SHRIMP CHOW MEIN

Shrimp Chow Mein image

The star of this at-home version of the Chinese takeout favorite? An umami-packed sauce made with chicken broth, oyster sauce, rice-wine vinegar, sesame oil, sambal oelek, and fresh ginger and garlic. It's a delicious foil for tender egg noodles, plump shrimp, and crisp-tender snow peas.

Provided by Riley Wofford

Categories     Food & Cooking     Ingredients     Seafood Recipes     Shrimp Recipes

Time 50m

Yield Serves 4 to 6

Number Of Ingredients 14

8 ounces Chinese dried egg noodles
1 cup low-sodium chicken broth
1/4 cup oyster sauce
1 tablespoon rice-wine vinegar
1 tablespoon toasted sesame oil
1 1/2 teaspoons chili sauce, such as sambal oelek
2 teaspoons grated ginger (from 2-inch piece)
2 teaspoons grated garlic (4 cloves)
3 tablespoons vegetable oil
12 ounces medium shrimp, peeled and deveined, patted dry
Kosher salt
8 ounces snow peas, trimmed
1 bunch scallions (about 8), white and light-green parts cut into 2-inch pieces (1 cup), dark-green tops thinly sliced, for serving
1 cup mung bean sprouts

Steps:

  • Bring a large pot of water to a boil. Meanwhile, soak noodles in hot water 10 minutes. Add soaked noodles to pot. Once water returns to a boil, cook until al dente, 3 to 4 minutes. Drain, run under cold water to stop cooking, and drain again.
  • In a small bowl, whisk together broth, oyster sauce, vinegar, sesame oil, chili sauce, ginger, and garlic; set aside.
  • In a large skillet (preferably cast iron), heat 2 tablespoons vegetable oil over medium-high. Add shrimp in a single layer and season lightly with salt. Cook, flipping once, until shrimp are pink, opaque, and just cooked through, 2 to 3 minutes. Transfer to a plate. Add remaining 1 tablespoon oil to skillet. Add snow peas and white and light-green parts of scallions; cook, stirring occasionally, until crisp-tender and lightly charred in places, about 3 minutes. Add broth mixture and boil until slightly thickened, about 2 minutes. Add sprouts, shrimp, and noodles and toss until noodles are well coated in sauce. Serve immediately, sprinkled with scallion tops.

King prawn chow mein is a delicious recipe that will go excellently with a side of mixed vegetables. The beansprouts give it that nice refreshing crunch and the king prawns are bursting with flavour. Make sure you prepare your king prawns and follow our preparation instructions carefully. A wonderful Chinese recipe for kids and adults.

Steps:

  • Ensure you have taken off the shell off your king prawns and that they are cooked. If you have bought them raw, take off its shell, boil some water in a pan and boil the king prawns for about two minutes until pink. TIP: If the king prawns are grey in colour they are raw, if they are pink they have been pre-cooked. Also make sure you lay the prawn flat and make a cut down its side and take out its intestines. You will see this as a black line running down the side of the king prawn.
  • Heat oil in a wok, on high heat until hot.
  • Fry the beansprouts and noodles for two minutes
  • Next add in the king prawns and fry for a further three minutes
  • Add salt, sesame oil and soy sauce to taste and fry for another three minutes. Serve.
  • For extra garnishes add 1 bunch chopped spring onions.

KING PRAWN CHOW MEIN

King Prawn Chow Mein image

This is a bit of a cheat's way of doing a Chinese recipe, it uses stuff that you are likely to have in your store cupboard, or be able to get at a bog standard supermarket. It is no way authentic, but is very tasty for all that. It works partcularly well with prawns, but you can also use chicken or quorn to much the same effect. If you do not have genuine Chinese Rice Wine, you can use sherry, or just leave it out altogether. Vary the vegetables you use according to your taste, I have included the ones which I find work the best. All measurements are generally approximate, find your own balanceor just throw stuff in and experiment.

SHRIMP CHOW MEIN

Shrimp Chow Mein image

This is so good! I felt like I had ordered takeout! The flavors were all spot-on with the slightly crunchy vegetables and the sauce was light, but just enough to coat the noodles, veggies, and shrimp.

