30 mini cupcake liners
1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 cup instant chai tea mix
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter (1 stick)
3/4 cup sugar
2 large eggs
1/3 cup milk
1/2 teaspoon vanilla
3/4 cup softened cream cheese, from the tub
1/4 cup instant chai tea mix
1/4 cup powdered sugar
cocoa or powdered sugar, to garnish

Steps:

  • Preheat oven to 350 degrees.
  • Line mini muffin pans with liners.
  • Combine flour, chai mix, cocoa, baking powder and salt and whisk together.
  • In a large mixing bowl, combine butter and sugar and cream together (approx 3 minutes).
  • Add eggs one at a time and beat well.
  • Add vanilla.
  • On low speed, alternate adding flour and milk into the creamed butter mixture and beat.
  • Fill cupcake cups with batter 3/4 full.
  • Bake for approximately 15 minutes or until done.
  • Let cakes cool completely.
  • Combine all the ingredients and mix until smooth.
  • Refridgerate until cakes have cooled.
  • Frost cakes.
  • Sprinkle cocoa powder or powdered sugar on top frosting as a garnish.
  • *TIP--To make it easier to fill mini cupcakes holders, place batter in a large plastic ziplock bag, snip off a bit on the corner.

1 cup sugar
2 teaspoons vanilla extract
2 eggs
2 teaspoons chai mixed spice (see recipe below)
1 1/4 cups all-purpose flour, sifted
1/2 cup buttermilk
1/2 teaspoon baking soda
1/2 teaspoon apple cider vinegar
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cardamom
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 cup butter
1 teaspoon vanilla extract
2 cups powdered sugar, sifted
remainder of the chai mixed spice
1 tablespoon cold milk, if needed to thin out the buttercream

Steps:

  • Preheat oven to 325 degrees. Prepare a cupcake pan with liners.
  • In a small bowl or plastic bag, combine the chai spice mix ingredients. Set aside.
  • Cream together the butter and sugar. Add the vanilla and beat in one egg at a time. Stir in 2 teaspoons of the chai spice mix. Fold in the flour and buttermilk alternately and stir until combined, don't over mix. Mix together the baking soda and vinegar in a separate bowl, then add it to the batter and mix until combined.
  • Spoon into prepared cupcake tins until 3/4 full and bake 15-20 minutes or until a toothpick comes out clean.
  • Buttercream Directions:.
  • In a stand mixer, beat the butter until it is creamy. On low, mix in the vanilla and the rest of the chai spice mix. Carefully beat in the powdered sugar about ½ cup at a time. If the buttercream is too thick add 1-2 tbs of cold milk until the desired consistency is reached. Then pipe onto cooled cupcakes with your favorite frosting tip.

2/3 cup boiling water
1 1/4 cups all-purpose flour
3/4 cup firmly packed light brown sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup honey
4 tablespoons unsalted butter, melted
1/4 cup buttermilk
1 large egg, at room temperature
honey, to drizzle (or honeycomb, cut into 1-inch pieces, for garnish)
1 cup cold heavy cream
2 tablespoons honey

Steps:

  • Position oven rack in the middle of oven; preheat to 350°; line a standard 12-cup muffin pan with paper or foil liners.
  • In a small bowl, steep the tea bags in the boiling water for 5 minutes.
  • Discard tea bags and let the tea cool to room temperature.
  • In a bowl, whisk the flour, brown sugar, baking soda, and salt together.
  • In a big bowl, combine the honey, melted butter, buttermilk, and egg.
  • Add the flour mixture and, using an electric mixer on medium speed, beat until just combined, about 2 minutes.
  • Add in the cooled tea and beat until just combined, scraping down the sides of the bowl as needed.
  • Divide the batter evenly among the prepared muffin cups, filling each 3/4 full.
  • Bake about 18-20 minutes, until a pick comes out clean.
  • Let the cupcakes cook in the pan on a wire rack for 5 minutes.
  • Transfer the cupcakes to the wire rack and let cool completely, about 1 hour (the unfrosted cupcakes can be refrigerated in an airtight container for up to 3 days; bring to room temperature before frosting and garnishing).
  • Just before ready to serve, make the honey whipped cream--in a chilled bowl, combine the cream and honey; using an electric mixer on low speed, beat until slightly thickened, 1-2 minutes.
  • Gradually increase speed to medium-high and continue to beat until the cream holds soft peaks, 2-3 minutes; use right away.

