ROASTED YAM AND KALE SALAD

A bright contrast in flavors makes this salad a favorite among friends and family. The yams have a subtle sweetness that pairs nicely with the caramelized onions and kale.

2 jewel yams, cut into 1-inch cubes
2 tablespoons olive oil
salt and freshly ground black pepper to taste
1 tablespoon olive oil
1 onion, sliced
3 cloves garlic, minced
1 bunch kale, torn into bite-sized pieces
2 tablespoons red wine vinegar
1 teaspoon chopped fresh thyme

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Toss the yams with 2 tablespoons of olive oil in a bowl. Season to taste with salt and pepper, and arrange evenly onto a baking sheet.
  • Bake in the preheated oven until the yams are tender, 20 to 25 minutes. Cool to room temperature in the refrigerator.
  • Meanwhile, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Cook and stir the onion and garlic until the onion has caramelized to a golden brown, about 15 minutes. Stir in the kale, cooking until wilted and tender. Transfer the kale mixture to a bowl, and cool to room temperature in the refrigerator.
  • Once all the ingredients have cooled, combine the yams, kale, red wine vinegar, and fresh thyme in a bowl. Season to taste with salt and pepper, and gently stir to combine.

2 tablespoons pomegranate molasses
2 teaspoons champagne vinegar
1 teaspoon Dijon mustard
3 tablespoons extra-virgin olive oil
Kosher salt
2 large sweet potatoes, peeled, halved and cut into 1/3-inch half-moons
One 14-ounce bag frozen pearl onions, thawed and well drained
3 tablespoon olive oil
Kosher salt
1 Honeycrisp or Fuji apple, cut into 1/4-inch half-moons
Half 5-ounce container baby kale
1/4 cup pomegranate seeds

Steps:

  • Preheat the oven to 425 degrees F.
  • For the dressing: In a small bowl, whisk together the pomegranate molasses, vinegar and mustard. Pouring in a steady stream, whisk in the olive oil. Season with 1/4 teaspoon salt. (The dressing can be made up to 3 days in advance.)
  • For the salad: Scatter the sweet potatoes and pearl onions on a rimmed baking sheet. Drizzle with the olive oil and season with 1 teaspoon salt. Roast until the potatoes are tender throughout and beginning to brown, about 35 minutes, tossing halfway through. Transfer to a large bowl to cool slightly.
  • Add the apples, baby kale and the dressing to the bowl, and season with 1/4 teaspoon salt. Using two wooden spoons, toss gently to combine and coat evenly in the dressing.
  • Sprinkle the salad with the pomegranate seeds before serving.

2 scallions, chopped
1 cup halved seedless green grapes
1 cup halved seedless red grapes
1 cucumber, peeled, seeded and diced
1 red bell pepper, seeded and diced
1/2 cup coarsely chopped skinned and toasted hazelnuts
2 teaspoons lemon zest (from about 2 lemons)
1/3 cup fresh lemon juice (from 1 to 2 lemons)
1/3 cup extra-virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • For the Salad:
  • Bring a large pot of salted water to a boil over high heat. Add the lentils and cook until tender, stirring occasionally, about 18 to 20 minutes. Drain and let cool for 5 minutes. Place lentils and remaining salad ingredients in a large salad bowl.
  • For the Vinaigrette:
  • Place the lemon juice in a small bowl. Slowly add the oil, whisking constantly, until combined. Season with salt and pepper, to taste

1 tablespoon plus 1/4 cup olive oil, divided

1/4 teaspoon salt

1 package (5 ounces) spring mix salad greens

1 head Romaine lettuce, torn
1 (15-ounce) can cannellini beans, drained and rinsed
1/2 cup pitted black olives
1/2 red onion, cut into slivers
1 lemon, juiced
1/4 cup extra-virgin olive oil
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 ounce shaved Parmesan (about 1/2 cup)

Steps:

  • Bring a medium pot of salted water to a boil over high heat. Add the green beans and stir. Cook for about 2 minutes, or until beans are slightly tender. Transfer the cooked green beans to a bowl of ice water and let cool for 3 minutes. Drain the green beans.
  • In a large bowl, combine the green beans with the lettuce, cannellini beans, olives, and red onion. Toss to combine. Drizzle with lemon juice and olive oil. Sprinkle with salt and pepper and toss to coat. Top with shaved Parmesan and serve.

