- In a medium bowl, combine milk and lemon juice. Add cod fillets, and marinate 5 minutes. Heat oil in large heavy skillet over medium heat.
- In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.
- Fry cod fillets in hot oil until golden brown.

- Gather the ingredients. Heat the oven to 200 F.
- Place a rack in a large baking pan and set it aside.
- Wash the okra and drain thoroughly.

- Prep: Preheat the oven to 410°F. Place a dark-colored baking sheet or pan in the oven to heat up (you want it to get really hot).
- Make egg mix: In a medium bowl, whisk together the egg and the buttermilk.
- Make dry mix: In a separate bowl, mix the flour, cornmeal, baking powder and seasoning together.
- Coat chicken: Dip the chicken pieces in the flour, coating evenly and shaking off any extra flour. Next, coat the chicken pieces in the egg mixtures. Then, dip them into the flour again, this time coating very well.
- Put chicken on pan: Take the baking tray out of the oven and melt the butter on it. Place the coated chicken pieces on the tray. Make sure there's butter underneath every chicken piece, or it will stick! Add more butter if it's not enough to cover your pan!

- Preheat the oven 350 degrees F.
- In a medium bowl, whisk 1/2 cup of the flour with the cornmeal, Cajun spice, and 1/2 teaspoon salt. Put the remaining 1 cup flour, buttermilk, and the cornmeal mixture respectively in 3 shallow dishes. Season the buttermilk with hot sauce, to taste.
- With the flat side of a cook's knife or the smooth side of a meat-pounder, pound each breast to equal thickness. Pat the chicken breasts dry and season with salt.
- Lightly coat each breast in flour and shake off any excess. Dip each breast into the buttermilk to coat and remove, shaking slightly so the excess buttermilk drains back into the bowl. Dredge the chicken in the cornmeal mixture, shaking off any excess coating. Lay the chicken on a piece of waxed paper.
- Heat a large (12-inch) cast iron skillet over medium heat with about 1/2 inch of oil. Lay 2 chicken breasts smooth-side down in the pan and cook until golden brown, 3 to 4 minutes. Flip and cook 3 to 4 minutes more. Drain chicken on a paper towel. Repeat with remaining chicken.
- Place all chicken breasts on a rack over a baking sheet and bake until firm to the touch, 6 to 8 minutes. Season with salt, and serve immediately with mustard mayonnaise or sliced tomatoes.

- 1. Gather these tools: cutting board; chef's knife; wet and dry measuring cups; measuring spoons; pastry brush; resealable plastic bag; shallow baking dish; sheet pan
- 2. Combine chicken and buttermilk in a resealable plastic bag and refrigerate for 1-2 hours.
- 3. Preheat oven to 400oF degrees. Brush a sheet pan with vegetable oil and set aside.

- For the crab cakes: Place a medium cast-iron pan over medium heat. Add the butter and shallots and sweat until softened and just starting to brown, 2 to 3 minutes. Set aside.
- Meanwhile, combine the crab, cracker crumbs, parsley, dill, softened shallots and a sprinkle of salt and pepper in a bowl. Set aside. Mix the egg, creme fraiche, mayonnaise and Dijon in a medium bowl until combined. Slowly add the wet ingredients to the crab and mix well until incorporated. Form 6 equal sized balls and flatten into discs.
- For the dredge: In a bowl, combine the cornmeal, smoked paprika, white pepper, salt, seafood seasoning and celery salt. Gently coat the exterior of each crab cake disc in the cornmeal mixture and place on a tray. Chill the crab cakes in the refrigerator for approximately 1 hour or up to 4 hours to help them stay together while cooking.
- Preheat the oven to 350 degrees F.
- For the celery root remoulade: Meanwhile, thinly slice the celery root and apples on a mandoline and cut into matchsticks. Place both in a large bowl and cover with the lemon juice to coat so they do not brown or oxidize. In a medium bowl, combine the mayonnaise, creme fraiche, hot sauce, tarragon, Dijon and salt, then season with the pepper. Add the creme fraiche mixture to the celery root and apples and gently toss to combine. (For a thinner sauce, feel free to add more mayonnaise and adjust seasoning.)
- In a 12-inch cast-iron skillet on medium heat, then add the olive oil and butter and heat until hot. Place the crab cakes in the skillet and sear to crispy, 4 to 5 minutes per side. Transfer the cast iron to the oven for 5 minutes to warm through.
- For the pea shoot salad: Add the pea shoots and radishes to a medium bowl. Drizzle with the olive oil and lemon juice to coat. Add the mustard seeds, then season with salt and pepper and mix gently.
- Spread a generous amount of remoulade on a platter. Place the crab cakes on top and garnish with the salad.

- 1. Whether you are using fresh or frozen catfish filets make sure that they are completely thawed. Make sure to remove anything red on the meat by shaving it off with a good sharp knife. Pat dry with a paper towel.
- 2. Put oil in a Dutch oven or similar deep cooking pot. Heat it until when you put in the end of a wooden spoon handle and see it bubble around the handle.
- 3. While the oil is heating, mix all of the dry ingredients it a flat bottom bowel. Take each filet and press it into the cornmeal mixture. Cover the top surface with mixture and press in firmly. Flip and repeat. Place filet on a plate while you're waiting for the oil to heat. This allows the oil in the fish to better absorb the coating. It help lesson the amount of batter that that falls to the bottom of the pan. (You can make up and add more coating as needed.)
- 4. Cook each side about 3-4 minutes until coating is dark yellow not quite brown. When you insert a fork it should be easy to insert and remove. This is a good indicator of doneness.

- Cornflour (or Polenta flour) This corn product is basically just very finely ground cornmeal. If you don’t like the crunch of cornmeal, this provides the same corn flavor but is finer textured.
- Corn grits. Grittier than cornmeal so not going to be your best choice for lighter airier recipes, but are excellent for pancakes or cornbread. Either regular grits or hominy grits can be used.
- Polenta. Similar to grits but a little sweeter, polenta is basically just coarsely ground cornmeal. The main difference is that polenta is made only from yellow corn, specifically Italian eight-row flint corn.
- Corn flakes. Very likely to be in the cupboard and ready for a cornmeal emergency. Once crushed, these will stand in very nicely for cornmeal in recipes that need a little crunch and a nice corn flavor.
- Tortilla chips. Sounds a bit bizarre, but what could be easier? After all, they are made from corn. Just pop into your food processor and grind. They will work in a pinch!
- Masa harina. Another type of cornmeal made from corn kernels that have been cooked in lime water to remove the outer hull prior to grinding ( dried and ground hominy ).
- Hominy grits. Similar in flavor and texture but slightly coarser than cornmeal. During the milling process, the corn is treated with lye (nixtamalization) which softens the kernels and aids in removing the hull.
- How To Make Homemade Cornmeal. You can also make homemade cornmeal using popcorn, fresh, or frozen corn! If you don't have a dehydrator, the plain popcorn will work best for you.
- Semolina. This is my absolute favorite non-corn-based substitute to use for so many reasons! Semolina is a high-protein ( and high-gluten ) flour made from hard durum wheat middlings.
- Ground oats. If you don’t necessarily want the corn flavor, this would be a perfect substitute for texture.
