LAMB BONE SOUP
Hearty lamb bone soup made with meaty bones, vegetables, potatoes, and beans. A great way of using up every last bit of the lamb.

Steps:
- Follow the link for the recipe. Add one meaty lamb bone at the beginning. Simmer it in the stock for 2 hours, take it out and remove the meat. Set the meat aside and return the meatless bone to the stock. Continue simmering for 4 hours for a more concentrated stock.
- If your lamb stock is already cooked, pour it into a pot, add the meaty bones and simmer them in the stock for about 2 hours or until the meat is tender. Remove the meat from the bone and set it aside. Use the stock and the shredded meat to make the soup. You can cook the meat in water as well, but use good quality stock to make the soup.
- Once the stock and the meat are cooked, make the soup.
- Chop the onions and the bacon (if necessary).
- Heat the oil in a large heavy-bottomed pot. Fry the bacon cubes and the chopped onion on medium-low heat for about 4 minutes.
- Add the chopped carrots, and garlic, stir well and cook for about 4 minutes. Add the peeled and cubed potatoes, caraway seeds, thyme, rosemary, bay leaves, chili. Stir well.
- Add the stock. Cook for about 10 minutes.
- In the meantime, chop the cabbage. Add cabbage and drained white beans to the pot. Cook for another 10 minutes or until the cabbage is cooked to your liking, it should not get mushy.
- Add the shredded meat and heat through for a few minutes.
- Adjust the taste with vinegar, Worcestershire sauce, salt, and pepper.
- Serve sprinkled with fresh parsley if desired.

LAMB SOUP
This makes great use of leftover lamb and lamb bones. This requires overnight refrigeration which is not included in prep time.

Steps:
- Chop bones in half and then place in a large soup pot, adding meat, celery, carrot, onion, peppercorns and 1/2 teaspoon salt. Bring to a boil and then simmer for 2 hours, skimming and replacing water about every 30 minutes or so so water stays at approximated original level.
- Drain using a colander over a bowl or pot, retaining liquids.
- Trim meat from bones and discard bones after removing marrow (added to meat).
- Discard gristle, carrots and celery.
- Return remainder (meat) to pot or bowl with broth and refrigerate overnight.
- Skim soup and put congealed broth (with meat) in a pan. Bring to a boil and reduce to a simmer, adding curry powder, 1/2 teaspoon salt, bouillion cube and greek seasoning, stirring. Skim.
- Season to taste.
BAKED LAMB CHOPS
These are very tasty, and make for an easy main meal to prepare. Try serving them with mashed potatoes, peas and pumpkin.

- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, combine the eggs and the Worcestershire sauce; stir well. Dip each lamb chop in the sauce and then lightly dredge in the bread crumbs. Then arrange them in a 9x13-inch baking dish.
- Bake at 375 degrees F (190 degrees C) for 20 minutes, turn chops over, and cook for 20 more minutes, or to desired doneness.

- Heat oven to 160°C Heat half the oil in a heavy based casserole dish. Brown the chops in batches over medium heat then remove to a plate.
- Turn heat down, add remaining olive oil and fry onion gently until soft.
- Add garlic, celery, carrot and parsnip and cook for 3 minutes, stirring regularly.
- Add chopped tomatoes, Worcestershire sauce and brown sugar and stir to combine. Return chops to the casserole, then pour over water to cover, stirring again to combine.
- Add the sprigs of rosemary, cover the casserole and cook for 2 hours, stirring occasionally. Remove any fat from the surface with a large spoon and add the peas.
- Cook on the stove top with the lid off to reduce the sauce slightly until the peas are cooked through.

SLOW COOKER LAMB CHOPS AND VEGETABLES
A delicious, economical and healthy winter casserole. Use whatever vegetables you choose and serve on mashed potatoes.

