I experimented with some ingredients I had in my cupboard and was pleasantly surprised with these results. Also, can be served cold, so it's a great make-ahead lunch food!

1 cup couscous
2 cups chicken broth
½ cup dry white wine
2 teaspoons olive oil
2 tablespoons fresh lime juice
1 ½ teaspoons ground cumin
1 clove garlic, minced
1 pound skinless, boneless chicken breast meat - cubed
1 green bell pepper, cut into large chunks
1 red bell pepper, cut into large chunks
1 yellow bell pepper, cut into large chunks
4 green onions, chopped
¼ cup pitted black olives

Steps:

  • Prepare couscous pasta according to package directions, using chicken broth for liquid. Drain and set aside.
  • In a large skillet combine the wine, oil, 1 tablespoon lime juice, 1 teaspoon cumin and garlic; mix all together and add chicken. Simmer over low heat until all liquid has evaporated and chicken juices run clear, 5 to 7 minutes.
  • Remove chicken from skillet and mix in a large bowl with remaining 1 tablespoon lime juice, remaining 1/2 teaspoon cumin, green bell pepper, red bell pepper, yellow bell pepper, green onion and couscous. Garnish with a few black olives per serving.

1 cup regular or whole-wheat couscous, or quinoa
1/2 tsp ground cumin
1 1/2 tbsp chopped fresh parsley leaves
2 tbsp chopped walnuts
8 oz smoked boneless chicken breast, cut into 3/4-inch cubes
2 cups red seedless grapes, halved
2 cups green seedless grapes, halved
1/4 cup fresh pink grapefruit juice
1 tbsp fresh lemon juice
1/4 cup fresh lime juice
1/2 cup packed fresh basil leaves, cut into thin strips
1/2 tsp curry powder
1 bunch arugula (about 2 cups packed), coarse stems discarded

Steps:

  • Cook couscous (or quinoa) according to package directions. Stir in cumin and parsley and salt to taste. Let cool to room temperature. To toast walnuts, heat a dry pan over medium heat. Add walnuts and shake or stir 6 or 7 minutes, until lightly browned. In a bowl, toss chicken, grapes, juices, basil, and curry and salt and pepper to taste. Arrange arugula on 4 plates and divide couscous among them. Top with chicken mixture and drizzle remaining liquid over salads. Sprinkle salads with walnuts.

This light and fruity salad is a great picnic dish, and can be served as a lunch or light dinner.

4 cooked chicken thighs ((Or breasts, or rotisserie chicken meat))
2 cups Israeli couscous
1 1/2 cups chicken broth
1 1/2 cups water
1/2 chicken bouillon cube
1 tbsp olive oil
1 cup mixed berries (I used frozen, however if you have fresh berries, great!)
1 grapefruit, peeled with as much white pith removed as possible
1 5.3oz plain greet yogurt
1/8 tsp vanilla extract
1 tsp sugar
the juice of 1/4 of a lemon ((about 2 tbsp))

Steps:

  • If using frozen fruit, preheat the oven to 350.
  • Cook the couscous: in a large pot, heat water and chicken broth until boiling. Add the chicken bouillon cube and the couscous and stir. Season with pepper. Place a lid on the couscous and continue to simmer until all of the liquid is fully absorbed, about 35 minutes.
  • While the couscous is cooking, prepare the yogurt sauce. Combine yogurt, vanilla extract, sugar and lemon juice in a bowl and stir until combined. Place in the fridge until use.
  • Now prepare your fruit: If you are using fresh fruit, clean it and remove any stems/pith. If you are using frozen fruit, place it on parchment paper and heat in the oven at 350 degrees for 10 minutes, turning once.
  • When the couscous is done, pour it into a large bowl and break up any clumps. Add your sliced cooked chicken thighs to the bowl and your fruit. Toss to combine and serve with a dollop of yogurt sauce.

2 teaspoons ground cinnamon, divided

3/4 cup mixed chopped dried fruit (such as currants, apricots, and prunes)
1 14-ounce can low-salt chicken broth
1 cup couscous
2 teaspoons finely chopped fresh mint, divided

Steps:

  • Preheat oven to 375°F. Sprinkle chicken with salt, pepper, 1 teaspoon cinnamon, and 1/2 teaspoon ginger. Heat oil in large ovenproof skillet over medium-high heat. Add chicken pieces, skin side down, and cook until skin is brown, about 8 minutes. Turn chicken and transfer skillet to oven. Roast chicken until thermometer inserted into thickest part of thigh registers 175°F, about 15 minutes. Transfer chicken to plate; tent with foil.
  • Add onion to drippings in same skillet; sauté onion over medium-high heat until beginning to brown, about 5 minutes. Add dried fruit and remaining 1 teaspoon cinnamon and 1/2 teaspoon ginger; stir to coat. Add broth; bring to boil. Remove skillet from heat, stir in couscous and 1 teaspoon mint. Cover and let stand 5 minutes. Season couscous to taste with salt and pepper.
  • Mound couscous on platter; place chicken atop couscous. Sprinkle with 1 teaspoon mint and serve.

This recipe comes from "Simply Classic" by The Junior League of Seattle. It is great for hot summer days, fix it in the morning and dinner is ready whenever you are. I double the amount of currants called for and sometimes leave out the chicken, it is equally good with or without it. It says it serves 6, but I find it serves much more than that, it makes a large amount! The one hour cooking time is for the minimum chill time.

6 chicken breast halves, skinned
4 cups chicken stock
2 cups couscous
1 tomatoes, chopped
3 green onions, thinly sliced
1 (15 ounce) can garbanzo beans, drained
1/2 cup red bell pepper, diced
1/2 cup dried currant
1/4 cup parsley, minced
1/2 cup lemon juice, freshly squeezed
6 tablespoons olive oil
1 clove garlic, minced
1/4 teaspoon cumin
1/4 teaspoon curry powder
1/4 teaspoon Tabasco sauce
salt
fresh ground pepper
1/2 cup pine nuts, toasted

Steps:

  • Simmer chicken in stock in a large skillet until cooked through, 15 to 20 minutes.
  • Remove chicken from skillet and set aside.
  • Strain stock and return to skillet.
  • Bring stock to a boil and stir in couscous slowly.
  • Mix well, cover and remove from heat.
  • Let stand until all of the stock is absorbed, about 15 minutes.
  • Fluff with a fork and spread out on a baking sheet to cool.
  • Once cool, remove to a large bowl.
  • Remove chicken from bone and cut up into small pieces.
  • Add to bowl with couscous.
  • Mix in tomato, green onions, garbanzo beans, red pepper, currants and parsley.
  • Dressing: Blend lemon juice, oil, garlic, cumin, curry powder and Tabasco in a small bowl and season to taste with salt and pepper.
  • Mix dressing with couscous mixture and toss well.
  • Refrigerate before serving, one hour up to one day.
  • Sprinkle with toasted pine nuts just before serving.

12 ounces boneless skinless chicken breasts
1 (10 ounce) package couscous
1 cup chopped fresh basil
1/4 cup extra virgin olive oil
3 tablespoons sherry wine vinegar
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 garlic clove, minced
1 1/2 cups halved cherry tomatoes
1 cup sliced green onion
1 (15 1/2 ounce) can chickpeas, drained and rinsed (garbanzo beans)

Steps:

  • Bring broth to a boil in a medium saucepan.
  • Add chicken; cover, reduce heat, and simmer 10 minutes or until chicken is done.
  • Remove chicken using a slotted spoon; set aside.
  • Cool slightly, and coarsely chop.
  • While chicken cools, add couscous to broth; stir well.
  • Cover and let stand 10 minutes.
