4 heads garlic, stem end trimmed by 1/2 inch
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper
1/4 cup plus 2 tblsp. chicken stock or 1/4 cup water
French bread, accompaniment
chopped parsley

Steps:

  • Preheat oven to 500 degrees F.
  • Rub the garlic with olive oil and place the heads, cut-side up, in a small saute pan or baking dish that's just large enough to hold the garlic comfortably.
  • Season the garlic with the salt and pepper and add the stock to the saute pan. Place the saute pan in the oven and roast about 30 minutes, or until the garlic is golden brown on top and the cloves can be easily pierced with the tip of a paring knife. Remove the saute pan from the oven and allow the garlic to cool. When the garlic is cool enough to handle, squeeze the roasted garlic out of the skins. Serve with slices of french bread and garnish with chopped parsley.

4 large heads of garlic, (about 1-pound)
1 1/2 tablespoons extra-virgin olive oil, plus more for storing
1/4 teaspoon kosher salt

Steps:

  • Bruschetta:
  • Grill or toast the bread under a broiler, on both sides, until golden. Brush with the oil and sprinkle with salt. Spread with the roasted garlic.

  • Roasted Garlic:
  • Preheat oven to 350 degrees F.
  • Rub off any loose papery skin from the garlic, and trim about a 1/2 inch off the top of each head, to expose the cloves. Set the garlic snugly in an ovenproof baking dish just large enough to hold them. Drizzle with the oil and season with the salt and pepper. Cover with foil and cook for about 40 minutes. Remove foil and bake until the heads are soft and the tops golden brown, another 30 minutes. Allow garlic to cool.
  • Serve the garlic whole for a rustic garnish, or break the heads apart and squeeze the garlic out of skins to eat the whole clove. To store the garlic, place it in a container and cover with olive oil. Store in the refrigerator for up to a week. Use skinned roasted garlic to season mashed potatoes, in salad dressings, to flavor and thicken sauces, or on sauteed or roasted vegetables.

Steps:

  • Preheat the oven to 350°F.
  • Cut about a half inch off the top of the garlic bulb.
  • Place the bulb in a small baking dish. Drizzle the top with the olive oil.
  • Cover the dish with aluminum foil, and bake for 1 hour.
  • Set the butter out to soften as you put the garlic in the oven.
  • When the garlic is done, let it cool enough to handle. You should be able to just squeeze the cloves out of the husk.
  • Put the softened butter and the garlic cloves in a mixing bowl, and mix together until thoroughly integrated.

  • Heat the oven to 180C/160C fan/gas 4. Cut the top off the garlic bulb, exposing the tops of the garlic cloves. Put on a small square of foil, and rub with the olive oil. Season with salt and pepper. Scrunch up the foil to seal in the bulb.
  • Roast for 25-30 mins until soft when pressed, and the papery casing is light golden. Leave to cool for a few minutes before squeezing the soft roasted garlic out of their shells. Alternatively, take off all the papery casing and remove the cloves individually.
