TEXAS CARNE ASADA SEASONING RECIPE (DRY RUB)
This Carne Asada Seasoning is a great spice blend for steak tacos made with all cuts of beef. Limiting the amount of moisture a traditional marinade provides, gives the meat excellent searing capabilities which is preferred by many Texas taco joints and their customers.

- Combine all of the measured spices into a mason jar or a plastic bag and shake well. This seasoning blend can be used on beef hours before you sear the meat (for more flavor), or during the searing as an excellent substitute for salt or bottled carne asada or fajita seasoning. If you prefer to make this a wet recipe, add the juice of 2 limes and marinate for several hours. Cook as usual.
GRILLED CARNE ASADA FOR TACOS
Carne asada means "grilled meat," which in turn can mean a lot. But skirt steak is what you most often see made into carne asada (and in some supermarkets, skirt steak is called carne asada). Because of its high fat content, it's perfect for tacos. Rub it with a few spices, grill it for a few minutes and pile it into tortillas with a couple of other ingredients. Dinner in a flash.

- Start a charcoal or gas grill. Crush garlic and rub steak with it. Combine remaining ingredients and rub into steak. Let steak sit until you're ready to grill.
- Grill steak 3 to 4 minutes per side for medium-rare. Cut into slices and use as soon as possible (hot is best, but warm or room temperature is fine).

From time to time I receive e-mails asking some common questions for an Authentic Carne Asada recipe, the first one being how to marinate the meat. I always give out the same answer: every cook or grill master has their own unique way of seasoning their meat. I hope you enjoy this delicious recipe.

- Place the flank steak in a large baking dish and, if using the sliced onion, spread the slices over the meat.
- In a medium-sized bowl mix together the orange juice, lime juice, light beer, Kikkoman soy sauce, vegetable oil, and freshly ground black pepper.
- Pour the marinade over the meat; cover with a plastic film and refrigerate for at least one hour.
- Light up your charcoal grill, or preheat your gas grill. (You can also use a cast iron grill pan, the ones you use over the stove top). And brush your grill with a little vegetable oil as this will prevent the meat from sticking.
- Remove meat from marinade and pat dry. Place meat on the grill and cook for 8 to 10 minutes per side. (Cooking time will depend on the meat thickness and your personal preferences, either medium or well done). Remove meat from grill and place it on your cutting board. Slice it and serve it with corn tortillas and other garnishes mentioned above.
- If you would like to have the same effect as that of the Mexican-American restaurant, place the cooked meat on a preheated cast iron pan, add a few drops of Soy Sauce and serve immediately. Enjoy!

- To a small plastic bag (or sealable container), add Spice Mix and whisk to combine. Set aside.
- Add Marinade Ingredients to a large freezer bag and whisk to combine. Add 3 tablespoons Spice Mix to Marinade and whisk to combine. Add steak and seal bag, removing excess air. Marinate in the refrigerator 4-12 hours.
- When ready to grill, mix remaining Spice Mix with 2 tablespoons olive oil to create a Spice Rub.
- Discard marinade and pat steaks dry with paper towel (just so steak is not wet, not to remove marinade/spices). Rub steak evenly all over with Spice Rub and let rest at room temperature for 30-60 minutes.
- Grease and preheat outdoor grill to medium-high heat. Grill steak for 5-6 minutes per side, or until an internal thermometer reads 130-135 degrees F for medium rare or around 140 degrees for medium. Grill time will vary depending on thickness of your steak and desired level of doneness.. *If you like your steaks rare then use HIGH heat so you can get the charred outside in less time.
- Remove steak and let rest 10 minutes before thinly slicing against the grain on a diagonal.
CARNE ASADA
The spices found in the achiote rojo has a very complex and have a deep flavor. Avoid the urge to taste it before diluting it. You will most definitely get the wrong impression of this Mayan mix. If you have trouble finding achiote rojo in your regular market, try a store that caters to the local Hispanics. I direct grill this recipe with a mix of regular charcoal and mesquite charcoal. But it's your choice... you're the chef! Prep time does not include time to marinade.

- Break up achiote rojo into a powder, or as best you can as it is a little moist.
- Mix remaining ingredients except meat into the achiote rojo. Mix well to break up any large pieces of the achiote.
- Place meat in a container or your choice to marinade in and pour the achiote rojo mixture on and work it into the meat.
- Cover and marinade for as long as possible. Time DOES NOT indicate marinade time.
- Get the grill going, pop a beer and get busy. Remember, the wood charcoal is very hot. I get it so my hand can stand the heat test for 2-3 seconds. Closer to 2 seconds, though.
- Put the meat on the grill. Let the meat get good and charred then turn over. Grill for a few minutes and the meat is almost done. At this point make a foil sack to put the meat in . Push the coals away from one side of the grill, put meat in foil sack so that all the meat is covered. Then just put the meat sack on the side where no coals are. They will finish cooking in their own juices.
- When done let the meat rest a few minutes. Cut on a bias and roll 'em up in tortillas and salsa of choice.

CARNE ASADA 101: EVERYTHING YOU NEED TO KNOW

- Heat a skillet with 2 tablespoons of oil over medium high heat. Add garlic and ancho chili to the skillet. Cook, stirring often, until fragrant and garlic is lightly browned, 3 to 4 minutes. Remove from heat and let cool 5 minutes.
- In the bowl of a food processor, combine oil mixture, cumin, 1/2 cup cilantro, lime, oregano, salt, and agave in a blender. Process until smooth, about 30 seconds.
- Place skirt steak in a resealable plastic bag and pour marinade over skirt steak. Seal bag and shake until evenly coated. Chill 2 hours.
- Heat grill to high heat, between 450°F - 500°F. Grill the steaks for 3-4 minutes on each side. The steaks will cook to medium-rare. Cut into slices against the grain and serve.

- In a medium bowl, combine marinade ingredients: soy sauce, apple cider vinegar, lime juice, cilantro, garlic, jalapeno, cumin, chili powder and pepper. Whisk well.
- Place steak in a large flat dish with side - I love using Pyrex glass baking dish with a lid.
- Pour marinade on top and toss steak gently to coat an all sides.
- Cover and refrigerate for 4 - 24 hours. I tried both and both times we had flavorful steak. Of course, longer marinating, more flavor. Don't exceed 24 hours.
- Preheat grill to 500 degrees F or medium-high heat.
- Grill covered for 5 minutes per side for medium rare, longer for more done. Play it by ear and grill like you would steak. Because skirt steak is quite thin, inserting meat thermometer in it while on the grill isn't the best method to check for level of doneness, I found. Instead I like to cut with a knife right on the grill or on the plate.
- To grill indoors, use well seasoned cast iron grill pan.
- Let meat rest covered with foil for 5 minutes to allow juices settle.
- Thinly slice and serve in carne asada tacos with avocado corn salad, Instant Pot rice and beans, or healthy mashed potatoes. Why not!? :)
