1/4 c. Fresh Italian Parsley
6 c. (Lightly Packed) Torn French Bread

Steps:

  • Grease a 9x13 pan. Chop bacon into 1 1/2 inch pieces. Cook until crispy. Set aside on paper towels and pat to remove excess grease. Pour all but a couple of tablespoons of the bacon grease out of the pan. Cook shallots in remaining fat until softened. Set aside. Whisk eggs for 1-2 minutes. Whisk in milk, mustard, salt, and pepper. Stir in reserved bacon, shallots, cheese, and parsley. Fold in the torn bread. Pour into the prepared pan and cover with foil. Refrigerate for at least 6 hours, up to 24. Preheat oven to 350ºF. Bake strata for 1 hour and 10 minutes, or until golden, puffed, and set in the center. Remove from oven and let rest for 5 minutes before serving. (The strata will deflate as is rests.) Scoop portions with a large spoon rather than trying to cut into squares.

3 cups whole milk ((or half & half))
1 1/2 cups shredded sharp cheddar cheese ((off the block))
1 1/2 cup shredded smoked gouda cheese ((off the block))
1 cup chopped deli ham
1 cup chopped scallions
3/4 cup chopped roasted red pepper
1 1/2 teaspoons salt
1 teaspoon ground mustard
1/2 teaspoon garlic powder
12 ounce loaf french bread

Steps:

  • Set out a large mixing bowl and a 9X13 inch (3 quart) baking dish. Grease the baking dish. Chop all necessary ingredients.
  • In the mixing bowl, add the eggs, milk, salt, ground mustard, and garlic powder. Whisk well to break up all the yolks. Then stir in the cheeses, ham, scallions, and roasted red pepper.
  • Tear the bread loaf into 1-2 inch chunks and place them in the baking dish.
  • Pour the egg mixture over the top of the bread. Use a spatula to fold the bread over, gently, to make sure the ingredients are evenly distributed. Cover and chill until ready to bake.
  • Let the strata recipe rest for at least one hour, so the bread soaks up all the eggs. Preheat the oven to 350 degrees F. (This is a fabulous make-ahead overnight recipe, so you can also preheat the oven in the morning.)
  • Bake, uncovered, for 50-60 minutes, until the top is golden-brown and puffy in the center. Insert a sharp knife into the center to check that the eggs are set. If not, bake another 5-10 minutes. Then cool for 5 minutes before cutting. Serve warm!

Strata is the bread pudding of savory egg dishes. This super-easy treat generally includes cubes or slices of bread that have been soaked in custard then baked in a casserole dish. This is a great make- ahead dish. It tastes best if you prepare it the day before and let it soak overnight before baking. Like many egg dishes, a strata can incorporate all sorts of different ingredients, so there's a lot of flexibility here.

5 cups French bread cubes (with crust)
10 large eggs
1 quart whole milk
1 teaspoon dry mustard
1 teaspoon salt

Steps:

  • Decide what filling option you would like to use.
  • Option 1- Bacon, cheddar, mushroom and tomato: Sprinkle 2 cups grated cheddar cheese over the bread cubes. Distribute 1 cup crumbled cooked bacon (6-8 strips), 1 cup sautéed sliced white or shitake mushrooms, and 1 cup chopped tomatoes over the egg mixture.
  • Option 2- Chicken, broccoli, corn, chilies, and jack: Sprinkle 2 cups Monterey Jack cheese over the bread cubes. Distribute 1 cup frozen corn kernels, 1 cup cooked broccoli florets, (2) 4.5 ounce cans (drained) chopped green chilies, and ½ cup shredded cooked chicken over the egg mixture.
  • Option 3- Ham, Swiss and Asparagus: Sprinkle 2 cups grated Swiss cheese over the bread cubes. Distribute 1 cup blanched asparagus pieces, 1 cup cubed ham and ½ cup caramelized onions over the egg mixture.
  • Option 4- Fontana, Spinach, Salami and Roasted Garlic: Sprinkle 2 cups Fontana cheese over the bread cubes. Distribute 1 cup frozen chopped spinach, 1 cup Italian salami (cut into match sticks) and ½ cup roughly chopped roasted garlic cloves (see below) over the egg mixture.
  • Option 5- Vegetable-Blue Cheese: Sprinkle 1 cup crumbled blue cheese over the bread cubes. Distribute 1 cup cooked cubed celery root, 1 cup sautéed sliced zucchini and ½ cup sautéed sliced onions over the egg mixture.
  • Butter a 9 x 13 inch baking dish. Put the bread cubes in the dish and sprinkle them with the cheese. In a large bowl, whisk together eggs, milk, mustard and salt. Pour the egg mixture over the bread cubes. Sprinkle the filling ingredients over the egg mixture and fold them gently. Cover and chill for at LEAST 4 HOURS AND UP TO 24 HOURS.
  • Heat the oven to 350 degrees.
  • Uncover the baking dish and bake for 60 minutes, until the mixture has puffed up slightly and is golden brown on top, and the strata doesn't shimmy with uncooked custard when you shake the pan. Tent the dish with foil if the top is browning too quickly. Let cool for 5 minutes before serving. Serve by the spoonful, using a large serving spoon.

