COUSCOUS WITH OLIVES AND SUN-DRIED TOMATO
A delicate, flavorful dish that will satisfy vegans and carnivores alike! Inspired by my family's deep Coptic Orthodox Christian tradition, this is a great meal alternative during strict fasting times. It contains no animal products or fats, but has enough flavor and visual impact to make you feel like you're not sacrificing a thing! I hope you will enjoy this recipe. Add chicken or prawns to make this vegan dish a carnivorous delight!

In this recipe, light and fluffy lemony couscous gets tossed with feta cheese, sweety drop peppers, castelvetrano olives, and fresh herbs. OUR FAVORITE LEMON HERB COUSCOUS SALAD
We love this light couscous salad - it doubles as a side, can be the main event or works well topped with grilled chicken or Adam's favorite, shrimp! With lots of texture from crisp cucumber, sweet tomatoes, crunchy nuts and raisins, this is certainly one of our favorites. You can even make it ahead of time. See the notes section below for our tips.

COUSCOUS WITH OLIVES AND LEMON
From a saved page of an old Gourmet Magazine. I prefer to use Israeli couscous, the pearl type, however you need to check package directions for additional cooking time. This was a great side dish for "Recipe#60524" Marinated Lamb Chops. I also used kalamata olives and skipped the salt.

- Heat the olive oil in a large saute pan. Add the couscous and toast in the oil for 4-5 minutes, stirring constantly, until golden brown. Carefully add the water (it will spatter), and bring to a low simmer over medium heat. Cook for 8-10 minutes until the pasta is tender and all the water is absorbed. Cool on a sheet pan until room temperature.
- To make the dressing, whisk together the extra virgin olive oil, red wine vinegar, and minced shallot. Season with salt a pepper to taste. You can also combine the dressing in a small jar and shake to combine as detailed in this post on making a basic vinaigrette. Mixing it in a jar makes for easy storage too!
- Place the couscous in a large bowl with the diced preserved lemon, pitted olives, diced tomato, and diced cucumber. Combine with about 2 oz of the dressing to start. Reserve the rest of the dressing for a later salad, or to add more later if needed (if the salad sits sometimes it will absorb the dressing). Add in the fresh herbs and gently fold in the crumbled goat cheese. Check the seasoning and add salt and pepper as needed.
