These homemade, made-from-scratch air fryer fish sticks are the best fish sticks you will ever have! This quick recipe uses only 4 ingredients and 15 minutes to cook up fish sticks with tender, fresh insides, and crisp, golden, savory coating on the outside with just one dish to clean up afterwards!

- Cut the filet into "finger" sized sticks. Place the mayo in a medium mixing bowl and drop the fish fingers in the bowl and coat the finger evenly with the mayonnaise.
- Place the breadcrumbs and the grated cheese in a plastic food-safe bag with the fish fingers and toss to coat the fish evenly on all sides.
- Spray the bottom of your air fryer with a light misting of cooking spray and place the fish sticks on the bottom of the air fryer basket, making sure that none of the sticks touch one another. Add another light dusting of cooking spray to the top of the fish sticks.
- Cook at 400*F for 14-16 minutes, or until the internal temperature of your fish sticks is 145*F and your desired level of crispy crunchy coating is achieved. Remove from heat and allow to cool for 1-2 minutes before serving still warm.

- Preheat an air fryer to 400 degrees F (200 degrees C).
- Pat fish dry with paper towels and cut into 1x3-inch sticks.
- Place flour in a shallow dish. Beat egg in a separate shallow dish. Combine panko, Parmesan cheese, parsley, paprika, and pepper in a third shallow dish.
- Coat each fish stick in flour, then dip in beaten egg, and finally coat in seasoned panko mixture.
- Spray the basket of the air fryer with nonstick cooking spray. Arrange 1/2 the sticks in the basket, making sure none are touching. Spray the top of each stick with cooking spray.

- Start by slicing your white fish into long strips.
- Spray your air fryer basket with olive oil.
- Then prepare your three bowls: 1. Breadcrumbs, Italian seasoning, and garlic powder. 2. Egg and half and half 3. Flour

- Meanwhile, get the fish sticks out of the package and pat them dry with a paper towel. Make sure they are thoroughly dry or it will be hard to coat the fish sticks with breadcrumbs later on. Lay them in a single layer in a baking dish.
