PAPRIKA AND ORANGE SCENTED MASHED SWEET POTATOES

- Peel and coarsely chop the sweet potatoes. Cover with water and bring to a boil in a large pot. Salt the water and cook the sweet potatoes until tender, 8 to 10 minutes. Drain and return the sweet potatoes to the hot pot. Mash the potatoes with the stock and butter. Add in the orange juice and 2 tablespoons of the orange zest. Then add in the thyme, paprika, cinnamon and some pepper. Taste and adjust the seasoning. Cover and remove from the heat and serve immediately. To keep warm, create a water bath by placing the pot of mashed potatoes in 1 inch gently simmering water in larger pot or deep skillet.
MASHED POTATOES WITH SMOKED PAPRIKA AND CHIVES

- For the smoked paprika butter: Combine the butter, paprika, salt and pepper in a bowl. Roll into a log, wrap in waxed paper or parchment and refrigerate until very cold.
- For the mashed potatoes: Put the potatoes in a large pot, cover by 2 inches with cold water and add 2 tablespoons kosher salt. Bring to a boil and cook until fork-tender, about 35 minutes. Drain the potatoes, run through a food mill set over a large bowl and rice until very fine.
- Combine the milk and heavy cream in a small saucepan and bring to a simmer over low heat.
- Put the potatoes back in the pot, place the pot back over low heat and, using a wooden spatula, stir the potatoes to dry them out. Begin adding the cold paprika butter little by little, vigorously stirring with a wooden spoon until the butter is incorporated. (Adding the cold butter slowly will create an emulsion.) Slowly stir in the warm milk mixture bit by bit, and then switch to a whisk and whisk until light and fluffy. Fold in the chives and season with salt and pepper.
WHIPPED POTATOES PAPRIKA
This is another adaptation of a recipe from my favorite cookbook, The Creative Cooking Course by C. Turgeon. It's a nice variation of standard mashed potatoes, and the paprika really adds a nice look and flavor. Prep and cook times are approximate as these will vary.

- Boil peeled, cubed potatoes in salted water until tender.
- Drain water from potatoes.
- Mash potatoes.
- Add cream cheese and butter.
- Stir to mix.
- Add milk to make desired consistency.

- Heat oven to 200C/180C fan/gas 6. Add the potatoes to a pan of cold salted water, bring to a boil, then simmer for 5 mins until partly tender. Drain and steam dry for a few mins in a colander.
- Return the potatoes to the saucepan, and add the oil, paprika and plenty of salt and pepper. Cover with a lid, then shake the pan around to roughen the edges of the potatoes and thoroughly coat them in the paprika and oil. Tip the potatoes into a large roasting tin, making sure they are evenly spaced apart. Scrape in all the fluffy potato mess - these make the best crispy bits!
- Roast the potatoes for 1 hr 15 mins, turning halfway, until extremely fluffy and crisp.

SMOKED PAPRIKA POTATOES RECIPE BY TASTY
These potatoes make the perfect side dish to accompany what you're throwing on the grill this summer. They're the same potato wedges you ate as a child, but grilled and seasoned to perfection!

- Cut the potatoes into wedges. Add the wedges to a pot of cold salted water, then bring to a boil. Cook until the potatoes are almost tender, about 10 minutes, then drain. Spread the potatoes on a baking sheet.
- In a small bowl, mix together the paprika, salt, and pepper.
- Drizzle the potatoes with 1 tablespoon of olive oil and season with the spice mixture.
- Heat a grill pan over medium-high heat. Grease the grill with grapeseed oil. Add the potatoes to the hot grill and cook until grill marks form on both sides, about 2 minutes per side.
- Remove the potatoes from the grill, drizzle with the remaining tablespoon of olive oil, and garnish with more paprika and the parsley.
- Serve immediately or transfer to a 175°F (80°C) to keep warm until ready to serve.

- Sauté the onions for 5 minutes.

- Cut potatoes into large chunks and either pressure cook 8 minutes or boil until fork tender.
- Transfer potatoes to large mixing bowl.
- Add remaining ingredients and mix in well. Break up the potatoes into bite size chunks. (You're not mashing the potatoes unless you want to. But this is what Mom dictated so I listen and obey.).
- Taste and adjust seasoning as necessary. Transfer potato mixture to serving bowl.
- Garnish with fresh minced parsley.
- Enjoy!
- NOTE: The leftover potatoes make perfect potato pancakes the next morning for breakfast. Add an egg and some flour to the potato mixture, mix well and fry in a little bit of oil until golden.

Seriously, there aren't words to describe how delicious this is. I first had it in a local gourmet organic restaurant, and couldn't get over how delicious it was. I later found the recipe on the web and was surprised how simple it was. Buying some nice smoked paprika is a MUST, don't even bother trying it without it. The flavor from the smoked paprika combined with the sweetness of the potatoes makes the dish extraordinary. (Don't worry if your grocery store only sells "yams", in north America yams and sweet potatoes are the same thing)

- Pierce washed potatoes, wrap in foil, place on baking tray in oven at 400 degrees for 1 hour or until very tender.
- When cooled just enough to handle, peel off the skin and cut into chunks that fit your food processor or extremely powerful blender.
- Melt the butter and the spices together in the microwave.
- Blend the potato with the melted spiced butter and the cream following the instructions of your processor or blender, serve when blended throughout.
- *I used an extremely high powered blender (a vita mix) and had to stop and stir while pureeing multiple times so as to not burn out the motor. If it is too thick, add some more cream or milk to get it to the consistency you want it. Feel free to add more smoked paprika if you enjoy the flavor as much as I do!