1/2 cup extra-virgin olive oil
2 tbsp balsamic vinegar
1 canned chipotle chili in adobo
1 tsp adobo canning sauce
1 garlic clove
1/4 tsp oregano (Mexican, preferred)
1/4 tsp salt
4 cups sweet potatoes, peeled and cut into 1/2 inch cubes
1 tbsp olive oil
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
1 bunch kale (about 6 cups)
2 tsp lemon juice
1/4 cup pepitas

Steps:

  • Preheat oven to 425 degrees. Toss sweet potato cubes with oil, cumin, salt and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes, tossing every 10 minutes to prevent burning and ensure caramelization. Remove from oven and cool to room temperature. While potatoes cool, make the chipotle dressing. Combine the oil, vinegar, chili, canning sauce, garlic, oregano, and salt in a blender jar or food processor. Process until smooth. Taste and adjust salt if needed. Refrigerate if not using immediately. In a large mixing bowl, add chopped kale. Top with 2 tsp lemon juice, and 1-2 tbsp of the chipotle dressing. With clean hands, knead the kale for 2-3 minutes until kale is infused with the lemon and dressing. Sprinkle with salt. Add sweet potatoes, pepitas, and additional dressing. Toss until well-combined. Garnish with additional pepitas, or see Recipe Variations for more fun mix-ins. Serve immediately, or chill in the refrigerate. Store any leftovers in an airtight container. Leftovers are best if consumed within two days.

1 1/2 lbs sweet potatoes, scrubbed, quartered lengthwise & cut crosswise into 3/4-inch pieces (or yams)
3 tablespoons cider vinegar
2 tablespoons sweet pickle relish
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup vegetable oil
2 green onions, thinly sliced
1/4 cup red bell pepper, finely chopped

Steps:

  • In a large pot, steam prepared yams 10 to 15 minutes or until tender, then remove from steamer.
  • When cool enough to handle, peel yams (if desired; I don't), then place in a large salad bowl.
  • While yams cool, combine vinegar, pickle relish, mustard, salt & pepper in a small jar with a tight-fitting lid, & shake well.
  • Add vegetable oil & shake again, before pouring over yams & tossing them to coat.
  • Add green onions & red pepper & either serve at room temperature or chilled.

This recipe comes from Stefano de Pieri - great Italian chef. However this is very Asian fusion inspired but is fantastic. I have successfully made it with a mixture of butternut pumpkin and sweet potato.

1 kg sweet potato
1/2 cup olive oil (or less)
20 garlic cloves, peeled
1 red onion, minced
1 red chile, minced
1/2 cup chopped herbs (coriander, parsley, dill and chives)
2 tablespoons balsamic vinegar
2 cups roasted peanuts

Steps:

  • Cut sweet potato into chunks, toss in a little olive oil place in large baking dish with garlic cloves.
  • Season to taste with salt and pepper amd bake at 220 Degrees C for 45 minutes to 1 hours.
  • Remove from oven peel garlic and keep warm.
  • Mix red onion, chilli and herbs into potato and garlic.
  • Whisk remaining ingredients including the remaining olive oil, and toss through salad.
  • Lastly top with peanuts and serve, extra herbs and black pepper.
  • Fantastic!

The inspiration for this salad came from a deli at the Granville Island public market, but my version is even better if I do say so myself. Not to mention cheaper. All measurements are approximate.

Number Of Ingredients 10

3 -4 medium yams, peeled and cubed
3 -4 roasted garlic (smashed)
1/3 cup caramelized onion
5 -6 slices sun-dried tomatoes, chopped finely
10 leaves fresh basil, shredded
1 dash fresh ground black pepper
1 teaspoon balsamic vinegar
1/4 teaspoon of grated lemon rind
1/4 cup pine nuts, toasted
1/2 cup feta cheese, drained and crumbled

Steps:

  • Roast the yams in a little olive oil in a 375-400 oven until soft and a little brown on the outside, about 30 minutes (depending on how big the cubes are). Cool.
  • Mix remaining ingredients except for the pine nuts and cheese, and toss with the yams. Crumble in the cheese (if the cheese is too soft to crumble, use a fork to help it along; also crumbles better if frozen). Allow to sit in the fridge at least an hour to let the flavours develop (but will last several days in the fridge). Add pine nuts just before serving to keep them crunchy.

1 cup spinach leaves
1/2 cucumber, sliced and quartered

4 pepperoncini peppers, finely chopped
2/3 cup olive oil
1/2 cup red wine vinegar
1 garlic clove, crushed
1 teaspoon salt

Steps:

  • Combine salad ingredients in a large bowl.
  • Combine dressing ingredients in a jar and shake well.
  • Just before serving, shake dressing again and pour over salad. Toss to coat salad.

4 cups lettuce (romaine, red leaf, lettuce and spinach)
1 cup tomatoes, coarsely chopped
1 (15 -16 ounce) can great northern beans, drained (white kidney beans or navy beans)

3 tablespoons red onions, chopped
1 tablespoon olive oil
