BANANA FRITTERS
These banana fritters are the perfect way to use up your overripe bananas. They are sweet, but not overly sweet as they do not contain any added sugar. They are soft, fluffy with a rich flavor from the bananas. Enjoy for breakfast, snack time or dessert. They pair well with tea or coffee!

- Peel the bananas and place in a large bowl. Mash with a wooden spoon or potato masher to form a paste (it will have lumps in it and that's okay).
- Add the rest of the ingredients into the bowl except the oil for frying. Mix until just combine to form a batter. The batter will be light and drippy.
- Place oil in a pan up to 3 inches then heat up on high heat to 365 degrees Fahrenheit.
- Reduce the heat to medium (this is important because very hot oil will result in the fritters burning on the outside without cooking through.
- Place tablespoonfuls of the batter into the pan (if you have a small cookie scoop, use it to drop the batter into the oil). Do not overcrowd the pan. Let the fritters cook until golden. Flip to the other side and let them cook until golden too. Remove and place on paper towel to absorb excess oil. Repeat process with the rest of the batter.
- Enjoy for breakfast with some tea, or as a snack, or serve with chocolate sauce as a dessert.

Banana Fritters. These are a lovely crispy treat, serve warm as they are or with some syrup drizzled over or a blob of ice cream! A great way to use up spare or leftover bananas too! Really quick and easy to make dessert.

- In a bowl, add the flour, baking powder and salt.
- Add the water and oil and combine with a hand whisk. The consistency should be thick, like heavy cream and be able to coat a spoon. If it is too thick, add a drop more water, too thin, add a little more flour. Set aside.
- Heat a pan with vegetable oil until it reaches 180 C or 350 F. Make sure you do not over fill the pan with oil. I use a small saucepan and cook in batches, filling the pan 1/3rd deep with cooking oil.
- Whilst the oil is heating up. peel the banana, cut in half and then slice length ways in half so you have 4 pieces. Dip each piece in the batter so it is fully coated and carefully place in the pan, cooking both sides until golden brown. ** To tell if the oil is hot enough, drop a tiny bit of batter, the size of a pea in to the oil. If it sizzles and floats to the top immediately, the oil is hot enough.
- Place the fritters on some kitchen paper then dip into a bowl with sugar to coat.
- Serve immediately as they are or with some syrup drizzled over the top or a blob of ice cream!

I was craving apple fritters but wasn't able to get to the donut shop. So I looked around to find on hand ingredients to satisfy my craving. I didn't have apples, but I had some very nice ripe bananas. That's when I came up with these. You won't be disappointed!

- In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
- Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

- For basic fritter batter: Combine flour, baking powder and salt; stir to blend. Add egg and melted margarine; stir until well blended. Add milk (or fruit juice), mix well. Let stand 30 minutes.
- Ham Fritters: Add minced ham to basic batter. Drop by spoonfuls into hot oil and deep fry.
- Banana Fritters: Peel and quarter bananas. Dip bananas in batter and saute in margarine until golden brown on all sides.

- Mix the flours, baking powder, soda, salt and sugar in a bowl.
- Stir it into the mashed banana with a fork. (Add the fourth tbs of flour if mixture is too soft.).
- Heat a frying pan to medium-hot and add enough oil to coat the flat area. (Traditionally, this snack is deep-fried but I find it not all that necessary.).
- Scoop a tablespoon of the banana mixture onto the pan when the oil is heated to medium hot (a soft sizzling sound when the batter touches it). Flatten the batter slightly.
- Fry one side till medium brown and flip over to fry the other side.
- Place cooked fritters on a few layers of kitchen paper. Best served warm but cooled is good, too. :).