1 (15.25 ounce) package French vanilla cake mix (such as Betty Crocker™ Super Moist™ Delights French Vanilla Cake Mix)

⅓ cup vegetable oil
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
1 (6 ounce) package cream cheese, softened
¼ cup butter, softened
4 cups sifted confectioners' sugar
¼ teaspoon vanilla extract
1 teaspoon ground cinnamon, or as needed

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line 24 muffin cups with liners.
  • Heat milk in a saucepan over medium heat until steaming, about 2 minutes. Add chai tea bags and steep for 10 minutes.
  • Combine chai mixture, cake mix, eggs, oil, cinnamon, nutmeg, and ginger in a large bowl and beat using an electric mixer on low speed until moistened. Increase speed to medium and beat for 2 minutes. Pour batter into the prepared muffin cups.

2 black tea bags
2 chai tea bags
½ cup plain yogurt
¾ cup white sugar
¼ cup canola oil
1 teaspoon vanilla extract
1 cup all-purpose flour
¼ teaspoon baking soda
½ teaspoon baking powder
2 teaspoons ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
½ teaspoon salt
1 pinch ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan or line with paper baking cups.
  • Heat the milk in a saucepan until almost boiling. Remove from the heat and add the black tea and chai tea bags. Cover and let stand for 10 minutes. Wring out the tea bags into the milk and discard bags. In a medium bowl, whisk together the tea-milk, yogurt, sugar, oil and vanilla. In a large bowl, stir together the flour, baking soda, baking powder, cinnamon, ginger, cloves, salt and pepper. Pour the wet ingredients into the dry mixture and stir until blended. Spoon the batter into the prepared cups, dividing evenly.
  • Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes. Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter. Frost with desired frosting (I prefer vanilla).

  • In a large bowl whisk together oil, yogurt, sugar, stevia, vanilla and tea mixture until all yogurt lumps disappear. Sift flour, baking powder, baking soda, salt, cinnamon, cardamom, ginger, cloves, and pepper into wet ingredients. Mix until large lumps disappear; some small lumps are okay. Fill tins full and bake about 20 to 22 minutes until a sharp knife inserted comes out clean.
  • Make sure cupcakes are completely cooled before adding topping, or the sugar will melt and not look pretty or powdery.
  • To assemble, sift confectioners sugar over cooled cupcakes first, then mix cocoa, cinnamon, and nutmeg together and sift onto each cupcake. Enjoy!

2 teaspoons cloves
1 tablespoon ground cardamom
2 teaspoons ground cinnamon

200 g bar of valrhona 61% cacao
1 1/2 cups butter
2 1/4 cups sugar
8 eggs
1 1/4 cups flour
1/4 cup unsweetened cocoa powder

1 cup butter
4 -5 cups powdered sugar, sifted
1/4 cup milk
2 teaspoons minced fresh ginger

Steps:

  • With a small food processor, grind up the whole fennel and cloves.
  • Transfer to a small bowl and add remaining spices. Mix to combine.
  • Chop chocolate and transfer into the bowl of a standing mixer.
  • Add butter to the chocolate and place the bowl over a pan of simmering water. Stir until chocolate melts and butter is combined.
  • Remove from heat and stir in sugar. Let mixture cool for 10 minutes.
  • Beat in an electric mixer for 3 minutes.
  • Add one egg at a time, mixing for 30 seconds between each.
  • Sift the flour, cocoa powder, baking powder, chai spice mix, and a pinch of salt into the mixture and mix until blended.
  • Scoop into cupcake cups and bake at 350 F for 25 minutes or until a toothpick comes out clean.

  • Add 4 cups of sifted powdered sugar, milk, spice mix, and ginger. Beat until combined.
