CURRIED SPLIT PEA SOUP
Steps:
- Place the butter into a large (4 to 6-quart) saucepan over medium-low heat. Once melted, add the onion and a generous pinch of salt and sweat for 2 to 3 minutes. Add the garlic and continue to sweat for an additional 1 to 2 minutes, making certain not to allow onions or garlic to brown.
- Add the peas, chicken broth and curry powder. Increase heat to high and bring to a boil. Reduce heat to low, cover and cook at a simmer until the peas are tender and not holding their shape any longer, approximately 45 to 50 minutes. Taste and adjust seasoning as needed. Using care and a stick blender, puree the soup until the desired consistency. Watch out for hot splatters.

- Rinse peas, add water, and bring to a boil simmering for 2 minutes.
- Remove from heat, cover and let sit for 1 hour.
- Add remaining ingredients and heat to a boil.
- Reduce heat, simmer, covered 2 1/2 to 3 hours or until peas are soft.
- Remove bone and slice up meat adding it to soup.
- Enjoy!

- In a large soup pot, combine split peas, carrots, celery and 1 onion with water.
- Bring to a boil.
- Stir in barley, bay leaf and garlic, if using.
- Reduce heat and simmer partly covered for 1 1/2 to 2 hours.
- Stir occasionally.
- Add salt and pepper to taste.
- In a nonstick skillet, heat oil.
- Saute the remaining 2 onions on medium heat until well-browned, about 6 to 8 minutes.
- Add onions to soup along with dill.
- Simmer soup 5 to 10 minutes longer.
- Discard bay leaf.
- Reheats and/or freezes well.
- If soup gets thick, add a little water or broth.

- Drain the peas and bring to the boil in a pan of salted water. Cook for 10 mins, drain, rinse and put in a slow cooker with the remaining ingredients except the dill. Cover and cook on low for 6-8 hrs, or until everything has softened. Remove and discard the thyme.
- Stir, adjusting the soup with 250-300ml boiled water as needed. Season to taste. Sprinkle over the dill and serve with rye bread, mustard and pickle, if you like.

Steps:
- In large pot over low heat, add oil, onion, celery, carrot, sweet potatoes, garlic, pepper, oregano, thyme, and paprika, stirring to combine. Cook 5-10 minutes till onions, and celery start to soften.
- Add split peas, stock, water, bouillon, bay leaves, and bring to a boil.
- Reduce heat to low, cover and simmer 60 minutes.
- At this point you can serve it as is for chunky soup or puree it in batches for a creamer soup.

- Heat oil in heavy large pot over medium-high heat. Add leek and bay leaf. Sauté until leek wilts, about 3 minutes. Add split peas and stir to coat. Add 5 1/4 cups broth; bring to boil. Reduce heat to medium-low. Cover and simmer until split peas are just tender, about 35 minutes. Remove from heat. Transfer 1 cup soup solids, bay leaf, and remaining 1/2 cup broth to blender. Add petite peas and 4 tablespoons dill. Puree until smooth. Return puree to soup. Season to taste with salt and pepper. Ladle into bowls. Sprinkle with remaining 1 tablespoon dill.

- In a large cooking pot, heat olive oil on medium-high heat.
- Add onion and cook uncovered for 5 minutes, stirring often, until onion is softened and starting to brown.
- Reduce heat to medium and add carrots, celery, garlic, yellow split peas, chicken broth and cook uncovered for about 5 minutes, stirring occasionally until carrots start to soften.

This is a wonderful thick vegetarian pea soup for those who love the taste of dill. I found it in a book from The Heart Rock Cafe in Winnipeg called Straight from the Heart! Volume 1. I used green split peas, but you could probably use yellow instead.

- In a large saucepan, over high heat, bring stock to boil.