3 handfuls dark, leafy greens such as spinach, arugula or baby kale, chopped (about 1 cup packed)
1 cup diced salty deli meat, such as Canadian bacon, ham, or cooked bacon
8 ounces (about 2 1/2 packed cups) leftover bread torn into 1-inch pieces, such as English muffins, bagels or sourdough bread
3/4 cup shredded mild melting cheese such as Gruyere, provolone or Gouda

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 1 1/2 quart baking dish with butter or cooking spray.
  • Whisk the eggs, milk, half-and-half, nutmeg, cayenne, 1 teaspoon salt and 1/2 teaspoon pepper together in a large bowl. Fold the greens, meat, bread and 1/2 cup of the shredded cheese into the mixture. Pour into the prepared baking dish and top with the remaining cheese.

1/4 cup butter or 1/4 cup margarine, melted
2/3 cup dry white wine or 2/3 cup milk
2 cups chopped cooked ham
1 cup shredded swiss cheese
1 cup shredded monterey jack cheese
1/2 cup chopped green onion
6 large eggs
2 cups milk
1/4 cup spicy brown mustard
1/4 teaspoon pepper
hot sauce, to taste
1 1/3 cups sour cream
3/4 cup grated parmesan cheese
fresh oregano sprig
fresh canned mushroom slices

Steps:

  • Cut off and discard crusty ends of bread. Tear rest of loaf into bite size chunks. Arrange bread snugly in a heavily greased 13 x 9 x 2 inch baking dish. Set aside.
  • Cook mushrooms, 1 ½ teaspoons fresh oregano, and ¼ teaspoon pepper in butter in a large skillet over medium high heat, stirring constantly, until mushrooms are tender. Sprinkle mushroom mixture over bread. Pour white wine over mushroom mixture. Sprinkle with ham and next 3 ingredients.
  • Combine eggs and next 4 ingredients. Beat with a wire whisk until blended. Pour egg mixture over layers in dish. Cover and chill 8 hours.
  • Bake strata, covered, at 350°F for 45 to 50 minutes. Remove from oven, and spread with sour cream. Sprinkle with Parmesan cheese. Broil 4 inches from heat with electric oven door partially opened 2 to 3 minutes or until lightly browned. Garnish, if desired. Serve hot. 8 servings.
  • NOTE: If you'd like to omit the wine in this rich brunch dish, substitute 2/3 cup milk.

4 thick slices hearty whole-wheat/wholemeal or multigrain artisan bread {about 4 1/2 oz/130 g}
2 large eggs, lightly beaten
1 cup/240 ml whole milk
8 oz/225 g grated Fontina cheese {about 1 cup}
Sea salt
Freshly ground black pepper
6 to 8 asparagus stalks
4 thin slices mortadella or prosciutto {optional}
1 tbsp finely snipped chives

Steps:

  • Preheat the oven to 350°F/180°C/gas 4. Butter a small 4-cup/960-ml ovenproof baking dish.
  • Remove the crusts from the bread and cut into slices; you should have about 3 cups. Lay the slices across the baking dish, slightly overlapping and allowing some edges to hang over the sides.
  • Whisk together the eggs and milk in a large bowl. Stir in half of the cheese and season with salt and pepper. Pour three-fourths of the egg mixture over the bread cubes.
  • Peel the bottom half of the asparagus and break off the stem ends where it snaps naturally. Discard any woody stems.
  • Layer the mortadella over the bread and top with asparagus spears. Pour the remaining egg mixture over the top and finish with the remaining cheese. At this point, you can bake the strata immediately, or cover with plastic wrap/cling film and refrigerate overnight for a surprise breakfast in bed.
  • Bake the strata until just set, 30 to 35 minutes. Let cool slightly, sprinkle the top with chopped chives, and serve in the baking dish.
