1/2 cup dry bread crumbs
1/2 cup cornmeal
1/3 cup grated Parmesan cheese
1/4 cup minced fresh parsley or 4 teaspoons dried parsley flakes
3/4 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon pepper
1/2 cup buttermilk
1 broiler/fryer chicken (3 to 4 pounds), cut up and skin removed
1 tablespoon butter, melted

Steps:

  • In a large shallow dish, combine the first 9 ingredients. Place the buttermilk in a shallow bowl. Dip chicken in buttermilk, then dip in bread crumb mixture, a few pieces at a time, and turn to coat. , Place in a 13x9-in. baking pan coated with cooking spray. Bake at 375° for 10 minutes; drizzle with butter. Bake until juices run clear, 30-40 minutes longer.

½ cup milk
1 tablespoon lemon juice
4 (3 ounce) fillets cod
1 cup oil for frying
⅓ cup cornmeal
⅓ cup all-purpose flour
1 teaspoon paprika
½ teaspoon ground black pepper
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon dried thyme
⅛ teaspoon cayenne pepper

Steps:

  • In a medium bowl, combine milk and lemon juice. Add cod fillets, and marinate 5 minutes. Heat oil in large heavy skillet over medium heat.
  • In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.
  • Fry cod fillets in hot oil until golden brown.

2 tablespoons yellow cornmeal
1 tablespoon cumin seeds, toasted and coarsely ground
1 1/2 teaspoons olive oil

Steps:

  • Preheat oven to 350°F.
  • Pat pork dry and season with salt and pepper. Stir together cornmeal and cumin and transfer to a plate. Turn pork in cornmeal mixture to coat well and discard any remaining mixture.
  • Heat oil in a 10-inch nonstick skillet until hot but not smoking and brown pork, turning, about 3 minutes. Transfer pork to a shallow baking pan and roast in middle of oven until a thermometer inserted diagonally at least 2 inches into pork registers 155°F, 30 to 45 minutes. Let stand, loosely covered, 10 minutes. Cut pork into 12 slices (about 1/4 inch thick).

  • Gather the ingredients. Heat the oven to 200 F.
  • Place a rack in a large baking pan and set it aside.
  • Wash the okra and drain thoroughly.
  • Cut off the stem ends of the okra and then cut the pods crosswise into 1/2-inch rounds.
  • Heat the oil in a deep fryer or deep heavy saucepan to 370 F to 375 F.
  • In a medium bowl, whisk together the eggs and hot sauce; add okra and stir to coat all pieces thoroughly.

1 cup all purpose flour
4 tablespoons coarse cornmeal
1 teaspoon baking powder

2 pounds skinless boneless chicken breast (cut into pieces (I do 3-4 per breast))

  • Prep: Preheat the oven to 410°F. Place a dark-colored baking sheet or pan in the oven to heat up (you want it to get really hot).
  • Make egg mix: In a medium bowl, whisk together the egg and the buttermilk.
  • Make dry mix: In a separate bowl, mix the flour, cornmeal, baking powder and seasoning together.
  • Coat chicken: Dip the chicken pieces in the flour, coating evenly and shaking off any extra flour. Next, coat the chicken pieces in the egg mixtures. Then, dip them into the flour again, this time coating very well.
  • Put chicken on pan: Take the baking tray out of the oven and melt the butter on it. Place the coated chicken pieces on the tray. Make sure there's butter underneath every chicken piece, or it will stick! Add more butter if it's not enough to cover your pan!
  • Bake chicken: Bake for 10-12 minutes, carefully flip and bake for another 5-10 minutes (depending on how thick your chicken pieces are). IF THE CHICKEN STICKS: Do NOT just flip it! Use a spatula to carefully loosen it from the pan, then flip. Otherwise the breading will fall off. Finish by broiling the chicken until it turns golden brown and crispy.

