RASPBERRY LEMON LOAF

Number Of Ingredients 11

1-3/4 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
2 large egg whites, room temperature
1 cup lemon yogurt
1/4 cup canola oil
2 teaspoons grated lemon zest
1 cup fresh raspberries

Steps:

  • In a large bowl, combine the dry ingredients. In another bowl, whisk together the egg, egg whites, yogurt, oil and lemon zest. Add to the dry ingredients just until moistened. Fold in the raspberries., Transfer to an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

A marvelous hybrid of coffee cake and banana bread, that's this moist loaf with its nutty cinnamon-brown-sugar-pecan-streusel topping.

Number Of Ingredients 15

6 tablespoons unsalted butter, room temperature, plus more for pan
3/4 cup unbleached all-purpose flour
1/3 cup packed light-brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/2 cup chopped pecans
1 1/2 cups unbleached all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 stick unsalted butter, melted
1 cup granulated sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
1/3 cup buttermilk
3 very ripe bananas, mashed until smooth (1 cup)

Steps:

  • Preheat oven to 350 degrees with a rack in lower third. Butter a 9-by-5-inch loaf pan; line with parchment, leaving a 1-inch overhang on long sides. In a bowl, combine flour, brown sugar, cinnamon, and salt. Stir in butter and pecans until small clumps form and mixture is evenly moistened. (Streusel can be made ahead and refrigerated, covered, up to 3 days.)
  • In a large bowl, whisk together flour, baking soda, and salt. In another bowl, whisk together butter, granulated sugar, eggs, vanilla, and buttermilk; stir in bananas. Make a well in flour mixture and pour banana mixture in. Stir together until just combined (do not overmix). Spoon half of batter into prepared pan. Sprinkle half of streusel evenly over batter. Add remaining batter, then sprinkle remaining streusel evenly over top.
  • Bake until golden brown and a tester inserted in center comes out clean, about 1 hour, 20 minutes. (If top is browning too quickly, tent with foil.) Let cool in pan 20 minutes, then transfer using parchment to a wire rack. Let cool completely before serving.

OLD-FASHIONED LEMON BREAD

This is a wonderful bread that goes very well with tea. I like this recipe over other lemon bread recipes I've found because the glaze is allowed to saturate the bread all the way through.

1 1/2 cups flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/2 cup milk
1/2 cup salad oil
1 1/2 teaspoons grated lemons, rind of
4 1/2 tablespoons lemon juice
1/3 cup sugar

Steps:

  • Grease and flour-dust a 4 1/2 by 8 1/2-inch loaf pan; preheat oven to 350°.
  • In a large bowl, stir together flour, sugar, baking powder, and salt; in a small bowl, beat eggs with milk, oil and lemon peel.
  • Add egg mixture to flour mixture; stir just until blended and spread batter in prepared loaf pan.
  • Bake until a wooden pick inserted in the center comes out clean, about 45-50 minutes; meanwhile, prepare lemon glaze.
  • Using a long wooden skewer, poke numerous holes in hot bread, piercing all the way to the bottom.
  • Slowly drizzle hot glaze over bread; let cool in pan on a wire rack for 15 minutes then remove from pan and let cool completely on rack.
  • Lemon Glaze: In a small pan, combine lemon juice and sugar; stir over medium heat until sugar is dissolved.

6 ounces light brown sugar
1 teaspoon kosher salt
1 teaspoon ground cinnamon, clove, nutmeg, and/or allspice
6 ounces almonds, chopped and toasted
3 ounces unsalted butter, room temperature

Steps:

  • Whisk together the flour, sugar, salt, cinnamon and almonds in a medium mixing bowl.
  • Add the butter and use your fingers to lightly knead into the dry ingredients until the mixture is crumbly and the butter is well incorporated.
  • Use to top muffins, quick breads, crisps or ice cream. Store in an airtight container, in the refrigerator, for up to a month.

1/3 cup butter (MELTED)
1 cup sugar
2 eggs
3 tablespoons lemon juice (freshly squeezed, not bottled)
1 1/2 cups flour
1 teaspoon baking powder
1 cup milk
1 tablespoon vanilla
1 tablespoon lemon zest
1/2 teaspoon salt
1 cup blueberries (FROZEN)
1/4 cup flour
1/4 cup sugar (white)
1 tablespoon butter
1 tablespoon cinnamon

Steps:

  • Preheat oven to 350 degrees. In a large bowl, beat butter, sugar, lemon juice and eggs.
  • Combine flour, baking powder, salt, milk, vanilla, and lemon zest. Mix well.
  • Fold in blueberries -- Do Not let the blueberries thaw or it will discolor batter.
  • Pour into a greased 8x4 loaf/bread pan.
  • Cut butter in tiny little chunks.
  • In a small bowl combine flour, sugar, butter and cinnamon.
  • Stir, smash and pinch all the streusel ingredients to well incorporate them. Then evenly top the bread batter.
  • Place in oven for about 60-80 minutes, make sure middle is done. Let cool for about 1 1/2 hours. *cooking times depends on oven*.

Whenever friends compliment me on my zesty cake, I say, "Thanks Mom!" Her recipe for Lemon Streusel Cake was among dozens I took with me when I turned 21 and left home. When I was growing up, we had five kinds of fruit trees plus a big garden in our yard. Many times during the summer, I'd be so full from snacking on the "crops" that I'd have trouble finishing supper! Today, I'm a nurse in a large hospital-but my husband and I look forward someday to living in the country.

1/2 cup cold butter
1 package lemon cake mix (regular size)
1/2 cup chopped walnuts
3/4 cup whole milk
2 large eggs
FILLING:
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1 tablespoon lemon juice
1 teaspoon grated lemon zest

Steps:

  • Cut butter into cake mix until crumbly. Set aside 1 cup mixture for topping; stir in nuts and set aside. To remaining mixture, add milk and eggs; beat on high speed for 2 minutes. Pour into greased and floured 13x9-in. baking dish; set aside. , In a small bowl, beat the cream cheese, sugar, lemon juice and zest until blended. Drop by teaspoonfuls onto the batter and spread to edges of pan. , Sprinkle with reserved cake mixture. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. 1 package lemon or orange cake mix (regular size)
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1 tablespoon cold butter
1/2 cup chopped pecans
1 package (3.4 ounces) instant vanilla pudding mix
1 cup sour cream
4 large eggs
1/3 cup vegetable oil
GLAZE:
1 cup confectioners' sugar
2 to 3 tablespoons milk

Steps:

  • In a small bowl, combine 2 tablespoons cake mix, brown sugar and cinnamon; cut in butter until crumbly. Stir in pecans; set aside. In a large bowl, combine pudding mix, sour cream, eggs, oil and remaining cake mix; beat on low speed for 30 seconds. Beat on medium for 2 minutes. , Pour into two greased 8x4-in. loaf pans. Sprinkle with pecan mixture. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before removing to wire racks. Combine confectioners' sugar and enough milk to achieve desired consistency; drizzle over warm bread.