- Put flour on a plate, season with pepper (and salt if you wish). Coat chops in flour, shake off excess and reserve flour for later use.
- Add oil to large heavy pan or wok and brown the chops in batches to seal them and place them in the bottom of the slow cooker/crock pot.
- Sauté bacon pieces, garlic and celery for 5 minutes over high heat then reduce heat to medium high, add the mushrooms and onions and sauté for for another 5 minutes or so.
- Add the rest of the vegetables and cook, stirring occasionally, for another 10 minutes or so and then add to the slow cooker on top of the chops.
- Melt the butter in the same pan and add the reserved flour. Cook over fairly high heat, stirring occasionally until dark brown.
- Pour in the stock and Worcestershire sauce and stir until mixture boils.
- Add packet of French onion soup, mix in and then pour the mixture over the ingredients in the slow cooker.
- Cook for 7 hours or more and serve over mashed potatoes.
HEARTY LAMB & BARLEY SOUP

- Heat the oil in a large saucepan. Season the lamb, then fry for a few mins until browned. Add the onion and barley, then gently fry for 1 min. Add the veg, cook for 2 more mins, then add the Worcestershire sauce, stock and thyme. Cover, then simmer for 20 mins.
- When everything is cooked, spoon about a quarter of the soup into a separate pan. Purée with a stick blender (or put into a normal blender and whizz), then stir it back into the rest of the soup. Add the green beans, simmer for 3 mins, then ladle the soup into bowls and serve with granary bread.

FRENCH ONION BAKED LAMB CHOPS
This is an old family favorite. Super easy and really yummy. The dried soup makes a tasty jelly on top and the foil parcel keeps the chops moist and juicy.

Steps:
- Pre-heat the oven to 190 degrees celciuis.
- Take a baking tray and place a large sheet of foil on top. Make sure foil is long enough make a pouch to fit the chops in flat.
- Place the chops on the foil and coat the top of each one with soup powder. The more powder you use the more 'jelly' you will have for each chop and the stronger the flavor.
- Wrap foil over the top of the chops to make a package and fold to seal.
- Bake for 30 mins (be careful when opening the package as hot steam will come out).

WHITE BEAN AND LAMB SOUP
Wonderful soup for a chilly Sunday dinner. It is a complete meal in one bowl. The soup is topped with wilted baby spinach and feta cheese!

- Soak the dried beans in water overnight. After soaking, drain off remaining water, and rinse.
- In a large stockpot, cook the onion in oil over low heat until just beginning to soften, about 4 minutes. Stir in garlic, and cook for 1 minute. Increase the heat to medium, and add lamb; cook for 3 to 4 minutes. Stir in carrots and celery, and cook for 1 minute. Stir in tomatoes, and season with parsley, thyme, oregano, and with freshly ground pepper and salt to taste. Add beans and broth to the pot. Bring to a boil, boil for 5 minutes, then reduce heat to medium-low. Simmer, covered, for 1/1/2 hours, or until beans are tender.
- Rinse spinach, and then place in a saucepan. Place over medium heat, and cook until wilted. This will only take a short time, and you will not need to add more liquid to the pan.
- Top each serving of soup with wilted spinach and crumbled feta cheese.

MUM'S FRENCH ONION LAMB CHOPS
This is a recipe that my mum made for us a lot when we were kids - as did her mum when she was little! I finally got around to actually measuring them the last time I made it. LOL Feel free to play around with the quantities, I used Forequarter lamb chops, depending on what cut of chop you use you may want more or less of them. Although this uses salt reduced french onion soup mix, it still has a quite concentrated flavour. By all means you can cut it down to 1 packet, or 1 1/2 packets. Just keep in mind the gravy will be considerably thinner. You definitely want to serve this yummy dish with potato mash.

- Mix water and french onion soup mix together, set aside.
- Trim lamb chops of all visible fat.
- Place 3 chops in a casserole dish and top with half the French Onion mix, add the rest of the chops and top with the remaining French Onion Mix.
- Cover with lid (or foil) and bake in 180c oven for about 1 hour.
- I usually check them after 30 minutes and add more water if it looks a little dry.

- Preheat the oven to 425 degrees F (220 degrees C).
- Cut away excess fat from the lamb chops (some fat does add flavor). Coat each chop lightly in olive oil. Dust lamb chops with garlic, rosemary, salt, and pepper. Place lamb chops in a cast iron skillet.
- Bake uncovered in the preheated oven until cooked through, 8 to 10 minutes. An instant-read thermometer inserted into the center should read at least 140 degrees F (60 degrees C) for medium-well doneness.
