This simple bake is lovely with a cuppa. Or have it for dessert instead, with custard or ice cream

500g white or wholemeal bread
500g/1lb 2oz mixed dried fruit
85g mixed peel
1½ tbsp mixed spice
600ml milk
2 large eggs, beaten
140g light muscovado sugar
zest 1 lemon (optional)
100g butter, melted
2 tbsp demerara sugar

Steps:

  • Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
  • Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
  • Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
  • Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
  • Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
  • Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

MY MUM'S EASY AND TRADITIONAL ENGLISH YORKSHIRE PUDDING



My Mum's Easy and Traditional English Yorkshire Pudding image

Exactly as the title says, this is my Mum's Traditional English Yorkshire Pudding recipe and it is so easy. It is slightly different from my Toad-in-the-Hole batter recipe, the Yorkshire puddings in this recipe are lighter. (You need a more substantial batter for the addition of sausages!!) I have held off posting this for a while as it is so easy, but it works -please see my photo's! The great thing about this recipe is that it works on equal measures of volume and so there is no weighing or measuring as such. So, if there are only two of you, use a very small cup - if there are a crowd of you, use a big cup, jug or a mug!! Easy! One tip - ALWAYS make sure the oil/fat is SIZZLING hot before you pour in your batter; preheat your tins with the oil/fat before pouring in your batter......that's about it really! NOTE: (I have made the yield between 8-16 individual Yorkshire puddings, depending on the size cup you use. A tip - 4 beaten eggs will make about 8 to 10 Yorkshires.) N.B. My first reviewer quite rightly stated that Yorkshires are often cooked in a large dish/tin; traditionally UNDERNEATH the meat drippings actually!! But, my grandmother & my Mum also made very Traditional Yorkshires in special tins - as photographed; as I understand it, popovers are baked in smaller diameter tins - Yorkshire Pudding Tins have a diameter of at least 4" wide & generally only have 4 holes in a tray!!

1 cup beaten egg
1 cup plain flour
1/2 cup milk
1/2 cup water
salt
pepper
1 -2 tablespoon cooking oil or 1 -2 tablespoon dripping

Steps:

  • Preheat your oven to 240C,475F or gas mark 9. (If you are cooking roast beef and/or roast potatoes, make sure the beef has been removed to "rest" before carving and that the potatoes are moved down to the bottom shelf and NEED browning still.).
  • Pour a scant amount of oil or dripping into your Yorkshire Pudding tins.(A large roasting tin can be used too. If you do not have a Yorkshire Pudding tin which has 4 wide and shallow cups of about 4" in diameter, then use a large muffin tin.).
  • Put the tin into the pre-heated oven about 5 minutes before you want to cook the Yorkshire Puddings.
  • Empty the flour, salt & pepper into a large roomy bowl.
  • Make a dip in the centre and add the beaten eggs bit by bit, mixing as you go along.
  • Add the water/milk mixture gradually and whisk in between each addition.
  • Keep whisking until all the liquids have been added. The batter may still be lumpy - this does not matter.
  • Cover and leave to rest for up to 1 hour.
  • Just before cooking, whisk thoroughly again to break down any lumps & add some more air.
  • Carefully take out the tin/s. Pour the batter into the tin/s and QUICKLY return to the oven.
  • Cook for about 20 minutes until well risen and golden brown. DO NOT open the oven in the first 10-15 minutes or they will DROP!
  • If you have two tins cooking, rotate the tins from top to bottom shelves after the 10-15 minutes so they cook evenly.
  • Serve with Roast Beef and lashings of gravy!
  • Can also be served with any Roast Dinner - we love them with Roast Chicken - see photos!

MOM'S THANKSGIVING BREAD PUDDING

This is my mother's bread pudding recipe. Every year, I make it about 10 times between Thanksgiving and Christmas-everybody loves it! It is delicious warm, but also quite good cold with milk poured over it.

10 slices white bread, crusts removed
½ cup unsalted butter, softened
½ cup seedless raisins
2 teaspoons ground cinnamon
4 cups milk
⅔ cup white sugar
4 large eggs, well beaten
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 2-quart casserole or baking dish.
  • Spread bread slices with butter, then use a sharp knife to cut each slice into 4 squares.
  • Arrange 1/2 of the bread squares in the bottom of the prepared casserole. Sprinkle with raisins and 1/2 of the cinnamon. Cover with remaining bread and cinnamon.
  • Heat milk in a medium saucepan over medium heat just until a film forms over the top, 3 to 4 minutes. Remove from the heat and add sugar; stir until dissolved.
  • Pour some of the hot milk into the beaten eggs, whisking quickly to avoid scrambling the eggs. Pour the mixture back into the saucepan and whisk until smooth and thoroughly combined. Stir in vanilla and pour mixture over the bread.
  • Set the casserole in a pan and fill with 1 inch hot water. Bake in the preheated oven until a knife inserted in the center comes out clean, 40 to 50 minutes. Serve warm.

