- Bring a large pot of water to a boil. Meanwhile, soak noodles in hot water 10 minutes. Add soaked noodles to pot. Once water returns to a boil, cook until al dente, 3 to 4 minutes. Drain, run under cold water to stop cooking, and drain again.
- In a small bowl, whisk together broth, oyster sauce, vinegar, sesame oil, chili sauce, ginger, and garlic; set aside.
- In a large skillet (preferably cast iron), heat 2 tablespoons vegetable oil over medium-high. Add shrimp in a single layer and season lightly with salt. Cook, flipping once, until shrimp are pink, opaque, and just cooked through, 2 to 3 minutes. Transfer to a plate. Add remaining 1 tablespoon oil to skillet. Add snow peas and white and light-green parts of scallions; cook, stirring occasionally, until crisp-tender and lightly charred in places, about 3 minutes. Add broth mixture and boil until slightly thickened, about 2 minutes. Add sprouts, shrimp, and noodles and toss until noodles are well coated in sauce. Serve immediately, sprinkled with scallion tops.

- Ensure you have taken off the shell off your king prawns and that they are cooked. If you have bought them raw, take off its shell, boil some water in a pan and boil the king prawns for about two minutes until pink. TIP: If the king prawns are grey in colour they are raw, if they are pink they have been pre-cooked. Also make sure you lay the prawn flat and make a cut down its side and take out its intestines. You will see this as a black line running down the side of the king prawn.
- Heat oil in a wok, on high heat until hot.
- Fry the beansprouts and noodles for two minutes
- Next add in the king prawns and fry for a further three minutes
- Add salt, sesame oil and soy sauce to taste and fry for another three minutes. Serve.
- For extra garnishes add 1 bunch chopped spring onions.

- Soak the chow mein noodles in cold water for about 5 minutes. Rinse a few times until the water turns clear and the noodles have become soft. Drain the excess water and set aside. (Don't over soak the noodles or they will become soggy.) In a small mixing bowl, mix all the ingredients of the Chow Mein Sauce together. Set aside. Heat up a skillet or wok with the oil. Add in the garlic and stir-fry until light brown or aromatic. Add the chicken and shrimp and stir fry until they are half cooked. - Cook the egg noodles according to pack instructions, then refresh in cold water and drain well.
- Heat a large wok or pan over a high heat. When hot, add peanut oil and when smoking add chicken and prawns, stir fry 2-3 minutes.
- Add ginger, garlic and spring onion, cook for 1-2 minutes.

KING PRAWN CHOW MEIN
This is a bit of a cheat's way of doing a Chinese recipe, it uses stuff that you are likely to have in your store cupboard, or be able to get at a bog standard supermarket. It is no way authentic, but is very tasty for all that. It works partcularly well with prawns, but you can also use chicken or quorn to much the same effect. If you do not have genuine Chinese Rice Wine, you can use sherry, or just leave it out altogether. Vary the vegetables you use according to your taste, I have included the ones which I find work the best. All measurements are generally approximate, find your own balanceor just throw stuff in and experiment.

- Finely chop the garlic, spring onions, red pepper and celery and fry in the oil.
- When soft add the kale, beansprouts, sun-dried tomatoes (finely chopped), courgette.
- After two or three minutes add the rice wine, soya sauce, ketchup, sweet chili sauce, five spice and black pepper to your taste. Continue to stir fry for approximately ten minutes.
- Meanwhile cook the noodles in boiling water according to instructions on the packet.
- Add cooked noodles and prawns to the pan and heat through.
- Serve whilst hot.

- Bring a large pot of water to a boil. Add chow mein noodles and cook over medium heat until cooked through but still firm to the bite, 4 to 5 minutes. Drain and rinse with cold water.
- While noodles cook, heat oil in a large pot over medium heat. Add onions and cook and stir until golden, 5 to 7 minutes. Add shrimp and cook and stir until they are bright pink on the outside and the meat is opaque, about 5 minutes. Add consomme, celery, and salt; cook, covered, for 5 minutes. - Fill a large pot with lightly salted water and bring to a rapid boil. Cook noodles at a boil until tender yet firm to the bite, 3 to 5 minutes. Drain, rinse, and set aside.
- Whisk together chicken stock, sherry, oyster sauce, soy sauce, sesame oil, brown sugar, and pepper in a small bowl.
- Heat a large 12-inch cast iron skillet or wok over medium-high heat until hot. Add canola oil and swirl to coat the bottom of the pan; heat until it just begins to smoke. Add carrots, onion, celery, ginger, and garlic to hot oil and cook, stirring constantly, just until vegetables begin to soften, about 1 minute. Add shrimp and cook, stirring constantly, until almost done, about 2 minutes. Push vegetables and shrimp to one side of the pan and add chicken stock mixture; stir constantly until sauce is hot.
- Add noodles and stir well to mix with sauce and vegetables (using a metal spatula and chopping noodles slightly helps to mix this together.) Cook, stirring constantly, until the noodles have absorbed the sauce, about 2 minutes. Stir in bean sprouts and green onions and cook, stirring constantly, until just cooked, 1 to 2 minutes. Remove from heat and stir in baby spinach until just wilted. Serve immediately.

- Egg Noodles: the authentic Chinese recipe calls for Chinese egg noodles or long noodles (as they are popularly called), but, you can use any long noodles (boxed or even spaghetti goes well too).
- Fresh Shrimp: I’d recommend using fresh (cleaned, head-off and deveined) shrimp, but you can even use frozen uncooked shrimps or even cooked frozen shrimps too.
- Dark Soy Sauce: This is my favorite kind of soy sauce to use as it’s richer in flavor and gives a nice dark coating to the recipes. It’s slightly sweet and much thicker than the regular/light soy sauce that’s available.
- Oyster Sauce: Used for instant flavoring in Chinese / Asian dishes and gives you that nice glaze on recipes. You can use ‘Mirin / Light Soy Sauce with sugar’ or simply skip this ingredient.
- Sesame Oil: This is used in most Chinese cooking and especially ‘Stir-Fry’s recipes’ as the oil has a high smoking point. Hence it heats up quick and doesn’t burn easily.
- Chinese Wok: It’s best used in stir-fry dishes, chow mein/lo mein especially as it’s thin metal utensil that quickly heats up and evenly distributes the heat.
- Bonus Tip: Vegetables: Have you ever noticed that most of the Chinese/Asian recipes veggies are cut in a similar style? They are either all thickly cut or thinly cut but you’d never find a recipe where you see a mix of both …hm, right!
