Lebanese Chicken with 7-spice, caramelized onions, almonds, and roasted lemon. A simple flavorful Lebanese-inspired dinner, with only 15 minutes of hands-on time. See notes for grilling!

2 lbs chicken, skin on, bone-in thighs or legs (see notes, for boneless, skinless options )
2 tablespoons olive oil
2 1/2 teaspoons salt (use 1 teaspoon salt per pound of chicken plus an extra 1/2 teaspoon for the onions)
1-2 teaspoons cracked pepper
2 tablespoons Lebanese 7-spice ( see below)
1 extra-large red onion, sliced into 1/2 inch wedges
4 garlic cloves, rough chopped
1 tablespoon preserved lemon, chopped (totally optional)
1 lemon, sliced thinly

1/4 cup Marcona almonds, or slivered almonds or pinenuts
parsley for garnish
1 teaspoon cumin
1 teaspoon allspice
1 teaspoon cinnamon
1 teaspoon coriander
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1/4 teaspoon cardamom

Steps:

  • Preheat oven to 400 F (see notes for grilling)
  • Place the chicken in a bowl and toss with olive oil, salt, and 7-spice mix. Add onion, garlic, preserved lemon and sliced lemon and toss again well. Spread out on a parchment-lined sheet-pan.
  • Bake for 35-45 minutes- or until cooked through. Broil for a few minutes to get the skin crispy and nicely golden, turning if necessary (especially if using skin-on chicken)
  • While the chicken is baking, warm and toast the almonds/pinenuts in a little butter or olive oil. Season with salt and pepper. Set aside.
  • Place the fragrant chicken on a platter, scattering with the onions and lemon slices (which are edible.) Pour any juices from the pan, over top. Garnish with the toasted nuts and sprinkle with a few parsley leaves.

2 tablespoons olive oil (divided)
⅓ cup pine nuts
1 pound lean ground beef
2 teaspoons 7 Spice
2 teaspoons salt (divided)
½ teaspoon black pepper (divided)
¼ cup chopped cilantro
5 garlic cloves (minced)
½ teaspoon crushed red pepper
2 10-ounces frozen spinach
3 cups chicken broth
Juice of one lemon

Steps:

  • In a heavy bottomed saute pan over medium heat, heat 1 tablespoon olive oil and toast the pine nuts until golden, remove and set aside.
  • In the same pan over medium high heat, heat the remaining tablespoon of olive oil and add the ground beef, season with 7 Spice, 1 teaspoon salt and 1/4 teaspoon pepper. Cook until the meat is browned, about 5-7 minutes. Remove and set aside, keep any oil and juices in the pan.
  • In the same pan, add the cilantro, garlic and crushed red pepper, cook for about 2-3 minutes until fragrant. Add the frozen spinach, remaining salt and cook with the cilantro mixture until softened, about 5 minutes.
  • Add the chicken broth or water and bring mixture to a boil. Return the cooked ground beef and pine nuts to the pan. Lower heat and simmer for 20 minutes until stew thickens.
  • Stir in the lemon juice and serve over traditional Arabic rice pilaf.

8 cut up chicken pieces
8 medium potatoes, peeled and quartered
salt to taste
ground white pepper to taste
4 cloves garlic, crushed
½ cup extra virgin olive oil
1 cup fresh lemon juice

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place chicken and potatoes in a large baking dish. Season generously with salt and white pepper.
  • In a bowl, stir together garlic, olive oil, and lemon juice. Pour over chicken and potatoes. Cover dish with foil.

This dish is sweet and peppery, delicious served with basic pilaf. The original recipe called for whole quail, yet they are hard to come by!! So here it is with chicken. I have only made this with fillets, but chicken pieces with bones would work equally well, even better perhaps.

1 kg boneless skinless chicken thighs
salt and pepper
plain flour, for dusting
olive oil
1 leek, white part only, finely sliced
2 garlic cloves, crushed
1 tablespoon fresh ginger, grated
2 red onions, peeled and quartered
1/2 teaspoon saffron thread
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
500 ml chicken stock
1 tomatoes, seeded and diced
1 tablespoon dates, seeded and diced
1 lemon juice

Steps:

  • Dust chicken fillets in seasoned flour to coat.
  • Heat olive oil in stew pot and brown chicken in batches, set aside.
  • Add a little more oil and gently fry the leek, garlic, ginger and onions until softened, 5-8 minutes.
  • Add spices and stock, cover the pan and simmer for 20 minutes or so, until the mixture has turned a beautiful saffron yellow.
  • Return the chicken to the pot along with the tomato and dates and simmer for a further 30-40 minutes until chicken is meltingly tender!
  • Squeeze in the lemon juice.
  • Serve with any pilaf and plenty of yoghurt.

This tomato-based Lebanese bean stew is hearty and wholesome, perfect for serving with rice, salad, and optionally some bread for mopping up all the juices.

