- Using on/off turns, coarsely chop cranberries in processor. Transfer cranberries to medium bowl. Mince half of kumquats, removing any seeds. Thinly slice remaining kumquats, removing any seeds. Mix all kumquats, sugar, and ginger into chopped cranberries (as mixture sits, sugar will dissolve). Cover relish and refrigerate at least 4 hours. (Cranberry relish can be prepared 1 week ahead. Cover tightly and keep refrigerated.)
GINGERED CRANBERRY RELISH
If you've never made cranberry relish, you are going to be amazed at how quick and easy it is. The entire process takes about 15 minutes. In this version, I have avoided using oodles of refined sugar by cooking the cranberries in orange juice concentrate and adding some raisins. Crystallized ginger gives this relish special zest.

- Blend the orange concentrate into the water in a heavy-bottomed, 3-quart pot. Set over high heat. Add the cranberries, raisins, and 1/3 cup ginger.
- When the liquid starts to boil, lower the heat slightly and boil uncovered, stirring occasionally, until most of the cranberries pop and the mixture thickens, 5 to 7 minutes.
- Transfer the mixture to a serving bowl or glass storage container. Stir in the remaining 2 tablespoons of crystallized ginger, orange zest, and agave syrup or honey to taste, if desired. When the mixture has cooled, stir in the pecans. Chill until needed, up to 5 days. Serve at room temperature.

- With a zester or a grater, remove the zest from the grapefruit and the tangerine; set aside.
- Peel the 2 fruits and cut into segments, removing all pith, seeds and membranes.
- Transfer to a food processor and swirl around until finely chopped; place in a large bowl.
- Add the cranberries (no need to thaw if frozen) and ginger to food processor and pulse until chopped; be careful not to overprocess.
- Add cranberry-ginger mixture to citrus fruit in bowl and stir in sugar, lime juice and zest; stir until sugar is dissolved.
- Taste and add more sugar if you feel it's necessary.

- Using a large, sharp knife, dice the dates and crystallized ginger into small, uniform dice. Thinly slice the scallions and then mince them finely.
- Put the cranberries in the bowl of a food processor and pulse a few times until they are in rough pieces. Add the honey, lime juice, jalapeño, cilantro, fresh ginger, salt, and pepper and continue to pulse until finely diced. Add the dates, crystalized ginger, and scallions and pulse once or twice to combine.
- Refrigerate overnight to allow the flavors to blend thoroughly. Serve at room temperature.

- Using a sharp knife, peel the oranges, removing all of the bitter white pith. Working over a bowl, cut in between the membranes to release the sections. Squeeze the juice from the membranes into the bowl. Cut the orange sections into 1-inch pieces.
- In a large saucepan, combine the cranberries and water with 1/4 cup of orange juice from the bowl and bring to a simmer over moderate heat. Cover and cook over moderately low heat, stirring occasionally, until the cranberries have popped, about 10 minutes. Add the vinegar, both sugars, the ginger and orange pieces and cook over moderate heat, stirring occasionally, until thick, about 5 minutes. Let cool slightly, then season with salt and pepper. Serve warm or at room temperature.
