
- In a large bowl, whisk together the eggs, half-and-half, 1/2 teaspoon salt and several grinds of pepper. Pour the egg mixture into the casserole dish. Cover with plastic wrap, and refrigerate for at least 6 hours up to overnight. Remove the casserole from the refrigerator 30 minutes before baking.
- Preheat the oven to 350 degrees F. Bake the casserole until the custard is set and the top is golden brown, 50 to 55 minutes. Cool for at least 15 minutes before serving warm or at room temperature.
BROCCOLI CHEESE STRATA

- In a small microwave-safe dish, microwave broccoli and onions in water on high for 1 minute; drain and set aside. Place bread in a shallow 3-cup baking dish coated with cooking spray. Add broccoli mixture and cheese. , In a small bowl, combine the eggs, milk, mustard, dill, nutmeg and pepper; pour over cheese. Steps:
- Heat 2 tsp oil in nonstick skillet over meduim heat.
- Add onions and saute until translucent, about 4 minutes.
- Add garlic and cook another 1 minute.
- Transfer onion mixture to a medium bowl and let cool.
- Heat remaining 2 tsp oil in the skillet and saute mushrooms until the release all their water, about 6-7 minutes. Remove from heat and cool completely.
- Spray an oval baking dish with cooking spray.
- Arrange bread cubes in the dish.
- In a large bowl, beat eggs, egg whites, milk and mustard until incporporated.
- Add mushrooms, onion-garlic mixture, broccoli, parmesan and mozzarella cheeses, sun-dried tomatoes, thyme, salt and pepper and stir to incorporate.
- Pour mixture over bread, making sure to saturate bread.
- Cover with plastic wrap and refrigerate overnight or at least 8 hours.
- Preheat oven to 350 degrees F.
- Remove plastic wrap and bake for 55-60 minutes or until center is set.

- Layer bread, broccoli, and 1/2 of cheese in a buttered 9 x 13 baking dish.
- Combine eggs, milk, mustard, spice, and salt; pour over the strata.
- Refrigerate, covered, several hours or overnight.
- Preheat the oven, and sprinkle the strata with paprika.
- Bake, uncovered, for 35 minutes.
- Add remaining cheese to the top; bake until a knife inserted into the center comes out clean (about 10-15 minutes).
- Allow to set for 10-15 minutes before serving.

- Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Melt butter in large nonstick skillet over medium-high heat. Add mushrooms and sauté until tender, about 8 minutes. Season to taste with salt and pepper. Cool.
- Combine bread and milk in large bowl. Let stand until milk is absorbed, about 15 minutes.
- Whisk half and half and next 6 ingredients in medium bowl to blend. Stir in goat cheese.
- Place half of bread mixture in single layer in prepared glass baking dish (bread will not cover bottom of baking dish). Top with half each of mushrooms, Parmesan cheese, Fontina cheese, and half and half mixture. Repeat layering with remaining bread, mushrooms, Parmesan and Fontina cheeses, and half and half mixture. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Bake strata uncovered until firm in center, puffed and golden, about 1 hour.

- Preheat oven to 325 degrees F.
- In a large skillet cook onion and garlic in hot margarine or butter over medium heat for 2 minutes.
- Add mushrooms and cook about 3 minutes more or until tender, stirring occasionally.
- Remove from heat.
- In a small mixing bowl combine the mozzarella, fontina, and herbs; toss to mix.
- In a greased 2-quart square baking dish place half of the bread cubes.
- Top with the mushroom mixture, cheese mixture, and prosciutto or Canadian-style bacon.
- Top with the remaining bread cubes.
- In a mixing bowl combine beaten eggs or egg product, milk, sour cream, mustard, and pepper.
- Pour over layers in dish.
- Cover and chill in the refrigerator for 2 to 24 hours.
- Bake, uncovered, for 55 to 60 minutes or until a knife inserted near the center comes out clean.
- Let stand 10 minutes.
- To serve, cut into squares; garnish with fresh thyme sprigs.

Add tomatoes and another pinch of salt and sauté for 3 more minutes. Place vegetables in a strainer to drain liquid.
- In a large mixing bowl, whisk together eggs, milk, yogurt, cream cheese, Dijon, salt, and pepper. Stir in 1 cup of cheese. Add bread cubes and veggies and toss to combine. If mixture is dry, add a splash more milk.
