Cured Buffalo Sirloin Roast With Mushroom Jus image

Lean sirloin roast should be cooked rare so it stays tender; the mushroom jus helps keep the meat moist. The roast must cure overnight, which will also keep it juicy. Rewarm the sliced leftovers in the jus and serve them on kaiser rolls. Mushroom Jus: MAKES ABOUT 4 CUPS Roast makes 8 servings with leftovers.

6 cups water
6 large garlic cloves, crushed
2 tablespoons kosher salt
2 tablespoons sugar
1 tablespoon allspice berry
4 bay leaves
4 1/2 lbs sirloin tip buffalo roast
salt & freshly ground black pepper, to taste
3 tablespoons vegetable oil
1 ounce dried shiitake mushroom
4 cups hot water
1 tablespoon olive oil
1/4 cup soy sauce
2 large garlic cloves, crushed
salt & freshly ground black pepper

Steps:

  • Directions for Roast:.
  • In a large saucepan, combine the water, garlic, salt, sugar, allspice and bay leaves.
  • Bring to a boil and cook for 2 minutes, then let the brine cool to room temperature.
  • In a very large bowl, cover the buffalo roast with the brine and refrigerate overnight.
  • Preheat the oven to 325°.
  • Pat the buffalo roast dry with paper towels.
  • Season with salt and pepper.
  • In a large skillet, heat the oil until almost smoking.
  • Add the roast, widest side down, and brown over high heat, about 4 minutes.
  • Continue cooking, turning, until browned all over, about 10 more minutes.
  • Transfer to a large roasting pan and cook for about 1 1/2 hours, or until an instant-read thermometer registers 120° for very rare.
  • Let the roast rest for 20 minutes.
  • Cut the roast in half across the grain.
  • Thinly slice each half across the grain. Arrange the slices on plates and serve with the Mushroom Jus.
  • Directions for Mushroom Jus:.
  • MAKES ABOUT 4 CUPS.
  • Put the shiitakes in a bowl and add the hot water.
  • Cover and let stand until softened, about 20 minutes.
  • Using a slotted spoon, remove the mushrooms from the water and cut off and discard the stems.
  • Swish the mushrooms in the soaking water to loosen any grit.
  • Finely chop the mushrooms; reserve the soaking liquid.
  • Heat the oil in a saucepan.
  • Add the mushrooms and cook over high heat until starting to brown, about 3 minutes.
  • Add 2 tablespoons of the soy sauce and the garlic and cook over high heat until the soy sauce evaporates and the mushrooms brown, about 5 minutes.
  • Pour in the reserved soaking liquid, stopping when you reach the grit, and the remaining 2 tablespoons of soy sauce and stir well.
  • Cover and simmer over low heat until the mushrooms are tender, about 5 minutes.
  • Season with salt and pepper.
  • MAKE AHEAD The jus can be refrigerated overnight.
  • Rewarm before serving.

1 sirloin tip roast (5 to 8 lbs.)
1 cup water
1/2 cup red wine
6 garlic cloves
3 bay leaves
4 tablespoons au jus mix
Dijon mustard
minced onions or onion powder
granulated garlic powder
basil
rosemary (crushed)
tarragon
salt
ground black pepper
100% extra virgin olive oil

Steps:

  • Place roast in the refrigerator a couple of days ahead of time.
  • Set the roast at room temperature for 1 hour prior to cooking.
  • Thoroughly rinse the roast& pat dry with paper towel.
  • Generously salt& pepper the roast on all sides.
  • Cover the bottom of a roasting pan with olive oil& set on medium-high heat about 4 minutes until very hot.
  • Wearing a long sleeve shirt& oven gloves (so that you do not get splashed with hot oil), place roast into hot roasting pan& sear on all sides until nicely browned& about 1/2 cup of fat has rendered, which should take a total of about 6 to 8 minutes.
  • Set a wire rack in another roasting pan,& then set the roast onto the rack.
  • Pour water over the roast, making sure that it covers the bottom of the roasting pan,& then pour the wine over the roast.
  • Cut the 6 cloves of garlic in half lengthwise& with a small knife cut small slits into the top of the roast& insert the garlic clove halves into the roast.
  • Generously brush roast with Dijon mustard.
  • Generously season again with salt& pepper,& then generously sprinkle the rest of the seasonings, including the au jus mix, evenly.
  • Place roast, uncovered, in the middle of the oven that has been pre-heated to 325 degrees for 2 1/2 to 3 1/2 hours or until roast is almost done.
  • If you desire it to be medium-rare, remove from oven when it is rare.
  • If you desire it to be medium, remove from oven when it is medium-rare.
  • After removing from oven, tent with aluminum foil.
  • Allow to stand for 20 to 30 minutes to allow the juices to redistribute themselves evenly throughout the roast,& for the roast to complete its cooking to your desired doneness.
  • Set the roast onto a cutting board& carve immediately& serve.
  • Place all of the juices, including the 1/2 cup rendered from the initial searing process, into a gravy boat to serve as the au jus.

