PALEO BACON, AVOCADO, TOMATO AND ARUGULA FLATBREAD

Steps:
- Preheat the oven to 375 degrees. Cut the head of cauliflower into sections and pulse in food processor until a rice-like consistency is reached. Pour into a bowl and whisk in eggs, salt, oregano and garlic. Spread the mixture onto an 11 x 17 lined baking sheet. Bake at 375 degrees for 12-15 minutes until the edges are golden. Saute the bacon and onion in a pan then chop the bacon into pieces. Take the flatbread out of the oven and let it cool. Spread the tomato paste on the flatbread and sprinkle the optional cheddar cheese. Scatter the red onion slices, tomato, bacon and avocado on the flatbread. Broil the flatbread for 5 minutes. Remove the flatbread from the oven and sprinkle the arugula leaves over the top.

- Preheat the oven to 400 degrees F.
- Place the tomato slices in a baking dish or plate. Pour the pickle brine over the tomatoes and season with pepper to taste. Place in the refrigerator for 30 minutes or up to 2 hours.
- Arrange the bacon in a single layer on a rack set inside a sheet tray. Season with 1/2 teaspoon black pepper. Roast the bacon until crispy, 10 to 12 minutes per side.
- In a medium bowl, combine the mayo, lemon juice, Worcestershire and garlic. Mix until well blended. Season with salt and pepper. Set aside.
- Season the avocado with salt and pepper.
- Assemble the sandwiches by spreading the aioli on each slice of bread. Layer 2 slices of bread with the lettuce and then the avocado. Top the other 2 slices of bread with the bacon and tomatoes (let the brine drip off first). Close the sandwiches. Cut the sandwiches in half and serve.

- Preheat oven to 180deg. Place garlic on baking tray and roast for 30 mins, allow garlic to cool and then squeeze out the flesh and mash in a small bowl.
- Add the olive oil, balsamic vinegar and dijon mustard and whish well together. Season with salt and pepper.
- Chop bacon into bite sized pieces, then grill or dry fry for 3-5 mins or until crisp.
- Place salad leaves into bowl and add bacon, onion, tomato and avocado. Toss well.
- Whisk the dressing ingredients again to ensure they are mixed well and then pour over salad.

A FUN AND FROLIC KIND OF AVOCADO, BACON, AND TOMATO WRAP YIPPEE!
You can smell the bacon from the outside the house. Fall is approaching and the wind has picked up a little bit, and a nice breeze is blowing from the south, which in turn transfers the aroma of fresh bacon right out the window and into your nose. Dennis was wondering what was going on, after all, it was the middle of a fall afternoon. The door creaks open, Dennis slips off his boots, hangs up his hat on the pegged hanger, and rushes into the kitchen. I turned around to greet him with a smile, and laughing at his questioning look, I tilt my head and say, "It's bacon Dennis!" "I know, I know...." tests Dennis with a small voice. Dennis loves bacon. He will eat a couple of pieces a day, that would be, if I let him. I decided I would at least bring some healthfulness to him, and something tasty at the same time. One piece of bacon, wrapped in a tortilla, (or pita for that matter) with an abundance of lettuce, tomato, and special spritely green onion with a spot of cheese dotted on the top would be the answer to his dream.

- Cook bacon your preferred method. Could be in microwave, iron skillet, or baked.
- Warm tortilla's or pita in microwave for 10 seconds, or in oven wrapped in foil for 10 minutes at 350degrees.
- As tortilla's (or pitas) are warmed, spread sour cream, or mayonnaise thinly on inner part.
- Add cheese lightly.
- Add lettuce, tomato, bacon (blotted from excess grease), green onion, and avocado (if using) nicely and roll carefully.
- Add salt and pepper, and devour at one end.
- Make sure your shoes are off, and you have a candle lit. It makes this extra special.
- Try it and see.
