Number Of Ingredients 3

2 tablespoons whole black peppercorns
3 tablespoons finely grated lemon zest
1 tablespoon kosher salt

Steps:

  • Finely crush whole black peppercorns in a spice mill. Transfer to a small bowl; stir in lemon zest and kosher salt. Rub seasoning between your fingertips to break up any clumps of zest. DO AHEAD: Can be made 3 days ahead. Store airtight at room temperature.

6 tablespoons lemon-pepper seasoning
2 tablespoons dried thyme
2 tablespoons paprika

1/8 teaspoon cayenne pepper

Steps:

3 lbs boneless pork loin roast
2 tablespoons cracked black pepper
2 tablespoons grated parmesan cheese
2 teaspoons dried basil
2 teaspoons dried rosemary
2 teaspoons dried thyme
1/4 teaspoon garlic powder (NOT garlic salt)
1/4 teaspoon salt

Steps:

  • Pat pork dry with paper towel.
  • In a small bowl, combine all rub ingredients well and apply to all surfaces of the pork roast.
  • Place roast in a shallow pan and roast at 350 degrees F for 1 hour to 1 hour and 15 minutes (18-20 minutes per pound), until internal temperature registers 155 degrees F with a meat thermometer.
  • Remove roast from oven and let rest for 5-10 minutes before slicing to serve.
  • Serves 6-8, with leftovers.

I used to be La Madeleine's DFW catering chef, and the production kitchen cooked all the rotisserie chicken, and I did really like the rub they used. This is an approximation of their rub, with a few ingredients of my own thrown in. This is enough rub for one roasting chicken.