1 cup yellow cornmeal
2 tablespoons Cajun spice mix
Kosher salt
1 1/2 cups buttermilk
1/2 to 1 teaspoon hot sauce
4 boneless skinless chicken breast, each about 6 ounces
1/3 to 1/2 cup oil, for shallow frying
Serving suggestions: Mayonnaise blended with mustard, to taste, or sliced tomatoes

Steps:

  • Preheat the oven 350 degrees F.
  • In a medium bowl, whisk 1/2 cup of the flour with the cornmeal, Cajun spice, and 1/2 teaspoon salt. Put the remaining 1 cup flour, buttermilk, and the cornmeal mixture respectively in 3 shallow dishes. Season the buttermilk with hot sauce, to taste.
  • With the flat side of a cook's knife or the smooth side of a meat-pounder, pound each breast to equal thickness. Pat the chicken breasts dry and season with salt.
  • Lightly coat each breast in flour and shake off any excess. Dip each breast into the buttermilk to coat and remove, shaking slightly so the excess buttermilk drains back into the bowl. Dredge the chicken in the cornmeal mixture, shaking off any excess coating. Lay the chicken on a piece of waxed paper.
  • Heat a large (12-inch) cast iron skillet over medium heat with about 1/2 inch of oil. Lay 2 chicken breasts smooth-side down in the pan and cook until golden brown, 3 to 4 minutes. Flip and cook 3 to 4 minutes more. Drain chicken on a paper towel. Repeat with remaining chicken.
  • Place all chicken breasts on a rack over a baking sheet and bake until firm to the touch, 6 to 8 minutes. Season with salt, and serve immediately with mustard mayonnaise or sliced tomatoes.

4 boneless, skinless chicken breasts
2 c lowfat buttermilk
3 Tbsp vegetable oil
1 c cornmeal
1 tsp kosher salt
1 tsp paprika
1/2 tsp cayenne pepper

Steps:

  • 1. Gather these tools: cutting board; chef's knife; wet and dry measuring cups; measuring spoons; pastry brush; resealable plastic bag; shallow baking dish; sheet pan
  • 2. Combine chicken and buttermilk in a resealable plastic bag and refrigerate for 1-2 hours.
  • 3. Preheat oven to 400oF degrees. Brush a sheet pan with vegetable oil and set aside.
  • 4. In a shallow baking dish, mix the cornmeal, salt, paprika, and cayenne pepper. Shake well to combine. Remove one piece of chicken from the buttermilk and shake off any excess liquid. 1 bunch breakfast radishes, sliced paper thin

Steps:

  • For the crab cakes: Place a medium cast-iron pan over medium heat. Add the butter and shallots and sweat until softened and just starting to brown, 2 to 3 minutes. Set aside.
  • Meanwhile, combine the crab, cracker crumbs, parsley, dill, softened shallots and a sprinkle of salt and pepper in a bowl. Set aside. Mix the egg, creme fraiche, mayonnaise and Dijon in a medium bowl until combined. Slowly add the wet ingredients to the crab and mix well until incorporated. Form 6 equal sized balls and flatten into discs.
  • For the dredge: In a bowl, combine the cornmeal, smoked paprika, white pepper, salt, seafood seasoning and celery salt. Gently coat the exterior of each crab cake disc in the cornmeal mixture and place on a tray. Chill the crab cakes in the refrigerator for approximately 1 hour or up to 4 hours to help them stay together while cooking.
  • Preheat the oven to 350 degrees F.
  • For the celery root remoulade: Meanwhile, thinly slice the celery root and apples on a mandoline and cut into matchsticks. Place both in a large bowl and cover with the lemon juice to coat so they do not brown or oxidize. In a medium bowl, combine the mayonnaise, creme fraiche, hot sauce, tarragon, Dijon and salt, then season with the pepper. Add the creme fraiche mixture to the celery root and apples and gently toss to combine. (For a thinner sauce, feel free to add more mayonnaise and adjust seasoning.)
  • In a 12-inch cast-iron skillet on medium heat, then add the olive oil and butter and heat until hot. Place the crab cakes in the skillet and sear to crispy, 4 to 5 minutes per side. Transfer the cast iron to the oven for 5 minutes to warm through.
  • For the pea shoot salad: Add the pea shoots and radishes to a medium bowl. Drizzle with the olive oil and lemon juice to coat. Add the mustard seeds, then season with salt and pepper and mix gently.
  • Spread a generous amount of remoulade on a platter. Place the crab cakes on top and garnish with the salad.

