RADISH TEA SANDWICHES
The humble radish has its day blended with cream cheese on pumpernickel bread.

Steps:
- Spoon 1 tablespoon cream cheese in center of each slice of bread, spreading to the top and bottom, leaving a 3/4-inch border on sides. Layer half of bread slices with radish slices, overlapping slightly.
- Sprinkle lightly with salt and pepper; top with lettuce and remaining bread slices (cream cheese side down) to make 4 sandwiches. With a serrated knife, trim off crusts; cut each sandwich in half. Serve.
ITALIAN CLUB FINGER SANDWICHES

- Trim all crusts from bread. Spread 4 slices with herb soft cheese. Top each cheese covered slice with 2 slices each of prosciutto, 3 leaves of arugula, thinly sliced tomatoes seasoned with a pinch of salt. Place a completed layer a top another, making 2 stacks each 2 layers high. Set the final trimmed bread slices in place, making 2 triple-decker sandwiches. Thinly slice and salt the radishes. Pierce a couple of thin slices of radish on each toothpick as you place 4 toothpicks in each sandwich. Cut each sandwich into 4 equal parts, cutting the sandwich across evenly on each side. The yield will be 8 triple-decker, square-shaped, "club" finger sandwiches, 2 per portion.
CUCUMBER AND RADISH ENGLISH TEA SANDWICHES
Perfect for a party platter, a light lunch, or afternoon tea, these Cucumber and Radish English Tea Sandwiches are delicious and easy to make. No cooking required and just four ingredients!

Steps:
- Spread one side of each slice of bread with the herb cheese. Top half with the cucumber slices and the other half with the sliced radish. Season with salt and pepper, if desired. Flip each slice with the radishes over on top of the slices with the cucumbers.
- Trim the crust off each side of the sandwiches. Cut the sandwiches in half, and in half again, creating 4 pieces.
- Arrange on a platter individually or stack two pieces togethe and secure with a toothpick.

LAYERED RADISH FINGER SANDWICHES

- In a small bowl cream the butter and stir in the anchovy paste, the scallions, and salt and pepper to taste. Spread one side of each of 3 slices of the bread with some of the scallion butter and top the buttered side of one of the slices with an overlapping layer of the radishes. Top the radishes with another slice of the buttered bread, buttered side down, and butter the top of the slice. Top the butter with an overlapping layer of the radishes and top the radishes with the remaining slice of the buttered bread, buttered side down. Press the sandwich together gently, trim the crusts, and cut the sandwich lengthwise into thirds. Make sandwiches with the remaining bread, butter, and radishes in the same manner. The sandwiches may be made 2 hours in advance and kept wrapped in plastic and chilled.
MINTED RADISH TEA SANDWICHES WITH LEMON MAYONNAISE

ENGLISH TEA FINGER SANDWICHES (3 RECIPES!)
Tea sandwiches are such a fun brunch time snack to serve with or without tea! I like to make these English Tea Finger Sandwiches AHEAD of time when expecting company. It is best to serve them cold (or room temperature) so no fussing with reheating! These sandwiches are ideal for bridal or baby showers or just a small brunch party!

- Prepare each sandwich filling by adding all the ingredients to separate bowls. (3 total) Mix each using a silicone spatula. (they work best!) Keep in mind that using room temperature butter and cream cheese will make mixing much easier!
- Once your 3 fillings are ready, set out your bread slices and start spreading your filling generously onto each side of your bread.
- *Note* I used a TOTAL of 18 slices of bread. I laid out 6 slices for EACH filling. This gave me 3 large sandwiches with EACH filling. (Total of 9.) I then cut each of the 9 finished sandwiches into TWO triangles giving me a total of 18 tea sandwiches triangles to serve or 6 each. If you want to QUARTER your tea sandwiches you can. You should then get twice the amount (36 total).
- Trim the ends of your cucumbers and then cut each into thirds (or half) depending how long your cucumbers are. (The idea is to cut them lengthwise first before you start slicing them down. We want about 4" chunks so that when we slice them, they fit nicely onto your bread. (See photos). Finally, you can slice each chunk into slices about 1/16" thick. Your yield will differ than mine depending upon the size of your cucumbers. Aim for about 4-5 slices per sandwich! (See photos for reference!)
RADISH SANDWICHES
These tasty little sandwiches are great for appetizers, tea parties, ladies luncheons, etc., but my husband ate two full size sandwiches for lunch, and loved them. The recipe is from One of a Kind, a Mobile Junior League community cookbook I received from Sweetpea Burgess in the recent cookbook swap. Note for the World Tour participants - this recipe is included in the British category. These are ideal little sandwiches to be served with tea, as is common in Britain.

- For the filling, finely chop the radishes in the food processor (or hand grater). Place in a large sieve or colander. Press with paper towels to drain and squeeze out any excess liquid.
- Cream the cream cheese and butter together until fluffy (I used the food processor); add drained chopped radishes, parsley, chives, lemon juice, salt and pepper to taste, and cream again.
- Cut crusts from bread and cut into small squares or rounds. Spread with filling, and garnish with sliced or whole radishes coated with coarse salt.
- Chill thoroughly before serving.

- Set the mandoline slicer to the closed position. Put the cut resistant glove on your working hand and glide the trimmed radish over the mandoline blade without applying pressure. Check out the slice, and if necessary click the mandoline blade down to the next setting to make the slices thicker. For the thinnest possible slices, do not apply pressure as you slice.
- Spread a generous layer of softened butter on your sliced bread. The layer of butter needs to be thick enough to hold the radish ruffles in place, so don’t be stingy!
- Fold/ruffle a thin radish slice and pinch it at the edge between your thumb and forefinger. Fold a second radish slice and add it to your thumb and forefinger. Repeat 1-2 more times. Then, take your ruffle bundle and stick the pinched edge/side into the butter. Build until the surface of the sandwich is covered.