MOTHER'S RESTAURANT BREAD PUDDING

This recipe comes from New Orleans' famous Mother's Restaurant. Although I've made it without the brandy, it does taste better with it. Prep time includes soaking the bread pieces.

1 large stale French bread
10 whole eggs
4 cups fruit cocktail in heavy syrup
8 cups homogenized milk
2 cups heavy cream
4 cups granulated sugar
1/2 teaspoon nutmeg
3 teaspoons cinnamon
4 tablespoons imitation vanilla or 2 teaspoons pure vanilla extract
1/2 lb unsalted butter
1 lb unsalted butter
1/4 cup brown sugar
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 cup brandy

Steps:

  • In a large mixing bowl, break bread into small pieces by hand.
  • In a separate mixing bowl, whisk eggs and pour over broken bread.
  • Add fruit cocktail to bread and mix by hand.
  • In a 6-quart saucepot on medium high heat, combine milk, cream, sugar, nutmeg, cinnamon, vanilla extract and butter and bring to a boil.
  • Remove from heat and pour over bread mixture a little at a time careful not to scramble the egg mixture.
  • Cover and let bread soak up the egg mixture thoroughly, approximately one hour.
  • Preheat oven to 350 degrees.
  • After an hour, check bread to make sure liquid is completely soaked into bread mixture.
  • Mix by hand and break up any remaining hard bread pieces.
  • Transfer bread pudding mixture into two 10 x 12 x 3 roasting pan 3/4 of the way to the top.
  • Place in a 350 degree oven and bake until top is brown and center is cooked approximately 60 to 90 minutes.
  • Be careful not to overcook.
  • Serve hot and spoon bread pudding sauce over top (see recipe below).
  • *SAUCE*In a 4-quart saucepot on medium heat, mix all ingredients together, bring to a boil and reduce to a simmer.
  • Simmer until butter clarifies and alcohol reduces, approximately 15 minutes.
  • Remove from heat and spoon over bread pudding.
  • Serve.

MUM'S CHRISTMAS PUDDING

My little mum made two puddings each year, one for Christmas Day and another for New Year's Day. She'd put money in the Christmas Day pudding (silver coins), it was always such a treat to find the money when we were kids. I haven't allowed for re-heating and fridge time in preparation times. I have also guessed on how many serves, it goes a long way when there is so much other food being served. It is lovely cold and keeps for ages in the fridge. I always make this in a pudding basin as it is easy to reheat a basin in a crockpot, it doesn't make the kitchen hot and in Australia our Christmas is usually very hot.

1 cup butter (250g)
1 cup brown sugar
1 teaspoon mixed spice
1 teaspoon cinnamon
1 tablespoon golden syrup (optional)
5 eggs
1 cup plain flour
1/2 cup self raising flour
1/4-1/2 cup cold brewed tea
1/2 cup rum, overproof
1 orange, zest of, only
1 lemon, zest of, only
1/2 teaspoon salt
1/2 teaspoon bicarbonate of soda
1/2 cup soft breadcrumbs
1 1/2-1 3/4 cups raisins (250g - 310g)
1 1/2-1 3/4 cups sultanas (250g - 310g)
1 1/2-1 3/4 cups currants (250g - 310g)

Steps:

  • Soak fruit in rum overnight.
  • Add spices, tea and rinds to fruit mixture.
  • Cream butter and sugar, beat eggs and add alternately with flours to butter, sugar mixture then add breadcrumbs.
  • Grease a large pudding basin well, fill basin with pudding leaving a little room at top for expansion and cover with double sheet of greaseproof paper well greased then clip on lid, it should fit tightly.
  • Steam pudding for 4-5 hrs in large boiler (very large saucepan), with a saucer placed underneath basin, fill with boiling water to come half way up basin - keep adding boiling water as it evaporates. If you put a lid on boiler, don't cover completely, leave space for steam to escape.
  • Reheat on Christmas Eve in crockpot 12-14 hrs on low, place upturned saucer under basin, start about 11pm to midnight so it will be ready by lunchtime for Christmas Dinner.
  • Take pudding out of basin and serve pudding on a platter with a sprig of holly (artificial) on top and a bowl of hot custard or brandy custard alongside.