  • Combine first 4 ingredients in a shallow bowl. Put egg whites in another shallow bowl. Dip each fish fillet in cornmeal mixture, then in egg whites, then again in cornmeal mixture. Place fillets on a plate; cover with plastic wrap and refrigerate 10 minutes. Heat oil in a large nonstick skillet. Add fillets and cook over medium-high heat, 2 to 3 minutes per side. I learned this from a friend's grandpa and adapted it a bit for modern tastes. My friends and neighbors who've hated catfish love my recipe and even eat it cold.

6 catfish filets
1 1/2 c yellow cornmeal
6 c canola oil
2 tsp garlic powder
4 tsp old bay seasoning
3 tsp lemon pepper

Steps:

  • 1. Whether you are using fresh or frozen catfish filets make sure that they are completely thawed. Make sure to remove anything red on the meat by shaving it off with a good sharp knife. Pat dry with a paper towel.
  • 2. Put oil in a Dutch oven or similar deep cooking pot. Heat it until when you put in the end of a wooden spoon handle and see it bubble around the handle.
  • 3. While the oil is heating, mix all of the dry ingredients it a flat bottom bowel. Take each filet and press it into the cornmeal mixture. Cover the top surface with mixture and press in firmly. Flip and repeat. Place filet on a plate while you're waiting for the oil to heat. This allows the oil in the fish to better absorb the coating. It help lesson the amount of batter that that falls to the bottom of the pan. (You can make up and add more coating as needed.)
  • 4. Cook each side about 3-4 minutes until coating is dark yellow not quite brown. When you insert a fork it should be easy to insert and remove. This is a good indicator of doneness.

  • Cornflour (or Polenta flour) This corn product is basically just very finely ground cornmeal. If you don’t like the crunch of cornmeal, this provides the same corn flavor but is finer textured.
  • Corn grits. Grittier than cornmeal so not going to be your best choice for lighter airier recipes, but are excellent for pancakes or cornbread. Either regular grits or hominy grits can be used.
  • Polenta. Similar to grits but a little sweeter, polenta is basically just coarsely ground cornmeal. The main difference is that polenta is made only from yellow corn, specifically Italian eight-row flint corn.
  • Corn flakes. Very likely to be in the cupboard and ready for a cornmeal emergency. Once crushed, these will stand in very nicely for cornmeal in recipes that need a little crunch and a nice corn flavor.
  • Tortilla chips. Sounds a bit bizarre, but what could be easier? After all, they are made from corn. Just pop into your food processor and grind. They will work in a pinch!
  • Masa harina. Another type of cornmeal made from corn kernels that have been cooked in lime water to remove the outer hull prior to grinding ( dried and ground hominy ).
  • Hominy grits. Similar in flavor and texture but slightly coarser than cornmeal. During the milling process, the corn is treated with lye (nixtamalization) which softens the kernels and aids in removing the hull.
  • How To Make Homemade Cornmeal. You can also make homemade cornmeal using popcorn, fresh, or frozen corn! If you don't have a dehydrator, the plain popcorn will work best for you.
  • Semolina. This is my absolute favorite non-corn-based substitute to use for so many reasons! Semolina is a high-protein ( and high-gluten ) flour made from hard durum wheat middlings.
  • Ground oats. If you don’t necessarily want the corn flavor, this would be a perfect substitute for texture.
