COMFORT SOUP (SPINACH & MEATBALLS)
This simple soup is a savory dish passed on to me by a childhood friend's mother. She raised 6 kids and knew how to please a hungry crowd (the boys are all over 6'5") on a tight budget in a hurry! Soup is comforting but I have found this one to be especially soothing to body and soul. UPDATE: the meat juices are what make the flavor of the broth, so if the beef is too lean (or not enough is used), there won't be an oily sheen to the soup, which is what gives it the wonderful taste.

SPINACH MEATBALLS
This recipe provided by Texas Beef Council. It is lean and packed with iron. Baked, not fried and can be frozen.Update: 03/13/2010 Elainemae, a reviewer suggested we use infant's rice cereal instead of breadcrumbs and it serves a dual purpose - increase the iron content. Great idea! :)

Steps:
- In a large skillet (with a lid), combine the brown sugar, vinegar, ketchup, soy sauce and 2 cups of the pineapple juice. Stir the mixture around and bring it to a gentle boil over medium-high heat. To thicken the sauce, make a slurry by mixing the cornstarch with the remaining 1/4 cup pineapple juice in a small bowl until smooth. Add it to the sauce, whisking to combine.
- Add the frozen meatballs, sriracha and bell pepper and toss to combine. Cover the skillet and cook until the sauce has thickened and the meatballs are heated through, 8 to 10 minutes.
- Stir in the pineapple, then sprinkle in 2 tablespoons of the green onions. Serve the meatballs and sauce over rice and sprinkle on the rest of the green onions at the end.
- Combine the beef, breadcrumbs, milk, parsley, cream, mustard, salt, black pepper, red pepper flakes and eggs in a large bowl. Knead it all together with your hands until well combined.
- Scoop out 1-tablespoon portions of the meat mixture and roll into neat balls. Put them on parchment paper-lined rimmed baking sheets as you go, then put the sheets in the freezer for about 10 minutes to firm them up before frying.
- To brown the meatballs, heat 1/4 cup olive oil in a large skillet over medium-high heat. Working in batches, add some meatballs to the skillet and cook on all sides until they have great color on the surface and are fully cooked inside, 5 to 6 minutes. Drain the meatballs on paper towels when they're done, then line them up on clean parchment paper-lined baking sheets. Cook the remaining meatballs.
- Put the baking sheets in the freezer, uncovered, until the meatballs are frozen and firm on the surface, 30 to 45 minutes. Then just pop the meatballs into 5 to 7 freezer bags (roughly 25 per bag) and freeze them immediately. They'll be there when you need them.
PORK AND SPINACH MEATBALLS
These tasty little morsels can be made ahead of time and then just reheated when you're ready. Serve them as a main course, with a bowl of tzatziki. You could also top the dish with some finely sliced spring onions.

Steps:
- To make the meatballs, place a rack in the upper third of the oven and preheat oven to 375 degrees F. Line a baking sheet with foil and set aside.
- In a large bowl bowl combine ground chicken, thawed and pressed spinach, onion, garlic, mustard, lemon zest, salt, peppers, coriander, nutmeg, breadcrumbs, and cheese. Stir until just combined. In a small bowl, whisk together egg and milk. Add the egg mixture to the meat mixture and use your hands to incorporate well, breaking up the spinach and making sure that all of the ingredients are evenly mixed. Use a cookie scoop to scoop heaping tablespoonful balls onto the prepared baking sheet.
- Space balls about 1-inch apart on the baking sheet and bake for 20 minutes or until cooked through. Makes about 30 meatballs.
- Make the broth while the meatballs bake. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent and softened, about 6 minutes, stirring often. Add the sliced garlic and sauté for 2 minutes more. Add the chicken stock, bay leaf, and lemon juice. Bring to a very low simmer.
- Add the cooked meatballs to the broth and simmer for 10 minutes.
- To serve, spoon a small amount of rice into the bowl. Ladle in broth and meatballs. Sprinkle with parsley and cheese. Enjoy!

COMFORT SOUP (CHICKPEA AND BACON)
I made this soup up the other day and it is real comfort food. Hearty and healthy (well, if you don't count the bacon!) - it makes a big pot and that's a good thing as you'll want more than one bowl. You can make this soup vegetarian by omitting the bacon, but do add a couple of tablespoonfuls of olive oil to saute the onions in.

Steps:
- Saute onion, garlic and bacon together until the onion is soft and translucent. Don't be tempted to drain the bacon fat (I use a rather lean bacon, anyway, and there's not that much fat - if you have tons of it, then remove some). Add the chickpeas, carrots, tomato paste, bay leaf and 1 1/2 quarts water. Season to taste. Bring to a simmer and cook, covered for 1/2 an hour. Add the pearl barley and simmer for another 40-60 minutes, or until the chickpeas and barley are cooked through and the soup is quite thick (if the soup is too thick, thin with a little hot water until you achieve the consistency you desire).
- This was a really satisfying meal with a tossed green salad and garlic bread.

STRACCIATELLE SOUP WITH MEATBALLS, PASTA, SPINACH AND ...

- Bring the broth to a simmer and add the pasta, parsley, marjoram, carrot, spinach and meatballs. Simmer, covered partially, until the pasta is done (about 9 minutes for my frog eye balls) and the meat is heated through (if you started with frozen, as I did, it seemed to be done just fine in 9-10 minutes).
- In a small bowl, whisk together the two eggs, then pour into the broth while stirring. If you stick a wooden spoon or a fork up against the bowl and pour across it, it breaks the eggs into smaller streams which is what you want. Stracciatelle means "rags" and that's what the eggs look like as they cook in the broth, similar to Egg Drop Soup if you like Chinese food. I suspect most cuisines have a similar soup with eggs in it.
- Try to get the eggs in a thin stream and stir the soup as you pour. Stirring with a whisk would probably help but I just now thought of that! Anyway, you want strings of egg. Put the lid on, turn the heat off, and let the soup sit a few minutes while you set the table, then dish up!