1.65 lb white beans (fresh or soaked overnight; or 0.66 lb/300 g dry)
1.65 lb cooked beef shank (or lamb pieces; check the notes for a meat-free version!)
3 cups beef stock (or vegetable stock if making vegan bean stew)
4.35 oz cilantro
4.5 cups tomato juice (or passata; tinned crushed tomatoes would also work)
2.5 Tbsp tomato paste
1/3 cup lemon juice (fresh is best)
6 garlic cloves (big)
4.5 Tbsp olive oil (or other cooking oil)
2 tsp salt
1.5 tsp ground coriander seeds
1 tsp black pepper

Steps:

  • If you're using dried beans, first make sure to rinse and then leave them to soak overnight (at least 8hrs).Then, on the day of making the stew, you'll first need to prepare the beef (if using). You could also cook the vermicelli rice in advance or cook it while preparing the butter bean stew.
  • Tinned beans: drain and rinse the beans well, then bring the beans to a boil with 4 cups of water in a deep pot over medium heat. Remove the white foam from the top of the beans, then add ½ tsp salt and one bay leaf. Then cover the beans loosely with a lid (to stop the beans from overflowing). Simmer for 10 minutes. Then drain and rinse once more before setting aside.Technically, the tinned beans don't need to pre-cook before being added to the main pan. I just do so for extra tender results and a little extra flavor. Alternatively, you can add the beans to the pan before adding the tomatoes to the pan and add the bay leaf and salt to the pan.Dry beans: after soaking them overnight, rinse the beans well, then add them to a deep saucepan with 6 cups of water. You can then follow the method above. However, you'll need to simmer the beans for between 20-30 minutes instead.
  • Separate the cilantro leaves from the stems and finely chop the stems. Then, store the leaves back in the fridge to keep them "fresh" (we'll be using them at the end).
  • Slice the garlic and, if you're using fresh tomatoes, chop roughly and add them to a blender to process into a thick "juice."
  • In a large, deep pot (or Dutch oven), heat the oil. Then add the chopped garlic and sauté for just 30-40 seconds over medium heat.
  • Add the tomato paste and mix in before adding the crushed coriander seeds. Stir once more, then sauté for two minutes.
  • Add the chopped cilantro stems and stir before adding the tomato juice. Mix once more, then allow the mixture to simmer over medium-low heat for 10-15 minutes. During this time, it should reduce and thicken slightly.
  • Add the cooked beef, beef stock, and beans to the pot. Then mix well, reduce the heat to low, and allow it to simmer for a further 10 minutes.For the vegetarian butter bean stew, add vegetable stock. You may also want to introduce extra fats with the addition of an additional tablespoon of olive oil. This will create a silky-smooth fasolia with a better mouthfeel.
  • Add the salt and pepper (to taste), stir, and cook for two minutes before adding the lemon juice and removing the fasolia from the heat.
  • Finally, add the cilantro leaves and gently fold them into the stew. Then serve it up along the sides of your choice.
  • Store: allow the fasolia to cool, then store in an airtight container in the fridge for up to 5 days.Freeze: make sure to store the bean stew in an airtight container/s for up to 3 months. Allow it to thaw overnight in the fridge before reheating.Reheat: you can reheat the fasolia on the stovetop or in the microwave until heated throughout.

4 Tablespoons Olive Oil, divided
1/4 cup finely diced Shallots
2 Tablespoons Tomato Paste
2 teaspoons Ground Cumin
2 teaspoons Paprika
1/2 teaspoon Red Pepper Flakes
1 pinch Ground Cinnamon
1 15 ounce can Diced Tomatoes, preferably fire-roasted
1 1/2 cups Chicken Stock or Water
2 Bay Leaves
1 15 ounce can Chickpeas, drained and rinsed
1/2 cup Roasted Red Peppers from a jar, drained and chopped
1 Tablespoon Fresh Lemon Juice
Chopped Flat-Leaf Parsley
Plain or Greek Yogurt, for serving
Toasted Pita Bread, Cooked Rice, or Cooked Couscous, for serving
1 Lemon, sliced into wedges

Steps:

  • Season chicken thighs on both sides with some salt and black pepper. Set aside.
  • Heat a Dutch oven or large pot over medium heat. Add 2 Tablespoons olive oil. When oil begins to shimmer, add chicken to oil and sear on both sides until golden brown, 8 to 10 minutes total. Transfer chicken to a plate.
  • To heated pot add remaining 2 Tablespoons olive oil and then shallots. Cook shallots until tender and fragrant, 2 to 3 minutes.
  • Add tomato paste, cumin, paprika, red pepper flakes, and cinnamon. Stir until combined and smooth, about 1 minute more.
  • Add chicken back to pan (along with any accumulated juices) and then diced tomatoes (including liquid), chicken stock, and bay leaves. Scrape up any browned bits on the bottom of the pan.
  • Bring stew to a boil. Reduce to a low simmer. Simmer, uncovered, stirring occasionally until chicken is cooked through and tender, about 20 minutes. (Reduce the temperature as needed to maintain a low simmer; if it boils too vigorously, the chicken may turn tough.)
  • Transfer chicken to a cutting board and shred or chop.
  • Return shredded chicken to pot with chickpeas and red peppers. Simmer everything together for another 5 minutes to heat the chickpeas and let the flavors come together.
  • Stir in lemon juice. Taste stew and season with some salt and pepper, if needed.
  • Discard bay leaves.
  • Serve stew over toasted bread, cooked rice, or couscous with parsley and yogurt on top and extra lemon wedges for squeezing over top.

  • In a medium sized pot, heat one tablespoon of olive oil. Season the chicken breast with one teaspoon of salt and black pepper. Cook over high heat for about 2 minutes per side. Add the bay leaves, cloves, onion, remaining salt and about 6 cups of water. Cook on high heat until boiling, then lower the heat to medium and cook until chicken has cooked through, about 20-30 minutes. Set cooked chicken aside to cool. Once cooled, shred the chicken.
  • Add 10 cups of the dried molokhia leaves to a large mixing bowl. Remove any stems or brown/yellow leaves. Heat up a kettle of water until just boiling, and pour over the leaves to re-hydrate them. Let soak for at least 5 minutes. Drain the water and pour the leaves into a colander over the bowl.
  • Pour water over the leaves in the colander and swirl around with your hands. Drain the water and squeeze the molokhia. You will feel slime oozing out of your hands. Repeat this step until the water runs CLEAR and the molokhia is no longer slimy (My batch took about 20 washes.)