Provided by Pam Lolley

Categories     Chow Mein Noodles

Time 45m

Yield 4

Number Of Ingredients 18

8 ounces chow mein noodles
¼ cup chicken stock
2 tablespoons dry sherry
2 tablespoons oyster sauce
1 ½ tablespoons soy sauce
2 teaspoons toasted sesame oil
1 teaspoon light brown sugar
¼ teaspoon ground black pepper
2 tablespoons canola oil
½ cup matchstick carrots
½ cup thinly sliced onion
½ stalk celery, diagonally sliced
1 ½ tablespoons finely chopped fresh ginger
1 teaspoon finely chopped garlic
¾ pound uncooked medium shrimp, peeled and deveined
1 cup bean sprouts
4 stalks green onions, thinly sliced on the diagonal
2 cups fresh baby spinach

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook noodles at a boil until tender yet firm to the bite, 3 to 5 minutes. Drain, rinse, and set aside.
  • Whisk together chicken stock, sherry, oyster sauce, soy sauce, sesame oil, brown sugar, and pepper in a small bowl.
  • Heat a large 12-inch cast iron skillet or wok over medium-high heat until hot. Add canola oil and swirl to coat the bottom of the pan; heat until it just begins to smoke. Add carrots, onion, celery, ginger, and garlic to hot oil and cook, stirring constantly, just until vegetables begin to soften, about 1 minute. Add shrimp and cook, stirring constantly, until almost done, about 2 minutes. Push vegetables and shrimp to one side of the pan and add chicken stock mixture; stir constantly until sauce is hot.
  • Add noodles and stir well to mix with sauce and vegetables (using a metal spatula and chopping noodles slightly helps to mix this together.) Cook, stirring constantly, until the noodles have absorbed the sauce, about 2 minutes. Stir in bean sprouts and green onions and cook, stirring constantly, until just cooked, 1 to 2 minutes. Remove from heat and stir in baby spinach until just wilted. Serve immediately.

  • Add 1 T of the stir fry oil to the wok (recommended) or sauté pan, set to high heat. When the oil is hot, add the shrimp. Toss to coat in the oil and then turn shrimp after a few minutes once they start to get crispy on the bottom. Once opaque in color and fully cooked, toss once more to ensure even doneness and then transfer to a plate, leaving any remaining oil in the pan.
  • Add remaining stir fry oil to the hot wok. Add sliced onion, toss to coat in oil, then toss only to prevent browning. Once onion begins to sear, add the cabbage and celery. Toss to coat in oil once again, then allow to cook for a couple of minutes to brown. Toss to prevent burning.
  • While the veggies are cooking, run the noodles under hot water for a minute or two so that they separate. Alternatively, you can place them in a bowl of warm water.
  • Just before veggies are done, add garlic and ginger, toss, and allow to cook for about a minute. Transfer to a separate plate.

  • Egg Noodles: the authentic Chinese recipe calls for Chinese egg noodles or long noodles (as they are popularly called), but, you can use any long noodles (boxed or even spaghetti goes well too).
  • Fresh Shrimp: I’d recommend using fresh (cleaned, head-off and deveined) shrimp, but you can even use frozen uncooked shrimps or even cooked frozen shrimps too.
  • Dark Soy Sauce: This is my favorite kind of soy sauce to use as it’s richer in flavor and gives a nice dark coating to the recipes. It’s slightly sweet and much thicker than the regular/light soy sauce that’s available.
  • Oyster Sauce: Used for instant flavoring in Chinese / Asian dishes and gives you that nice glaze on recipes. You can use ‘Mirin / Light Soy Sauce with sugar’ or simply skip this ingredient.
  • Sesame Oil: This is used in most Chinese cooking and especially ‘Stir-Fry’s recipes’ as the oil has a high smoking point. Hence it heats up quick and doesn’t burn easily.
  • Chinese Wok: It’s best used in stir-fry dishes, chow mein/lo mein especially as it’s thin metal utensil that quickly heats up and evenly distributes the heat.
  • Bonus Tip: Vegetables: Have you ever noticed that most of the Chinese/Asian recipes veggies are cut in a similar style? They are either all thickly cut or thinly cut but you’d never find a recipe where you see a mix of both …hm, right!

  • Bring 2 quarts of water to a boil, and cook the noodles for 1 minute. Drain, rinse in cold water, and spread the noodles out to drain further.
  • I recommend that you use uncooked, cleaned frozen shrimp. For this Shrimp Chow Mein recipe, I used uncooked shrimp, peeled off the shells, and left the tails on. The tails add nice flavor to the dish, but you can remove them if you prefer. I also like to butterfly the shrimp: use a sharp knife and carefully cut about two thirds of the way into the backs of each shrimp to do this. Next, toss the shrimp in 2 teaspoons of oil, 1/8 teaspoon salt, and 1 teaspoon of cornstarch. Set aside.
  • Rinse the mung bean sprouts in cold water. Keep them in cold water until you are ready to cook, and put them into a colander to drain just before you heat up the wok.
  • In a small bowl, mix the hot water and sugar until dissolved, and add the soy sauces, sesame oil, oyster sauce, 2 teaspoons Shaoxing wine, and white pepper. Set aside.

CANTONESE CHOW MEIN WITH PRAWNS FROM CLASSIC FOOD OF CHINA ...
Chow Mein has always been authentic Cantonese food, and this dish is a very popular example of it. Across the boundaries of regional cooking, there seems to be a national consensus about the best technique of frying noodles (chow mein); the ideal is to achieve a golden-brown toasted effect on both sides, while the centre remains moist and tender.
