Easy and delicious salted oven roasted pecans recipe. These roasted pecans are the perfect appetizer for parties or gatherings. Ready in under 30 minutes!

12 - 16 oz. pecan halves
4 tablespoons salted butter
1 teaspoon kosher salt

Steps:

  • Preheat oven to 275 degrees F.
  • Place pecans in one layer on large cookie sheet.
  • Cut 4 slices of salted butter, 1 tablespoon each.
  • Cut each butter pat into 6 small pieces.
  • Drop butter pieces evenly over pecan halves.
  • Evenly sprinkle the salt over the pecans/butter.
  • Bake for 10 minutes.
  • Remove from oven and stir pecans well until all are coated with butter and salt.
  • Return the pecans to one layer on the cookie sheet and bake for 8 to 10 minutes more.
  • Watch closely at the end so the pecans don't get too done.
  • Remove from oven. Cool on cookie sheet.
  • Store in an airtight container.

This is one of the two longer-cooking breakfast grain dishes this week. It takes about 1 hour 10 minutes in the oven, so it might be more practical for a weekend breakfast. Grits are much like polenta, and traditionally served as a savory dish, often with cheese added. Here I mixed the grits with the higher-protein millet, and liked the texture of the mix as well as the nuttier flavor. I warmed leftovers in my toaster oven and enjoyed this throughout the week.

1/2 cup corn or hominy grits
1/2 cup millet
3/4 to 1 teaspoon salt (to taste)
4 cups water
2 tablespoons butter
2 tablespoons honey or maple syrup, or 1 tablespoon each, plus additional for drizzling
1/3 cup chopped pecans, lightly toasted
Optional: Milk for serving

Steps:

  • Preheat the oven to 350 degrees.
  • Heat a 9- or 10-inch cast-iron skillet over medium-high heat and add grits and millet. Toast, stirring, until grains smell fragrant, a bit like popcorn, 3 to 5 minutes, and remove from heat. Add the salt and water and stir.
  • Place pan in oven and bake for 50 minutes. Stir in butter and honey or maple syrup and return to oven for 15 to 20 minutes, until the mixture is no longer watery. Remove from heat and serve, topping each bowl with a drizzle of maple syrup and a sprinkling of toasted pecans. Add milk if desired.

1/3 cup pure maple syrup
1/2 teaspoon vanilla extract
1/8 teaspoon fine sea salt
2 cups pecan halves

Steps:

  • Line a baking sheet with parchment paper and set aside.
  • In a pre-heated skillet (medium heat) Stir together maple syrup, vanilla and sea salt. Fold in pecans coating all the pieces with the syrup.
  • Continue to cook until the syrup caramelizes (constantly stir so it doesn't burn). This will take approximately 5 minutes.
  • Place on prepared baking sheet and let cool. Store in an airtight container.

A delicious low fat and EASY dessert to impress! A wonderful mix of ingredients that is great served with home-made ice cream or creme fraiche. These pears cook quite happily in the microwave - as well as the more conventional baking or stove top method too. A recipe I devised for our Bed & Brekafast last Autumn, after a huge harvest of pears from our garden and whilst also trying to find a use for numerous opened packets of dried fruits and nuts!!

4 ripe pears, peeled, cored & halved
1 tablespoon dried cranberries
3 tablespoons maple syrup
3 ounces pecan nuts, broken roughly
ice cream or creme fraiche, to serve

Steps:

  • Microwave method:.
  • Place the peeled, cored and halved pears into a microwaveable dish. Place them cut side down.
  • Scatter the dried cranberries over the pears.
  • Pour 2 tablespoons of the maple syrup over the pears & cranberries & cover with microwaveable cling film.
  • Microwave on High for 3 minutes until softened, stirring half way through.
  • Uncover and leave to cool off slightly for a few minutes.
  • Stir the pecan nuts through the syrup.
  • Spoon into serving dishes making sure EVERYONE gets some nutty syrup & cranberries! (1 pear - 2 halves per person!).
  • Drizzle over the remaining maple syrup.
  • Serve with ice cream or creme fraiche. Yoghurt is nice with this dessert too.
  • Oven baking method:.
  • Pre-heat oven to 200 C or 400°F.
  • Follow recipe as above, making sure the dish is oven proof!
  • Bake for about 45 minutes or until pears are soft but still holding their shape.
  • Mix in nuts as before and serve as before.
  • (These can also be cooked in a deep frying pan, skillet or wok on top of the stove with a lid placed over them; Bring them to a slow boil and then simmer gently for about 30 - 45 minutes. Serve as before.).

1 large egg (or 1 Tablespoon flaxseed)

1/2 cup pure maple syrup, plus
2 tablespoons maple syrup (1/2 cup plus 2 tbsps in all)
6 tablespoons butter (no subs!)
1/2 cup flour
1/2 cup brown sugar, packed (or use 1/2 cup unpacked)
7 tablespoons butter
1/2-1 teaspoon salt
1 1/2 cups chopped pecans
4 lbs sweet potatoes, peeled and cut into about 1/4-inch slices (you can slice them larger but you might have to increase the cooking time slightly)
boiling water, with
1 tablespoon salt

Steps:

  • Set oven to 400 degrees F.
  • Butter a 13 x 9-inch baking dish.
  • In a large pot bring water with about 1 tablespoon salt to a full boil.
  • Add in sweet potatoes and bring back to a boil; simmer/blanch for about 5 minutes (no more than 5 minutes at a boil); drain and rinse under COLD water; pat dry slightly with paper towels.
  • Arrange the potatoes in the buttered dish, overlapping slighty.
  • Sprinkle with about 1/2 - 1 teaspoon salt.
  • Pour the maple syrup over potatoes in the dish.
  • Dot with about 6 tablespoons butter.
  • Cover with foil, and bake until the potatoes are ALMOST tender (about 25-30 minutes).
  • In a small bowl or cup mix the flour and brown sugar together.
  • Add in 7 tablespoons butter; rub together with fingers until mixture resembles coarse crumbs; mix in pecans.
  • Remove the dish from oven and sprinkle the pecan mixture over over the potatoes.
  • Return to oven (uncovered) to bake for another 20 minutes.