3 garlic cloves , finely chopped
2 tbsp thyme leaves
2 tbsp olive oil
1.5-2kg/3lb 5oz-4lb 8oz piece rolled sirloin of beef
1 garlic clove
1 bay leaf
few thyme sprigs
75ml port
350ml red wine
200ml beef stock (if you'd rather make your gravy alcohol-free, simply double the quantity of stock)

Steps:

  • For the beef, mix the garlic, thyme and olive oil with some black pepper. Rub over the beef and leave for at least 1 hr, the longer the better. Heat oven to 200C/180C fan/gas 6, season the beef with salt and place in a roasting tin. Roast in the oven for 30 mins, then turn the heat down to 180C/160C fan/gas 4 and cook for 10-15 mins per 450g depending on how you like your meat - 10 mins per 450g will give you rare meat and 15 mins will give you meat that is cooked through.
  • When the beef is cooked, take it out of the roasting tin and allow it to rest somewhere warm, loosely wrapped in foil, for 30 mins. Pour off and reserve any resting juices.
  • To make the gravy, place the roasting tin on a high heat with the garlic, bay and thyme. Splash in the Port, scrape with a wooden spoon to loosen any debris from the tin and bubble until almost completely reduced. Pour in the red wine and reduce by three-quarters before adding the stock. Bring to the boil and season to taste. Pour reserved resting juices back into the tin. Finally, pour the gravy through a sieve into a warm jug. Carve the meat and serve with the gravy.

Gary Rhodes' delicious, succulent roast beef dish is perfect for a Boxing Day lunch or an alternative Christmas Day roast. And it only calls for four ingredients!

2 tbsp vegetable oil or beef fat
1-1.5kg/2lb 4-3lb 5oz sirloin of beef joint
1 glass red wine
400g can beef consommé

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Heat the oil or fat in a large fl ameproof roasting tin in the oven for 5-10 mins. Season the beef all over.
  • Place the joint fat-side down in the roasting tin and put it on the hob. Sizzle to release some of the fat, then turn the beef in the fat to seal and colour it all over, about 5 mins. The joint can now be roasted, fat-side up, allowing 10-15 mins per 450g for medium-rare, 15-20 mins per 450g for medium, 20-25 mins for medium-well and 25-30 mins for well done. Turn the joint halfway through its cooking time for an even roast. Once roasted, remove the beef from the pan and leave to one side, loosely covered with foil, to rest for 15-20 mins.
  • Meanwhile, pour off any excess fat from the roasting tin, then put the tin on a medium heat on top of the stove. Once it begins to sizzle, pour in the red wine, allowing it to boil rapidly until almost completely evaporated. Tip in the consommé and allow to simmer for 4-5 mins. This will give a light sauce, rather than a gravy (see tip, below). Simmer for a few more mins before straining through a sieve for the smoothest of fi nishes. Carve the beef into thick slices, offering the gravy separately.

1 (3 pound) sirloin tip roast
4 (8 ounce) cans mushroom stems and pieces, drained
1 cup beef broth
1 envelope onion soup mix
3 tablespoons cornstarch
¼ cup beef broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat vegetable oil in a Dutch oven or heavy pot over medium-high heat; fry roast in hot oil until browned on both sides, about 10 minutes. Pour mushrooms and 1 cup beef broth over roast. Sprinkle with onion soup mix.
  • Bake in preheated oven to your desired degree of doneness, or an internal temperature of 145 degrees F (65 degrees C) for medium, about 90 minutes. Remove roast from Dutch oven to a platter, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 10 to 15 minutes before slicing.
  • Whisk cornstarch and remaining 1/4 cup beef broth in a bowl and stir into Dutch oven with mushrooms and pan drippings. Bring to a boil over medium-high heat; cook and stir until thickened, about 2 minutes. Serve over sliced beef.
