- Preheat an oven to 400 degrees F (200 degrees C). Toss the yams with 2 tablespoons of olive oil in a bowl. Season to taste with salt and pepper, and arrange evenly onto a baking sheet.
- Bake in the preheated oven until the yams are tender, 20 to 25 minutes. Cool to room temperature in the refrigerator.
- Meanwhile, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Cook and stir the onion and garlic until the onion has caramelized to a golden brown, about 15 minutes. Stir in the kale, cooking until wilted and tender. Transfer the kale mixture to a bowl, and cool to room temperature in the refrigerator.
- Once all the ingredients have cooled, combine the yams, kale, red wine vinegar, and fresh thyme in a bowl. Season to taste with salt and pepper, and gently stir to combine.

- Preheat the oven to 425 degrees F.
- For the dressing: In a small bowl, whisk together the pomegranate molasses, vinegar and mustard. Pouring in a steady stream, whisk in the olive oil. Season with 1/4 teaspoon salt. (The dressing can be made up to 3 days in advance.)
- For the salad: Scatter the sweet potatoes and pearl onions on a rimmed baking sheet. Drizzle with the olive oil and season with 1 teaspoon salt. Roast until the potatoes are tender throughout and beginning to brown, about 35 minutes, tossing halfway through. Transfer to a large bowl to cool slightly.
- Add the apples, baby kale and the dressing to the bowl, and season with 1/4 teaspoon salt. Using two wooden spoons, toss gently to combine and coat evenly in the dressing.
- Sprinkle the salad with the pomegranate seeds before serving.

- Preheat oven to 425 degrees. Toss sweet potato cubes with oil, cumin, salt and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes, tossing every 10 minutes to prevent burning and ensure caramelization. Remove from oven and cool to room temperature. While potatoes cool, make the chipotle dressing. Combine the oil, vinegar, chili, canning sauce, garlic, oregano, and salt in a blender jar or food processor. Process until smooth. Taste and adjust salt if needed. Refrigerate if not using immediately. In a large mixing bowl, add chopped kale. Top with 2 tsp lemon juice, and 1-2 tbsp of the chipotle dressing. With clean hands, knead the kale for 2-3 minutes until kale is infused with the lemon and dressing. Sprinkle with salt. Add sweet potatoes, pepitas, and additional dressing. Toss until well-combined. - In a large pot, steam prepared yams 10 to 15 minutes or until tender, then remove from steamer.
- When cool enough to handle, peel yams (if desired; I don't), then place in a large salad bowl.
- While yams cool, combine vinegar, pickle relish, mustard, salt & pepper in a small jar with a tight-fitting lid, & shake well.
- Add vegetable oil & shake again, before pouring over yams & tossing them to coat.
- Add green onions & red pepper & either serve at room temperature or chilled.

This recipe comes from Stefano de Pieri - great Italian chef. However this is very Asian fusion inspired but is fantastic. I have successfully made it with a mixture of butternut pumpkin and sweet potato.

Steps:
- Cut sweet potato into chunks, toss in a little olive oil place in large baking dish with garlic cloves.
- Season to taste with salt and pepper amd bake at 220 Degrees C for 45 minutes to 1 hours.
- Remove from oven peel garlic and keep warm.
- Mix red onion, chilli and herbs into potato and garlic.
- Whisk remaining ingredients including the remaining olive oil, and toss through salad.
- Lastly top with peanuts and serve, extra herbs and black pepper.

- Roast the yams in a little olive oil in a 375-400 oven until soft and a little brown on the outside, about 30 minutes (depending on how big the cubes are). Cool.
- Mix remaining ingredients except for the pine nuts and cheese, and toss with the yams. Crumble in the cheese (if the cheese is too soft to crumble, use a fork to help it along; also crumbles better if frozen). Allow to sit in the fridge at least an hour to let the flavours develop (but will last several days in the fridge). Add pine nuts just before serving to keep them crunchy.

- 1. Preheat the oven to 400°F. On a rimmed baking sheet lined with parchment paper, toss the sweet potatoes with 2 tablespoons olive oil and season to taste with salt and pepper. Roast the sweet potatoes for 20-25 minutes until tender. Transfer to a large bowl.
- 2. While the potatoes are roasting, toast the millet in a large dry saucepan over medium heat for 4-5 minutes. Gently shake the pan to swirl the grains in the pan every 15-20 seconds while toasting, this will help to ensure that the millet doesn’t burn. When the millet turns a rich golden brown and the grains become fragrant you are ready to add the vegetable broth, 1/4 teaspoon of salt, and the veggie bouillon cube. Stir to combine and increase the temperature to high until the mixture boils. Once boiling place a lid on the pan and reduce the heat to low. **Allow the millet to simmer for about 15 minutes until all of the liquid is absorbed. Remove from the heat, quickly remove the lid and add the kale, place the lid back on the pot and let it sit for 10 minutes until the kale is wilted.
- 3. Add the kale and millet mixture to the bowl of roasted sweet potatoes. Mix the vinegar, 2 tablespoons of olive oil, with salt and pepper to taste in a small bowl. Pour over the salad and toss well to combine.
- 4. In a medium skillet, heat the remaining 2 tablespoons of olive oil over medium to medium-high heat. Add the onions and a small pinch of salt. Cook until the onions begin to brown, about 3 minutes. Add the sage and cook for 1 more minute, until fragrant. Add the garlic and cook for 1 more minute. Add the Grand Marnier and simmer, constantly stirring, until the liquid is evaporated. Pour this onion mixture onto the salad and toss. Season with more salt and pepper if necessary, garnish with parsley and serve.
